Official Contest Entry: Simply Potatoes 5Fix. I'm always looking for a fun, new way to serve up breakfast and I just happen to be a lover of potatoes, bacon, eggs and cheese...enough said, right? These bacon, egg and cheese hashkets are a savory breakfast treat with a twist! Serve it up with some fruit on the side and you've got a perfect start to the day.

Number Of Ingredients 5

4 eggs, lightly beaten
4 tablespoons scallions, diced
4 slices bacon, diced
3/4 cup cheddar cheese, freshly shredded
1 cup Simply Potatoes® Shredded Hash Browns, defrosted

Steps:

  • Pre-heat oven to 350 degrees.
  • Heat small skillet on medium-high temperature.
  • While skillet is heating up, slice bacon in half lengthwise and then dice into medium sized pieces.
  • Place bacon in skillet and cook 5-7 minutes or until just crispy, set aside on plate lined with papertowel.
  • Slice white and light green parts of scallions, set aside .
  • Lightly beat eggs until just blended.
  • Spray four cupcake holes with non-stick spray.
  • Line each greased cupcake hole with enough hash browns to coat all sides.
  • Sprinkle scallion and bacon evenly into each greased and lined cupcake hole.
  • Pour egg mixture into each, filling the rest of the hash brown basket.
  • Sprinkle the cheese evenly amongst each filled cupcake hole.
  • Bake for 15-18 Minutes until cheese is slightly browned and just bubbling.
  • Serve & Enjoy!

Official Contest Entry: Simply Potatoes 5Fix. Southwest style hash brown potatoes are cooked in a waffle iron - giving them a nice brown, crisp crust. Then, they're topped with enchilada sauce, an oven poached egg, and fresh pico-de-gallo salsa. A south-of-the-border breakfast in a flash!

1 (15 ounce) can mild enchilada sauce
1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
2 tablespoons vegetable oil
6 large eggs
1 1/2 cups pico de gallo

Steps:

  • Preheat oven to 400 degrees.
  • Pour enchilada sauce into a blender. Remove 1/2 cup of the hash browns from bag and place in blender. Blend until very smooth, to thicken up the enchilada sauce. (The sauce will get warm from the heat of the blender.).
  • Heat a waffle iron to medium high heat. Brush both top and bottom of waffle iron with a little oil. Scoop a scant 1/2 cup of hash browns, and place in waffle iron. Repeat 5 times, making sure the potatoes are in separate areas. (You may need to cook in batches, depending on the size of your waffle iron.) Close the waffle iron and cook until the hash brown discs are browned and cooked through. Repeat until you have 6 hash brown discs.
  • While potatoes are cooking, break the eggs into six muffin tins that have been filled halfway with hot water. (The water is not an ingredient, just a way of cooking the eggs.) Bake for 6 minutes for eggs that have a runny yolk, longer if you desire more cooked yolks.
  • To assemble, place a hot hash brown disc on a serving plate. Top with a generous spoonful of enchilada sauce. Top with a poached egg. Sprinkle with 1.4 cup of pico-de-gallo fresh salsa.

This is my family's recipe that has been handed down through the years. We've always used the maple flavored pork sausage but any kind is good. This casserole is a nice and cozy breakfast or brunch meal that everyone will enjoy. It's got the perfect taste with lots of cheese. Yum! Be sure to use a baking dish that is deep enough to cover with aluminum foil.

1 (2 pound) package frozen hash brown potatoes, thawed
1 pound pork sausage
1 small onion, diced
5 eggs
½ cup milk
½ teaspoon onion powder
⅛ teaspoon garlic powder
salt and ground black pepper to taste
12 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.
  • Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

  • In a large bowl, combine the hash browns, bacon, 1/2 cup cheese and salt. Spoon into a greased 13x9-in. baking dish.
