BUFFET-STYLE FLUFFY OVEN SCRAMBLED EGGS FOR A CROWD

Buffet-Style Fluffy Oven Scrambled Eggs for a Crowd image

This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :)

Categories     Breakfast

Time 30m

Yield 12 serving(s)

Number Of Ingredients 6

1/3-1/2 cup butter, melted
24 large eggs
1 1/2 teaspoons salt (I use seasoned salt)
fresh ground black pepper (optional and to taste) or white pepper (optional and to taste)
1 1/4 cups half-and-half cream
1 1/4 cups milk (or use 2-1/2 cups all milk)

Steps:

  • Set oven to 350 degrees F (set oven rack to lowest position).
  • Spray a 13 x 9-inch glass baking pan with cooking spray then pour the melted butter into the pan.
  • In a bowl whisk eggs and salt until smooth and well blended.
  • Gradually whisk in the half and half and milk; pour into the baking pan.
  • Bake uncovered for 10 minutes.
  • Remove the pan from the oven then stir the eggs; return to oven and bake another 15-20 minutes or until the eggs are just set (to insure soft fluffy eggs do not overbake as the eggs will cook more after removing from the oven).
  • Serve immediately.

EGGS BENNY

Eggs Benny image

For breakfast or brunch, EGGS BENNY is pure delight to the taste buds & easy to prepare! Since I seem to unable to make a proper hollandaise sauce and love Eggs Benedict, I've come up with this scrumptios creation that I've become totally addicted to! (And the sauce, so simple, can be used in a zillion ways!!)

Provided by sharflan

Categories     Breakfast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 13

2 tablespoons butter
1/2 tablespoon flour
1/2 cup homoginized milk
1/2 cup whipping cream
1/4 cup asiago cheese, grated
1/4 teaspoon lemon juice
1/8 teaspoon cayenne pepper, ground
salt & pepper, as desired
1 tablespoon shallot, chopped
1 cup spinach, cooked & drained
4 ham slices
4 eggs, poached
2 English muffins, split & toasted

Steps:

  • Sauce (while sauce is cooking, prepare/heat the other ingredients):.
  • In a sauce pot, over medium heat, melt the butter and stir in all the flour, blending well.
  • Mix the milk and cream, slowly add to the sauce pot, whisking to totally blend (time to poach those eggs!).
  • Add the lemon juice and cayenne pepper.
  • Add the grated cheese, blending well. (more cheese can be added for a 'cheesier' flavor if desired. Keep in mind that the cheese will further thicken the sauce.).
  • Do not allow the mixture to boil or even come close. Lower the temperature as necessary.
  • Cook to thicken sauce to desired consistency. Sauce will further thicken as it sits.
  • Heat the ham slices (fry lightly, steam or nuke).
  • Add the chopped shallot to the spinach & mix well, heating through.
  • Place 1/2 English muffin on each plate, topping it 1st with a ham slice, then 1/4 c spinach mixture, topping that with a poached egg and finally with sauce, then sprinkle with fresh ground pepper.
  • Serve hot!
  • Keeping a well warmed oven will give you a place to keep things hot 'til you are ready to serve.

Everyone's favorite brunch, complete with toasty English muffins, a perfectly poached egg, & luscious homemade hollandaise sauce! This easy eggs benedict recipe is perfect for ordinary weekends & special occasion brunches alike. With a make-ahead approach & lots of easy tips (like poaching eggs in advance & prepping hollandaise in a blender), homemade eggs benedict has never been simpler to make at home!

Provided by Jess Larson

Categories     Breakfast

Time 1h

Number Of Ingredients 18

6 L'Oven Fresh Plain English Muffins, split in half crosswise
3-4 tablespoons olive oil, divided
12 poached eggs (below)
blender hollandaise sauce (below)
toppings of choice - choose 2-3 below: 12 ounces Appleton Farms Center Cut Bacon
16 ounces asparagus, woody ends trimmed
12 ounces Appleton Farms Prosciutto
12 ounces Specially Selected Cold Smoked Salmon
etc...
2 quarts (8 cups) cold water
2 tablespoons Tuscan Garden Distilled White Vinegar
12 Goldhen Cage Free Large Grade A Brown Eggs
3 Goldhen Cage Free Large Grade A Brown Egg yolks
1 heaping teaspoon Burman's Dijon Mustard
1/2 lemon, juiced (1 heaping tablespoon)
8-10 tablespoons Countryside Creamery Unsalted Butter, melted
1 teaspoon kosher salt
optional: 1/4-1/2 teaspoon cayenne pepper or 1 teaspoon hot sauce of choice

Steps:

  • to 400 degrees F, ensuring the oven racks are positioned in the top & bottom third of the oven. Line 3 large baking sheets with parchment paper or aluminum foil for easy clean up & set aside.
  • Arrange the bacon on one prepared baking sheet & set aside. Place asparagus on a second prepared baking sheet. Drizzle with 1-2 tablespoons olive oil, season with 1/2 teaspoon kosher salt, & toss to coat. Place bacon & asparagus in the oven to bake & roast for 25-30 minutes, until the asparagus is tender with crispy edges & the bacon is crisp. Remove from the oven & set aside.
  • Increase heat to 450 degrees F. Brush the remaining 2-3 tablespoons olive oil over the surface of the English muffins. Transfer to the oven to toast for 5-10 minutes, until golden brown & crisp around the edges. Remove from the oven & set aside.
  • Add the water & vinegar to a large pot or saucepan and bring to a gentle simmer. Crack the eggs into 8 individual ramekins or small bowls. For prettier poached eggs with fewer wispy whites, crack the eggs into a fine mesh sieve & swirl to strain off the looser, liquidy whites. Set aside. Prepare an ice bath by filling a large bowl with cold water & a handful of ice cubes. Set aside.
  • Gently swirl the water into a gentle vortex (note - the water does not need to vigorously swirl, but it does need to have just a little bit of movement) and slide an egg into the center of the vortex. Cook 2-3 minutes, gently stirring occasionally to keep the water moving, until the white is set & the yolk is soft. Use a slotted spoon to carefully transfer the egg to the prepared water bath. Repeat with the remaining eggs. You can poach 2-3 eggs at a time, but take things as slow as you need to ensure the eggs hold their shape & cook properly.
  • Carefully transfer the cooled poached eggs to an airtight container & submerge in water. Store in the refrigerator for up to 5 days. To reheat, gently lower eggs into hot water from the tap. Set aside for 1-2 minutes, until warmed through. Serve immediately.
  • Add butter to a liquid measuring cup. Microwave for 60-90 seconds, until melted & very warm. Set aside.
  • Add the egg yolks, lemon juice, Dijon mustard, salt & desired seasonings to a small food processor or blender. Blend about 30 seconds. The mixture should be very well incorporated & pale yellow in color. With the blender/food processor running, very slowly stream in the hot, melted butter until the hollandaise sauce is creamy, emulsified, & has reached your desired consistency. For a thicker hollandaise, use 6-8 tablespoons butter. For a thinner hollandaise, use 8-10 tablespoons butter.
  • Transfer hollandaise to an airtight jar or container and store in the refrigerator for up to 1 day. To reheat, transfer hollandaise to a microwave-safe bowl. Microwave in 15-second increments, stirring well between increments, until the sauce is warm.
  • Top each toasted English muffin with toppings of choice (crispy bacon, roasted asparagus, thinly sliced prosciutto, smoked salmon, etc.). Place a poached egg on top. Finish with a spoonful of hollandaise sauce & garnish as desired with cracked pepper, fresh herbs, cayenne pepper, or hot sauce. Serve immediately. Enjoy!

CREAMY MAKE AHEAD SCRAMBLED EGGS FOR A CROWD

Creamy Make Ahead Scrambled Eggs for a Crowd image

Are you the one by yourself in the kitchen making last-minute scrambled eggs for all your brunch guests? No longer! Make them ahead and pop them in the slow cooker. Thanks to a couple secret ingredients, they are so creamy and tender, I promise!

Provided by Karen

Categories     Breakfast

Time 20m

Number Of Ingredients 13

24 large eggs
1 cup milk (cream, or half and half)
2 & 1/2 teaspoons kosher salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon mustard powder
1 teaspoon seasoning salt
1/4 teaspoon cayenne pepper
1/2 cup butter ((1 stick))
1 (8-oz) package cream cheese
green onions (or chives, to garnish (optional))
shredded cheddar cheese (to garnish)

Steps:

  • In a blender, add eggs, milk, and all the spices (salt, pepper, garlic, onion, mustard, seasoning salt, cayenne.) Make sure you have a big blender! Mine went over the 4 cup capacity at around 20 eggs and then I was too scared to add more so I just whisked them in. You could of course just skip blending and whisk them all in a bowl. Whatever sounds easier to you!
  • Melt 1/2 cup butter in a 12 inch high-sided skillet over medium heat. When it is nice and hot, pour in the egg mixture. Lower the heat to medium-low. You have to cook eggs sloooow.
  • Use a spatula to occasionally scrape the bottom of the pan. Cook for 10-15 minutes until the eggs are starting to set.
  • Then add the cream cheese that has been cut into chunks. Carefully fold in the cream cheese and let it melt away into your dreamy creamy eggs.
  • When the eggs have cooked (cooked meaning you're ok sneaking a bite) but are still quite wet, add the eggs to a crock pot and turn the crock pot to warm. (If there is no warm setting, the low setting will do.) Put the lid on.
  • Stir the eggs every hour or so. You can keep them warm in the crock pot for about 4-5 hours. If you leave them in too long eventually they will become rubbery, so it's best to eat them within 4-5 hours.
  • When serving, top with cheddar cheese and green onions.

  • Fill a large pot three-quarters full with water and bring to a bare simmer. Set up a large bowl of ice water and place near stove.
  • Working one at a time, crack egg into a fine-mesh sieve set over a small bowl and shake gently to allow the more liquid part of egg white to pass through. Gently transfer egg to a medium bowl (eggs are more resilient than you think, but be careful not to break the protective ring of egg white surrounding yolk). This step might sound insane, but it eliminates the thin tentacle-like strands of egg whites that form when the egg hits the hot water.
  • Once you have 6 strained eggs in bowl, gently position bowl over pot of simmering water and, one at a time, slip each egg into pot. Cook eggs, gently encouraging each to rotate with a slotted spoon so they cook evenly, until whites are set and yolks are still runny, 3 minutes. Transfer to ice bath and let cool (you’ll reheat them later on).
  • Skim off and discard any foam or bits of egg white in pot. Return water to a bare simmer. Repeat poaching process with remaining 6 eggs.
