BAKED EGGPLANT PARMESAN
Eggplant slices are coated with bread crumbs and Parmesan cheese and baked between layers of tomato sauce and mozzarella cheese for a filling Italian-inspired meal. Add fresh garlic and basil to taste. I use 2 to 4 cloves fresh garlic and 5 to 10 leaves of freshly harvested basil in the sauce. Fresh basil layered in one of the layers adds lots of 'fresh' flavor!

Steps:
- Place eggplant slices in a colander; sprinkle both sides of each slice with salt. Allow to sit for at least 3 hours. Wipe excess moisture from eggplant slices with paper towels.
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Mix bread crumbs and 1/4 cup Parmesan cheese together in a bowl.
- Dip eggplant slices in beaten egg; coat with bread crumb mixture. Arrange coated eggplant slices in a single layer on the prepared baking sheet.
- Bake in the preheated oven until lightly browned and crisp, about 5 minutes per side.
- Cover the bottom of a 9x13-inch casserole dish with a layer of spaghetti sauce; top with a layer of eggplant slices. Sprinkle with about 1 tablespoon of the remaining Parmesan cheese and 1/3 the mozzarella cheese. Repeat layers with remaining ingredients, ending with a cheese layer. Sprinkle with basil.
- Bake in the preheated oven until cheese is bubbling and golden brown, about 35 minutes.

- Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.

- Arrange a layer of eggplant slices in a colander. Sprinkle generously with salt. Continue layering and salting all eggplant slices. Let stand 30 minutes. Rinse and pat dry. Dip each eggplant slice in beaten egg, and dredge with breadcrumbs.
- Heat oil in a heavy skillet. Over medium high heat fry eggplant in hot oil about 2 minutes per side until golden. Drain on absorbent paper.

- Preheat oven to 425 degrees F (220 degrees C). Grease an 8x14-inch baking dish.
- Mix seasoned bread crumbs, 1/4 cup Parmesan cheese, and red pepper flakes in a shallow bowl. Brush eggplant slices with olive oil and press into bread crumb mixture to coat. - Place olive oil and garlic in sauce pan. Heat oil and allow garlic to infuse. Add tomato sauce and simmer on low for 30 minutes.
- Heat about 1/2 inch of olive oil in skillet. Allow the oil to get nice and hot -- you want the eggplant to fry quickly. To test the heat of the oil, break off a tiny piece of eggplant and drop in skillet. It should sizzle immediately.
- Fry a few slices of eggplant at a time. Each side should take about 60-90 seconds. Remove from oil and drain on plate lined with paper towels. Continue until all eggplant is fried.
- Place a thin layer of sauce in the bottom of a 9 x 9 baking dish.
- Place a single layer of eggplant on top of the sauce, making sure to cover the entire area.
- Sprinkle with mozzarella and parmesan. Place another layer of eggplant, sauce, mozzarella and parmesan. Use just a thin layer of sauce.
- Continue layering until you have used up all your eggplant. The top will be parmesan only.
- Place in 350°F oven for 20-30 minutes or until thoroughly heated, bubbly and browned on top.
- Remove from oven and cool for approximately 30 minutes before serving to allow the cheese to firm up a bit.
QUICK EGGPLANT PARMESAN
This eggplant goes well with some steamed green beans and French or Italian bread. Although the recipe calls for seasoned bread crumbs, you can use regular bread crumbs if you wish. Adjust the amount of red pepper flakes according to your taste.

- In a small bowl beat the egg and water together. Place the bread crumbs in shallow dish. Dip eggplant slices in egg mixture then in crumbs, being sure to coat thoroughly.

- Start by making the sauce if you don't have any already made.
- Preheat oven to 450°F. Spray 2 sheet pans with oil.
- While the sauce simmers, slice the eggplant into 1/4 inch thick slices. Transfer to the prepared pans, it's ok if they overlap slightly. Season with salt. Bake for 20 minutes, turning halfway through until eggplant is golden.
- Meanwhile, in a medium bowl combine ricotta, egg, parsley and 1/4 cup of grated cheese.
- Put 1/2 cup sauce on the bottom of a 9x12 baking dish, add 1/3 of eggplant to cover the bottom of the dish. Top with 1/3 of the ricotta cheese mixture, 3/4 cup of the mozzarella cheese and 3/4 cup of the sauce. Add another layer of eggplant and repeat the ricotta cheese, mozzarella cheese and sauce two more times, reserving the third layer of mozzarella for topping. Finish with 1 1/2 cups of sauce, remaining mozzarella, and the remaining 2 tablespoons of grated cheese.
- Heat the oven to 400F.
- Cover with foil and bake until cheese is melted and everything is bubbling, about 40 minutes.
- Remove foil and bake an additional 10 minutes.
- Take it out of the oven and let it sit about 10 minutes before cutting.

- Preheat your oven to 375 degrees Fahrenheit and prepare a large 9-inch by 13-inch pan (or equivalent) by greasing it with a little bit of olive oil or cooking spray. Set aside.
- Heat a large pot over medium high heat and add the olive oil and butter.
- When the pan is heated and the butter has melted add the onion, garlic and spices, cooking until the onion is soft and translucent (about 3-4 minutes).
- Add the tomato paste and the wine and continue to stir, cooking until most of the liquid from the wine cooks off.
- Add the diced tomatoes and salt and pepper, and stir well. Let the sauce cook well over medium high heat (stirring often) for about 20 minutes until it reaches a jam-like consistency. If your canned diced tomatoes are very watery it's a good idea to strain them a little bit before adding to the pot.
- While the sauce cooks down, heat a large skillet over high heat.
- Brush the eggplant slices with olive oil on both sides and fry them in the hot skillet for about one minute or so per side, until they darken in colour. Remove them to a plate after frying and set aside.

- Peel the eggplant and cut it into 8 equal slices.
- Arrange a layer of eggplant slices in a colander in a sink or over a plate. Sprinkle generously with salt. Let stand 30 minutes.
- Rinse the eggplant slices well and pat dry with paper towels.
- In a shallow bowl, whisk the egg until well beaten. Place the breadcrumbs in a second shallow bowl.
- Dip each eggplant slice in the beaten egg, coating both sides, and then dredge with breadcrumbs.
- Dip each eggplant slice into the egg a second time and then coat both sides with more breadcrumbs.

EGGPLANT-PARMESAN SAUCE

- Soak 1 pound cubed eggplant in warm salted water, about 15 minutes, then drain and squeeze dry. Season 1 cup flour with salt and pepper in a bowl. Beat 2 eggs with 1/2 cup milk in another bowl. Mix 1 1/2 cups flour and 1/2 cup grated parmesan in a third bowl. Dip the eggplant in the seasoned flour, the egg and then the flour-cheese mixture. Fry in 1/4 inch olive oil over medium-high heat until golden; drain on paper towels. Mix with 4 cups Perfect Marinara Sauce, recipe follows. Toss with rigatoni.
- Combine 3 tablespoons olive oil, 6 thinly sliced garlic cloves and a pinch of red pepper flakes in a large skillet and cook over medium-low heat until the garlic is golden, about 6 minutes. - Prep the eggplants: Generously salt the eggplant rounds on both sides. Let them sit on sheets of paper towel for 1-2 hours to draw out the moisture. Press the rounds dry with paper towel.
- Ready the oven: Preheat the oven to 425°F. Brush two sheet pans with 1 tbsp olive oil in each one.
- Assemble the dredge: Grab 3 shallow bowls or plates. Add the flour to one, eggs to the second, then breadcrumbs, Italian seasoning, and ¼ cup of the parmesan cheese to the third. Season each bowl with salt and pepper and mix well.
- Dredge the eggplant: Take an eggplant round and dredge it in flour, then dip in the beaten egg, and finally coat with the breadcrumb mixture. Place the round on one of the prepared baking sheets, and repeat with the remaining rounds. Drizzle the remaining olive oil over the rounds.
- Bake the eggplant rounds: Bake the rounds for 15-20 minutes or until golden brown. Reduce the heat in the oven to 375°F after taking the eggplant rounds out.

Lay half of the baked eggplant rounds in a single layer over the sauce, then top with 1½ cups of marinara sauce followed by 1 cup of mozzarella and ½ cup of parmesan. Layer the remaining eggplant rounds, marinara sauce, and cheeses in the baking dish.
- Bake: Bake for 20-25 minutes, or until the cheese is bubbly and browned.
- Garnish and serve: Garnish with fresh basil. Allow the casserole to rest for 20 minutes at room temperature before serving.
