EGG-STUFFED MEATLOAF

Egg-Stuffed Meatloaf image

Egg-stuffed meatloaf is just as easy to make as regular meatloaf, but it's so festive and elegant, and so much fun to eat!

Provided by Vered DeLeeuw

Categories     Main Course

Time 1h20m

Number Of Ingredients 11

1 large egg
1 teaspoon sea salt
1/2 teaspoon black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons smoked paprika
2 lbs. lean ground beef ((85/15))
1/2 cup blanched finely ground almond flour
1/2 cup grated Parmesan ((not shredded) )
4 hard boiled eggs
2 tablespoons unsweetened ketchup

Steps:

  • Preheat your oven to 350° F. Line a sheet pan with foil (for easy cleanup) and grease the foil.
  • In a medium bowl, whisk together the egg, salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Add the ground beef, almond flour, and parmesan. Gently mix, just until uniform.
  • Divide the beef mixture into two halves. Form one half into a roughly 8-by-4-inch rectangle (you can use a clingwrap-lined loaf pan as your mold, as shown in the video below) and place the rectangle on the prepared baking sheet. Place the hard-boiled eggs, evenly spaced, on top.
  • Place the second half of the beef mixture on top of the eggs. Press it so that it adheres to the bottom layer. With your fingers, pinch the edges of the two rectangles together, to create one meatloaf. Pinch well, to prevent the meatloaf from bursting at the seams as it bakes. You can transfer pinches of ground beef to sparse areas where eggs are peeking or where it's difficult to pinch the edges together.
  • Brush the meatloaf with ketchup.
  • Bake until the center of the loaf registers 160° F, 50-60 minutes.
  • Rest the meatloaf for 15 minutes before slicing and serving.

Time 5m

Yield 1 serving

Number Of Ingredients 4

1 slice of your favorite kind of bread
1 tablespoon butter
1 egg
Salt and freshly ground black pepper

Steps:

  • With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
  • Heat a skillet over medium-low heat and melt in the butter. When the butter is all spread out, place the slice of bread in the skillet and crack the egg straight into the center of the hole.
  • Cook until the egg sets a bit on the bottom, 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side.
  • Move the toast around in the skillet, soaking up all of the glorious butter. Let it cook until the yolk feels soft. Here's the key: golden brown toast, white (not browned/burned) whites, soft unbroken yolk. Perfect.

PALEO MEATLOAF WITH EGG IN THE MIDDLE

Mom's old-fashioned meatloaf, paleo-style.

Categories     Meat and Poultry Recipes     Pork     Ground Pork Recipes

Time 2h10m

Yield 8

Number Of Ingredients 16

1 small yellow onion, roughly chopped
4 cloves garlic
½ cup flat-leaf parsley leaves
⅔ cup almond meal
2 eggs, beaten
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons kosher salt
1 teaspoon paprika
¾ teaspoon ground black pepper
½ teaspoon dried oregano
1 ½ pounds lean ground beef
1 pound ground pork
3 hard-boiled eggs, or more to taste
2 tablespoons tomato paste
2 teaspoons ghee (clarified butter)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the onion and garlic in a food processor; pulse until onion is finely chopped but not watery. Transfer to a large bowl. Puree parsley in the food processor; add to the bowl. Mix in almond meal, beaten eggs, 2 tablespoons tomato paste, Worcestershire sauce, salt, paprika, black pepper, and oregano. Add ground beef and pork; mix gently by hand until just combined.
  • Place half of the ground meat mixture in a loaf pan. Press down until well-packed. Make a shallow well in the center; fill with hard-boiled eggs. Pat the remaining ground meat mixture down on top, squeezing out any air pockets.
  • Stir 2 tablespoons tomato paste and ghee together in a small bowl. Spread an even layer of the topping over the meatloaf. Place the loaf pan on a baking sheet.
  • Bake on the center rack of the preheated oven until no longer pink in the center, about 1 hour 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Cool meatloaf until slightly shrunk and pulled away from the sides, at least 15 minutes. Transfer to a cutting board using 2 sturdy spatulas. Slice and serve.

HOW TO BAKE AN EGG INSIDE A MUFFIN | EPICURIOUS

  • Cook The Egg Just So. Some might guess that the egg is added to muffin after it's baked (a feat that really that would require magic). But in fact, you cook the egg before you do anything with the muffin batter.
  • Carefully Peel the Egg. No matter how long you decided to cook the eggs, put them in a very cold ice bath directly after boiling to stop the cooking process.
  • Use a Thick Muffin Batter. The "muffin" at Craftsman and Wolves is actually a savory cake, modeled after a cake Werner sampled in France. The key, he says, isn't the flavor—it's the texture.
  • Fill the Pan Right. Using a pastry bag will make all the difference here. Grease every other section of a muffin pan (egg-filled muffins are bigger muffins, so using every muffin slot won't work), then pipe batter into each greased space to fill halfway up.
  • Bake the Muffins at a High Temperature. Make sure to choose a muffin recipe that bakes at a high temperature, between 425°F and 450°F, because you want the muffins to cook quickly.
  • Add a Flavorful Finishing Touch. The great thing about the egg-in-a-muffin is that is can be a handheld breakfast, combining your muffin, bacon (if using), and egg into one.
