Easy corn bread and egg dish. Add diced vegetables if desired.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease an 8x10-inch baking dish with cooking spray.
- Stir corn muffin mix, 1 egg, and milk together in a bowl; batter will be slightly lumpy. Pour into the prepared baking dish, creating a 1-inch layer.
- Bake in the preheated oven until corn bread has risen slightly, about 10 minutes.
- Make 4 indentations in the corn bread using the bottom of a small ladle; fill with ham. Crack 1 egg into each indentation. Sprinkle Cheddar cheese over eggs.
- Bake in the preheated oven until corn bread starts to brown, 10 to 15 minutes. Let stand for 5 minutes before serving.

EASY CHEESY BAKED EGGS
This is an easy baked eggs recipe from my Grandpa Douglas' mother, Marguerite. We made this the other day and it was fabulous! This would be a 6 out of 5 if possible to rate it that.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch pan.
- Cover the bottom of the prepared pan with 1/2 of the sharp Cheddar cheese.
- Mix together heavy cream, dry mustard, salt, and paprika in a bowl. Pour 1/2 of the mixture over the cheese in the prepared pan.
- Break eggs over the top, making sure not to break yolks. Cover with remaining cream mixture and top with remaining sharp Cheddar cheese.
- Bake in the preheated oven until eggs are set, about 20 minutes. Serve immediately.

- Preheat oven to 375°F (175°C).
- Using a 6-cup muffin pan*, butter the muffin cups.
- Crack one egg into each muffin cup. Add your choice of additional ingredients.
- Bake 8 to 10 minutes. Serve immediately.

BAKED FRENCH EGGS

- Preheat the oven to 425°F. Spritz each muffin cup with butter flavored cooking spray. Crack an egg into each cup.
- Drizzle each egg with 1-2 tsp of heavy cream. A drizzle of melted butter will work, too. Season with salt and freshly ground pepper to taste and sprinkle with 1 Tbsp of Parmesan cheese.
- Place the eggs into the oven and cook 7-8 minutes for soft, 9-10 minutes for semi-soft and 11-12 minutes for firm centers. Garnish with additional Parmesan cheese and serve immediately.
