MELITZANOSALATA - TRADITIONAL GREEK EGGPLANT SALAD RECIPE
Melitzanosalata is a tasty Greek appetizer traditionally served aside meats, pita bread, and other sauces. This eggplant salad is a delicious and healthy starter, but it also a perfect ingredient for a sandwich or a Pita Gyro. I love preparing this vegan small plate along with Tzatziki sauce, Souvlaki, and Greek salad. This kind of meal remembers me my days in Greece: closing my eyes, and breathing deeply, I can still feel the flavors of the olive groves and Mediterranean sea!

Steps:
- First of all, preheat the oven to 390° F (200° C).
- After that, rinse and dry the eggplants, then holes a few times the skin of the vegetables with a fork.
- Place the eggplants on a tray lined with parchment paper and bake, 45 mins to 80 mins depending on the size of the eggplants, until very tender and wrinkled, flipping them a couple of times.
- This step can also be done with a charcoal or electric grill.
- Once incredibly tender, cut the eggplant still hot into halves and scoop the pulp.
- Pour the pulp into a colander, add a pinch of salt, and let it lose the vegetation water stirring and pressing with a spoon occasionally until it reaches room temperature.
- While the eggplant pulp is reaching the room temperature, combine the olive oil with red onion, garlic, black pepper, and vinegar.
- Mix it all until smooth and consistent.
- Now, mince the eggplant pulp with a knife, then mince the fresh parsley as well.
- Finally, combine the eggplants, the parsley, and the vinaigrette, stirring and serving along with, pita, meats, and other Greek small plates.

This easy grilled eggplant salad is the healthy side dish you'll want to serve all summer long. - Preheat a grill to medium-high.
- Combine oil, za'atar and lemon zest in a small bowl. Brush 1 side of eggplant slices with half of the oil mixture; reserve the remaining mixture. Oil the grill rack (see Tips). Grill the eggplant, uncovered, turning often, until tender and grill marks appear on both sides, about 5 minutes total. Cut the eggplant into 1/4-inch pieces and transfer to a large bowl.
- Coat bell pepper quarters and onion wedges with cooking spray. Grill, uncovered, until tender and charred, about 5 minutes. Chop the peppers into 3/4-inch pieces. Remove and discard onion stem. Add the peppers, onions, tomatoes, parsley, scallions and mint to the bowl with the eggplant.
- Add lemon juice and salt to the reserved oil mixture; whisk to combine. Drizzle over the vegetables and toss to coat.

- Cut eggplant in half lengthwise. Place with cut side down in a greased 9-in. square baking dish. Bake at 350° for 30-40 minutes or until tender. , Cool, peel and cut the eggplant into 1/2-in. cubes; place in a large salad bowl. Add tomatoes, eggs and onion. Add dressing, salt and pepper; toss. Cover and chill 1 hour before serving.

CHINESE COLD EGGPLANT SALAD

- Step 1 Wash the eggplant and cut the ends off. Cut eggplant into thirds lengthwise, then quarter each piece. If some sections are larger than the others, cut them into 6 pieces rather than 4. Put eggplant in steamer and steam for approximately 13 minutes or until softened. Gently pick them up (I used chopsticks) and place on a serving dish. Set aside. Step 2 As the eggplant is steaming, make the sauce. In a small bowl, combine hot water and sugar until thoroughly dissolved. Then add light soy sauce, sesame oil and black vinegar. Step 3 In a small pot, heat 1 tsp. corn oil to medium high heat. Add garlic and half of the Serrano pepper, and cook for 30 seconds. Pour everything into the sauce mix. Step 4 Pour the sauce mixture on top of the eggplant, and let marinate for at least 20 minutes. Garnish with cilantro and the remaining Serrano peppers when ready to serve. Step 5 Note: use gloves when slicing the peppers if you are sensitive to them.

- Preheat the oven to 400 degrees.
- Line a baking sheet with foil and brush with oil. Cut the eggplant in half lengthwise and place cut side down on the foil. Bake for 20-30 minutes or until the eggplant is soft. Cool until able to handle. Peel and chop the eggplant coarsely.
- In a small bowl, combine all remaining ingrediants and mix well. Add the eggplant and salt and pepper to taste. Cover and refrigerate overnight. Remove from refrigerator and bring to room temperature before serving.
