EGGY BREAD
Quick, easy and tasty! Bit like french toast, but you can add so many different things to it... If I have had a really long day there really is nothing better than a piece of eggy bread or two drizzled with syrup and a cup of tea...

Steps:
- Place a knob of butter in a frying pan and let it melt (alternatively you could use a tbsp of olive oil). Crack the eggs into a glass dish and beat lightly with a fork until the yolks are broken. Add pepper/salt to taste, you could even add in ham or greens to be healthy.
- Place a slice of bread in the egg mixture and let it soak for about a minute before flipping over and coating the otherside. It may get soggy if the bread is left too long and not thick enough, so it depends on how eggie you want it :) Then, place it into the hot frying pan and give it about 2 minutes both sides until it is lightly brown. If for breakfast, you could serve it with a glass of orange juice and maple syrup with a dusting of confectioners sugar. Up to you entirely. Baked beans are also a good with it :).
- Handy aswell, as the time it takes to cook a piece of bread is the same as soaking another. Means you don't have to wait around and leave one to get cold.

Steps:
- use a biscuit cutter or your desired shape to cut a shape from each piece of bread.
- break the egg into a small bowl, add the water and 2 teaspoons of the sugar, beat with a fork until mixed together.
- mix the rest of the sugar with the cinnamon and set aside until the end.
- put butter in a medium frying pan and turn the heat to medium.
- when butter is melted, dip the bread rounds quickly into the egg mixture, one at a time. let the extra mixture run off then carefully place bread on the pan.
- cook the bread rounds for about 2 minutes or until they are lightly browned underneath.
- turn over and lightly brown other side, remove from pan and put it on a piece of kitchen paper.
- sprinkle both sides of French toast with the cinnamon-sugar mixture.
- serve immediately to stop from going soggy.

RED BELLY BREAD
This recipe is a favourite on the Caribbean island of St. Vincent. My mother-in-law gave it to me and I always make it around Christmas time. You can do one batch with red food colouring and one with green food colouring if you wish. They look very festive because it is home made bread with a swirl of red/green coconut. It takes a bit of time and effort but it's well worth it.

Steps:
- On the stove cook the first four ingredients until the water has evaporated (lets call this combination "(A*)".
- With the next four ingredients in a clean sauce pan: Scald milk (not boil).
- Add sugar and shortening and salt. (Lets call this combination "(B*)").
- For the next 3 ingredients: Put in a glass bowl and let sit 15 minutes. (Lets call this combination (C*) .
- Combine (B*) and (C*) and add 5 cups of flour with about 1-2 cups of water (I use about 1 1/2 cups) Mix with spoon very fast.
- Roll onto a floured board for 8-10 minutes adding about 1 cup of flour as necessary for rolling purposes to stop it from sticking to the board.
- Shape into one ball and cover with a clean tea towel and let it rise for about one hour.
- Divide into 4-5 balls, and roll each ball out about 1/4 inch thin.
- Spread coconut mixture (A*) onto it, roll up, tucking the ends under.
- Place on a cookie sheet sprayed with non-stick spray (or on a greased cookie sheet), seam side down, leaving a little gap between loaves.
- Bake at 350 for 45 minutes.

Besides being one of the most amazing movies I've seen in a while, V for Vendetta features the simplest, most CRAVEABLE breakfast dish I think I've ever seen. In the movie, "V", in his jaunty kitchen apron, so lovingly prepares this charming breakfast dish for Natalie Portman's character. By the movie's end, I was craving so badly, that I made it for our breakfast for the next two days!! Please feel free to use ANY bread you have on hand. I also like to make these on my large nonstick griddle, but you can prepare them 1 or 2 at a time using a non-stick frying pan.

Steps:
- Butter bread slices on both sides.
- Cut an approximately 2 inch circle in the middle of each slice, using a cookie cutter or small glass.
- Place buttered bread slices on a non-stick griddle pan, preheated over medium heat.
- Add a bit of butter to the center of the bread, and gently crack your eggs into the hole.
- Sprinkle eggs with salt and freshly ground pepper to taste.
- When the eggs begin to set around the edge of the hole, flip.
- Finish cooking eggs as you prefer (over easy or over medium).
- The buttered bread "centers" can be grilled or toasted as well to sop up the extra yolk!

- Pour the beaten egg onto a large dinner plate and soak the bread in the egg, turning it over until all the egg has been absorbed.
