EGGS AL POMODORO
A simple Sunday brunch or, if you're like me, a go-to gourmet breakfast, my version of eggs al pomodoro is inspired by the prix fixe at Lil' Frankie's. Flavored with spicy Italian sausage and infused with earthy rosemary, the salty tomato sauce luxuriously balances out the sweet poached eggs. Enjoy with a fresh cup of hazelnut coffee or a Bloody Mary.

Steps:
- Bring a pot of water to a boil.
- Add salt and vinegar (the latter is essential if you want your eggs to keep their shape in that rapid water).
- Gently crack an egg into the bath and lower the heat.
- Add another and repeat until they're all in the pot.
- Poach for about 2-3 minutes--this really depends on so many factors, from the temperature of the water that day to the specific egg, so I've found that it just takes practice. Eventually you'll know how long is right for the kind of egg you like (I personally enjoy mine golden and oozing).
- Plate your eggs, salt and pepper them, and drain the water so you can use the same pot, or, if you don't care about dirtying another pan, simultaneously do the next step.
- For a quick breakfast: simply heat up the bolognese in the pot and top your eggs with it.
- For a fancier brunch: brown the sausage in some olive oil, add the sprig of rosemary and tomato sauce, and let it all simmer for a few minutes so the flavors can marry. Top your eggs with the sauce, garnish with cheese, and devour ruthlessly.
PASTA POMODORO
Easy and light pasta with tomatoes and garlic. Cooked chicken breast chunks or shrimp can also be added to sauce for a great main dish!

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.
- Pour olive oil in a large deep skillet over high-heat. Saute onions and garlic until lightly browned. Reduce heat to medium-high and add tomatoes, vinegar and chicken broth; simmer for about 8 minutes.
- Stir in red pepper, black pepper, basil and cooked pasta, tossing thoroughly with sauce. Simmer for about 5 more minutes and serve topped with grated cheese.

Steps:
- Lightly sauté the garlic and onion in the oil; let cool to room temp stir the yeast into the warm water and let stand till 10 minute.
- Stir in 1 c water and garlic and onion w/ the oil; then stir in the tomatoes.
- Mix the flour and salt and stir in 1 c at a time into the yeast mixture.
- Knead on a floured surface until the dough is soft, velvety, and slightly moist (about 8 to 10 minutes) Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise 1 hr or until doubled.
- Punch the dough down on a floured surface and knead briefly.
- Shape into a ball and place on a lightly oiled baking sheet sprinkled with flour, cover w/ a towel and let rise until doubled, about 1 hours.
- Preheat oven to 425°F.
- Make 3 parallel slashes on the top of the loaf and brush with egg white.
- Bake 10 minutes, spraying 3 times (every 3 minutes) with water.
- Turn heat down to 375°F and bake 25 to 30 minutes more.
- Cool completely on a rack.

Steps:
- Peel and dice the small onion, garlic, carrots, celery and put into a large pot.
- Add 2 large cans of Italian pelati [prepeeled roma tomatoes].
- Add 1/2 of the bunch of basil with leaves left whole.
- Add a long drizzle of olive oil.
- Simmer on low for 45 minutes.
- Turn off heat and let it rest at least 15 minutes.
- Cook one package of spaghetti noodles [or angel hair] until al dente [with still a bit of a snap at the core].
- Place pasta on large serving bowl or plate.
- Pour sauce over.
- Cut carefully the other 1/2 of basil and sprinkle over the sauce and pasta with lots of freshly grated parmagiana reggiano cheese.
