POACHED EGGS WITH BéARNAISE SAUCE



Poached Eggs with Béarnaise Sauce image

This classic French egg dish makes an elegant brunch for Father's Day. Béarnaise sauce is a variation of hollandaise sauce with the addition of a flavourful tarragon vinegar reduction.

2 tsp ( 10 mL ) white vinegar
8 eggs
1 tbsp ( 15 mL ) white wine vinegar
1 tbsp ( 15 mL ) white wine
1 tbsp ( 15 mL ) finely chopped fresh tarragon
2 to 4 whole peppercorns
½ cup ( 125 mL ) salted butter
3 egg yolks
2 tsp ( 10 mL ) lemon juice
¼ tsp ( 1.25 mL ) Dijon mustard
Pinch each salt and pepper
4 English muffins, split, toasted and buttered
1 cup ( 250 mL ) arugula

Steps:

  • Fill saucepan with enough water to come 3 inches (8 cm) up side; stir in vinegar and bring to gentle simmer. Break cold egg into small dish or saucer. Holding dish just above simmering water, slip egg into water. Repeat with remaining eggs. Cook, in barely simmering water, for 3 to 5 minutes or until whites are set and yolks are cooked as desired. Remove eggs with slotted spoon; drain well on paper towel.
  • Béarnaise Sauce: In small saucepan, cook white wine vinegar, wine, half of the tarragon and peppercorns over medium-high heat for 3 to 5 minutes or until reduced to 1 tbsp (15 mL). Strain and set aside.
  • In small saucepan, heat butter over medium-high heat until melted and bubbling. Meanwhile, combine egg yolks, tarragon mixture, lemon juice and Dijon mustard in blender; purée until smooth. With motor running, pour bubbling butter into blender. Season with salt and pepper to taste. Stir in remaining tarragon.
  • Place two English muffin halves on each of four plates. Top each muffin with arugula, poached egg and Bearnaise sauce. Serve immediately.

In southern Italy this dish has the evocative name Uova al Purgatorio. When I make tomato sauce in the summer, I freeze it in half-cup portions, which makes this meal for one easy to throw together.

A couple of leaves of basil, slivered
1 to 2 eggs
Salt
freshly ground pepper
2 teaspoons freshly grated Parmesan
1 or 2 slices country bread, preferably whole-grain, toasted and rubbed with a cut clove of garlic

Steps:

  • Bring the marinara sauce to a simmer in a small saucepan or an 8-inch omelet pan and turn the heat to low. Add the cayenne, if desired, and the slivered basil.
  • Break the egg or eggs into a teacup, and carefully tip them into the tomato sauce. Cover the pan and simmer over low heat for 3 to 4 minutes, until the tops of the whites are set but the yellow yolk shows through. It's important that the yolk be runny. Turn off the heat. Season the eggs with salt and pepper to taste and sprinkle on the Parmesan.
  • Serve in a wide soup bowl, on top of the garlic toast or with the toast on the side.
