12 whole wheat lasagna noodles, dry
1 teaspoon olive oil
2 tablespoons olive oil
3 cloves garlic, minced
1 eggplant, cubed
1 (28 ounce) can Italian herb-flavored tomato sauce
1 cup part-skim ricotta cheese
1 cup low-fat cottage cheese
1 cup shredded part-skim mozzarella cheese
¼ cup shredded Parmesan cheese
½ teaspoon salt
½ teaspoon ground black pepper
1 egg
2 ½ cups frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of water to a boil.
  • Drop lasagna noodles into water and add 1 teaspoon of olive oil. Cook until noodles are tender but still slightly firm, about 8 minutes.
  • Drain water from the noodles and let cool.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat.
  • Cook and stir garlic and eggplant chunks until eggplant is partially cooked, about 7 minutes.
  • Pour tomato sauce into the skillet and simmer until eggplant is tender, 10 to 15 minutes.
  • Combine ricotta cheese, cottage cheese, mozzarella cheese, Parmesan cheese, salt, black pepper, and egg in a bowl.
  • Mix spinach into ricotta cheese mixture.
  • Spread a layer of tomato sauce mixture into the bottom of a 9x12-inch baking dish.
  • Place 4 noodles on top of the sauce, overlapping if necessary.
  • Spoon 1/3 of the remaining tomato sauce over noodles.
  • Spread 1/3 of the ricotta mixture over the tomato sauce
  • Repeat layers twice more, starting with noodles and following with sauce and ricotta mixture.
  • Top the lasagna with mozzarella cheese.
  • Bake in preheated oven until the ricotta filling is set and mozzarella cheese topping is lightly browned, 45 minutes to 1 hour.

1 teaspoon olive oil for brushing
2 eggs
2 tablespoons water
1 cup grated Parmesan cheese
1 cup Italian-seasoned breadcrumbs
salt and ground black pepper to taste
2 large eggplants, peeled and sliced into 1/2-inch rounds
2 tablespoons olive oil
1 pound ground beef
48 ounces chunky tomato sauce (such as Prego®)
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Oil 2 baking sheets and a 9x13-inch baking dish with 1 teaspoon olive oil.
  • Whisk eggs and water together in a shallow dish. Combine Parmesan cheese, bread crumbs, salt, and ground black pepper in a separate shallow dish.
  • Dip eggplant slices into egg mixture, then press each gently into bread crumb mixture. Gently tap off any excess crumbs. Arrange slices on the prepared baking sheets.
  • Bake eggplant slices in the preheated oven until tops are golden brown, 20 to 25 minutes. Flip eggplant and bake an additional 20 to 25 minutes.
  • Remove eggplant from the oven and increase temperature to 400 degrees F (200 degrees C).
  • Heat 2 tablespoons olive oil in a skillet over medium-high heat and stir in ground beef. Season beef with salt and ground black pepper. Cook and stir until beef is browned and crumbly, about 10 minutes. Drain excess grease. Stir tomato sauce into ground beef; bring to a simmer and set sauce aside.
  • Place 1/3 of the eggplant slices on bottom of the dish. Pour 1/3 of tomato sauce with ground beef on top of eggplant layer. Sprinkle 1/3 of mozzarella cheese on top of sauce layer. Repeat 2 more times, finishing with a layer of mozzarella cheese.
  • Bake in the preheated oven until cheese is melted and sauce is bubbling, 10 to 15 minutes. Cool for 5 minutes before slicing.

A tasty, classic Eggplant Lasagna recipe made with roasted eggplant slices and without noodles. Comforting, cheesy, and low carb. You won't miss the pasta!

2 large eggplants (sliced lengthwise 3/4-inch thick (about 8 slices))
3 1/2 tablespoons extra virgin olive oil (divided)
1 ½ teaspoons kosher salt (divided)
½ teaspoon black pepper (divided)
16 ounces sliced cremini (baby bella) mushrooms
3 cloves garlic (minced)
1/2 teaspoon dried oregano
1 (24-ounce) can prepared marinara-style pasta sauce of choice (I used a roasted garlic flavor)
1 (15-ounce) container part-skim ricotta cheese
1 (10 ounce) package frozen chopped spinach (thawed with excess water squeezed out)
1/2 cup grated Parmesan (divided)
1 large egg
1 cup shredded part-skim mozzarella cheese (or a blend of mozzarella and provolone)
2 tablespoons chopped fresh basil (thyme, or parsley)

Steps:

  • Position racks in the upper and lower thirds of your oven. Preheat the oven to 400 degrees F. Lightly coat 2 rimmed baking sheets with nonstick spray. Coat a 9x13-inch baking dish with nonstick spray and set aside.
  • Arrange sliced eggplant in a single layer on the 2 sheet pans-if some of your end-most eggplant slices are very curved, trim off the eggplant outermost curvy portion so that the slices lay mostly flat. Brush 2 1/2 tablespoons of the oil over both sides of all of the slices. Sprinkle 1/2 teaspoon kosher salt and ¼ teaspoon pepper over the top.
  • Roast the eggplant until it is soft and golden, about 25 minutes, flipping the slices over and swapping the pans' positions once halfway through. Remove the slices from the oven and reduce the oven temperature to 350 degrees F.
  • Meanwhile, in a large skillet heat the remaining 1/2 tablespoon oil over medium heat. Add the sliced mushrooms. Saute until the mushrooms are soft, about 7 minutes. Add the minced garlic, next ½ teaspoon kosher salt, and oregano. Cook for another 2 minutes. Remove the pan from the heat. Add the marinara pasta sauce and stir to combine.
  • In a large bowl add the ricotta, 1/4 cup Parmesan, egg, and remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Mix well, until the mixture is evenly combined. Stir in the spinach, using a fork to break it up and distribute it as evenly with the ricotta mixture as possible.
  • Spoon half of the mushroom marinara sauce on the bottom of the prepared baking dish and spread it into an even layer. Lay 4 eggplant slices on top followed by all of the ricotta mixture. Layer on another 4 slices of eggplant and finish with the remaining mushroom marinara sauce. Top with the mozzarella and remaining ¼ cup Parmesan. Bake for 25 to 30 minutes, until the cheese is melted and the lasagna is hot and bubbly. Remove from the oven and sprinkle with fresh herbs. Let rest 5 to 10 minutes, then serve.

2 eggplants (thinly sliced)
3 tablespoons olive oil
1 1/2 cups spinach, cooked
1 cup ricotta cheese
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce (low carb`)
1/4 cup Parmesan cheese (grated)
1/4 cup Mozzarella cheese (grated)

Steps:

  • Preheat the oven to 190C/375F degrees.
  • Place the sliced eggplant onto a baking tray and brush with the olive oil on both sides.
  • With a hot grill, place the eggplant under and grill until both sides are golden (turn over the eggplant once one side is cooked).
  • Set aside.
  • In a bowl, mix the spinach, ricotta, nutmeg, salt and pepper.
  • Put a layer of the eggplant at the bottom of a greased baking dish.
  • Spread some of the spinach mixture over the aubergine and cover in a layer.
  • Cover this layer with a few spoons of low carb marinara sauce
  • Repeat the layers until used up.
  • Sprinkle the top with the Parmesan and mozzarella cheese and bake for 30-40 minutes.
  • Eat and enjoy!

1 pound cremini mushrooms, chopped (about 5 cups)
1 pound eggplant (1 to 2 medium), peeled and chopped (about 5 cups)
1 medium onion, chopped (1 1/2 cups)
2 carrots, peeled and chopped (3/4 cup)
2 celery stalks, chopped (3/4 cup)
Kosher salt
6 garlic cloves, minced (2 tablespoons)
2 teaspoons dried oregano
1/2 teaspoon red-pepper flakes
3 tablespoons tomato paste
2 cans (28 ounces each) whole peeled tomatoes in juice
24 ounces whole-milk ricotta (3 cups)
1 cup whole milk
3 large eggs
4 ounces Parmigiano-Reggiano, finely grated (1 1/4 cups)
1 pound low-moisture mozzarella, shredded (4 cups)
3/4 cup chopped flat-leaf parsley
Kosher salt and freshly ground pepper
18 dry lasagna noodles

Steps:

  • Preheat oven to 375 degrees.
  • Sauce: Heat oil in a large saucepan over medium-high. Add mushrooms and eggplant and saute 10 minutes. Add onion, carrots, celery, and 1 teaspoon salt; cook until vegetables have browned in places and most of moisture is cooked out of mushrooms and eggplant, about 15 minutes. Add garlic, oregano, and red-pepper flakes; cook until fragrant, 1 minute. Add tomato paste; cook 2 minutes more. Puree tomatoes in a blender or food processor; add to pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until reduced and thickened slightly but still very loose, about 15 minutes. Remove from heat.
  • Cheese Mixture: In a large bowl, whisk together ricotta, milk, eggs, 1 cup Parmigiano-Reggiano, 2 1/2 cups mozzarella, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Assembly: Spread 2 cups sauce evenly in a 9-by-13-inch baking dish, preferably ceramic or enameled cast iron. Arrange 3 lasagna noodles over sauce (space noodles evenly; they will expand as the lasagna cooks). Spread 2 cups cheese mixture over noodles; top with 3 more noodles. Repeat layering of vegetable and cheese mixtures between noodles twice more. Spread 2 cups sauce evenly over top layer of noodles. Sprinkle evenly with remaining 1 1/2 cups mozzarella and 1/4 cup Parmigiano-Reggiano. Loosely cover with parchment-lined foil and transfer to a rimmed baking sheet.
  • Bake until noodles are tender but still al dente (easily pierced with the tip of a knife), 40 to 45 minutes. Uncover; continue baking until bubbly and puffed slightly along edges and golden brown in places on top, 20 to 25 minutes more. (There may appear to be a lot of liquid in the dish. It will be absorbed as the lasagna cools.) Transfer dish to a wire rack and let cool slightly and set, about 20 minutes; cut into squares to serve.

1 md Eggplant sliced thinly
1 Egg or egg white
1 c Lowfat ricotta cheese
1/4 c Feta cheese
2 tb parmesan Shredded (optional)
16 oz Tomato sauce (no salt added)
Garlic basil, pepper

Steps:

  • Lightly salt sliced eggplant and set aside. In a bowl, mix spinach, ricotta, feta, egg and spices. Spray an 8x8 (preferable glass) pan with non-stick spray. Rinse eggplant and pat dry. Lay 3 or 4 slices of eggplant in the bottom of the pan (whatever fits). Put about 1 cup of spinach mixture on top and spread out to cover eggplant. Repeat layers, ending with spinach until eggplant and spinach are used up (I think about 3 layers total does it). Pour tomato sauce over top, and let it run down sides. Sprinkle with parmesan if using it, and bake at 375 for 30-40 minutes, until a knife cuts through easily, indicating that the eggplant is cooked. Let rest about 5 minutes before serving. 4 large or 6 small servings.

  • Preheat oven to 350°F / 180°C.In a skillet, heat olive oil and cook garlic and mushrooms about 3 minutes. Add spinach and continue cooking for 2 minutes. Set aside.Cut peppers in two, remove seeds and ribs. Lay peppers cut-side down on an oiled baking sheet. Put peppers right under broiler and cook until their skin begins to swell and turn black. 5 tablespoons olive oil
3/4 teaspoon salt
1/2 teaspoon black pepper
1 small onion, finely chopped
2 garlic cloves, minced
1/2 cup water
1/4 cup chopped fresh basil
For lasagne
2 pounds Asian or baby Italian eggplants (4 to 6), halved crosswise, then cut lengthwise into slices slightly less than 1/4 inch thick
3 tablespoons olive oil
1 large garlic clove, finely chopped
1 1/4 teaspoons salt
1/2 teaspoon black pepper
10 ounces baby spinach
1 pound ricotta (preferably fresh)
1 large egg yolk, lightly beaten
1/2 cup finely grated Parmigiano-Reggiano (1 ounce)
8 dried lasagne noodles (not no-boil; 8 ounces)

Steps:

  • Roast tomatoes for sauce:
  • Preheat oven to 450°F.
  • Toss tomatoes with 3 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper and arrange, cut sides up, in 1 layer in 2 oiled glass or ceramic shallow baking dishes. Roast tomatoes in upper and lower thirds of oven, switching position of dishes halfway through baking, until skins are wrinkled and beginning to brown, 35 to 40 minutes. Cool slightly in baking dishes on racks.
  • Roast eggplant for lasagne:
  • Toss eggplant slices with oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper and arrange in 1 layer on 2 oiled baking sheets. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking and turning slices over once, until tender, 12 to 14 minutes.
  • Reduce oven temperature to 350°F.
  • Finish tomato sauce:
  • When tomatoes are cool enough to handle, peel off skin and discard. Purée tomatoes with their juices in a blender, pulsing until almost smooth.
  • Cook onion and garlic in 2 tablespoons oil in a 3- to 4-quart heavy saucepan over moderate heat, stirring, until golden, about 10 minutes. Stir in tomato purée, water, 1/4 teaspoon salt, and 1/4 teaspoon pepper and simmer, partially covered, stirring occasionally, until slightly thickened and reduced to about 4 cups, about 15 minutes. Stir in basil.
  • Make filling and assemble lasagne:
  • While sauce is simmering, cook spinach in a 3- to 4-quart pot of boiling salted water, uncovered, 1 minute, then drain in a colander. When cool enough to handle, squeeze any excess water from spinach and coarsely chop. Stir together ricotta, yolk, spinach, parmesan, 3/4 teaspoon salt, and 1/4 teaspoon pepper until combined well.
  • Cook lasagne noodles in a 6- to 8-quart pot of boiling salted water , stirring occasionally, until tender. Drain noodles in a colander and rinse under cold running water.
  • Spoon 2 cups tomato sauce into a 13- by 9-inch glass baking dish (or other 3-quart shallow baking dish). Lay out 4 lasagne noodles on a work surface, then spread 1/3 cup filling evenly over each noodle and cover with eggplant slices in 1 layer. Roll up each and arrange spirals, seam sides down and without touching, over sauce in dish, then make 4 more rolls and arrange in dish. Brush noodles with water, then spoon some sauce down middle of rolls and cover dish tightly with foil.
  • Bake in middle of oven until heated through, about 20 minutes. Heat remaining tomato sauce and serve on the side.

24 ounces prepared spaghetti sauce, I use Bertolli Arrabbiata Sauce
14 ounces diced tomatoes, I use Muir Glen Fire Roasted
24 ounces cottage cheese, I use 2%
8 ounces no-boil lasagna noodles
16 ounces frozen eggplants, cutlets
4 eggs or 4 Egg Beaters egg substitute
2 -3 cups shredded mozzarella cheese
10 ounces frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Spray 13 x 9 pan with cooking spray.
  • In a bowl combine spaghetti sauce and undrained tomatoes.
  • In a separate bowl combine cottage cheese, mozzarella cheese, spinach and eggs.
  • Spread a light layer of sauce in bottom of 13 x 9 pan.
  • Top with layer of lasagna noodles, half of the spinach, egg mixture, 1 cup of tomato mixture and 1/2 of the eggplant.
  • Repeat layers.
  • Top with remaining sauce.
  • Cover pan with aluminum foil.
  • Bake for 30 minutes.
  • Uncover pan and bake for 15 minutes or until mixture is bubbling.
  • Let sit for 15 minutes before serving.

2016-03-18 The lasagna was very flavorful and the eggplant worked very well as a substitute "noodle." I would suggest peeling the lasagna if you don't want your kids asking about the "purple stuff" in the lasagna. Bonus: I was able to eat a decadent lasagna with a low-calorie count. I'm still not sure I will make eggplant a regular part of my diet but I definitely like this as yummy use for eggplant.
