There's no need to create a complicated sauce for this easy chicken tetrazzini recipe. With some precooked chicken and a couple cans of soup, you can have a fuss-free baked pasta dinner that's sure to be a hearty, homemade favorite.

12 oz uncooked spaghetti
2 tablespoons butter
1 package (8 oz) sliced fresh mushrooms (about 3 cups)
3 cups chopped cooked chicken
2 cans (10 1/2 oz each) condensed cream of mushroom soup
2 cups sour cream
1/2 teaspoon freshly ground pepper
1/3 cup grated Parmesan cheese
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Cook spaghetti as directed on package using minimum cook time; drain.
  • Meanwhile, in 10-inch nonstick skillet, melt butter over medium-high heat. Cook mushrooms in butter 6 to 8 minutes, stirring occasionally, until tender and browned.
  • In large bowl, mix cooked spaghetti, mushrooms, chicken, soup, sour cream and pepper. Pour mixture into baking dish. Sprinkle with cheese.
  • Bake 40 to 45 minutes or until bubbling on edges and completely heated through. Let stand 5 minutes before serving. Sprinkle with parsley.

1 package (7 ounces) spaghetti, broken into 2-inch pieces
2 cups cubed cooked turkey
1 cup shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 medium onion, chopped
2 cans (4 ounces each) sliced mushrooms, drained
1/3 cup 2% milk
1/4 cup chopped green pepper
1 jar (2 ounces) chopped pimientos, drained
1/4 teaspoon salt
1/8 teaspoon pepper
Additional shredded cheddar cheese, optional

Steps:

  • Cook spaghetti according to package directions; drain. Transfer to a large bowl; add the next 10 ingredients. , Spoon into a greased 2-1/2-qt. casserole; sprinkle with additional cheese if desired. Bake, uncovered, at 375° for 40-45 minutes or until heated through.

A hearty, comforting and creamy casserole that doesn't use any canned soups and uses up lots of leftover Thanksgiving turkey.

8 ounces Egg Noodles ( a little more than 1/2 of the 12 oz. bag)
3 Cups Leftover Turkey, cut up
1 Cup Broccoli, chopped up and steamed
8 oz. Mushrooms, sliced
1/4 Cup Onion, diced
1/4 Cup Celery, diced
2 Cloves Garlic, minced
5 Tablespoons Butter (divided 2 Tbsp/3 Tbsp)
1/4 Cup Flour (I used Bob Mills)
1/2 tsp. Fresh Thyme
1/4 tsp Fresh Oregano
2 Cups Chicken Broth
1/4 Cup White Wine (can substitute broth)
1 1/2 cups Whole Milk
1/4 Cup Heavy Cream
1/2 tsp Sea Salt
1/4 tsp Black Pepper
4 oz. White Cheddar Cheese, shredded
1 Cup Bread Crumbs
3 Tbsp Butter

Steps:

  • Preheat an oven to 375° F.
  • Lightly butter a 9×13 baking dish.
  • Fill a large saucepan with water and start to bring to a boil.

I was searching through an old recipe box that I have had for 30 years or more. I came upon this recipe that I must have copied out of a magazine. I decided to give it a try last night and it was really very good. Would also be a good brunch dish. I made the recipe as written, but next time I make it, I will probably add some garlic and maybe some crumbled bacon. A very easy dish to throw together.

1 (16 ounce) package spaghetti
1/4 cup butter
1/2 cup chopped onion
1/3 cup flour
3 cups milk
6 hard-boiled eggs (chopped)
1 (4 ounce) can mushroom stems and pieces
1 chicken bouillon cube
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • Grease (or spray with cooking spray such as Pam) a 13x9-inch baking dish.
  • Prepare spaghetti as label directs; drain and place in baking dish.
  • Meanwhile, in 3 quart saucepan add the butter and when melted add chopped onions an cook till tender, about 5 minutes; stir in flour until blended.
  • Gradually stir in milk and cook stirring constantly until mixture is thickened; stir in chopped eggs, mushrooms, bouillon, salt, pepper and paprika till well blended.
  • Pour egg mixture over hot spaghetti; sprinkle with cheese.
  • Bake 15 to 20 minutes until cheese melts and mixture is hot.

  • Whisk in the flour and cook until it turns a pale gold color, about 1 minute. Slowly pour in the chicken broth, whisking to scrape up any browned bits at the bottom of the pan, and to prevent lumps from forming. Bring the heat up just a little. Continue whisking while pouring in the cream, then the sour cream and seasonings. Let the mixture simmer for 5 minutes.
  • Remove from the heat and whisk in the cheeses. Add the chicken and cooked noodles, mix to combine.

  • Place chicken stock into medium to large sauce pan and bring to a boil. Boil until reduced to one cup, letting two cups evaporate. This will give you a triple strength stock. Add all of the milk and cream and bring to hot but not boiling. Add Fontina cheese, salt, pepper and nutmeg, stir and keep mixture on medium low heat.
