GLAZED EGGNOG SPRITZ

Rum extract in the dough and drizzle adds a subtle flavor to melt-in-your-mouth cookies.

3/4 cup granulated sugar
1 cup butter or margarine, softened
2 teaspoons vanilla
2 teaspoons rum extract
1 egg
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon ground nutmeg
2 tablespoons butter or margarine, melted
1 cup powdered sugar
1 teaspoon rum extract
1 tablespoon water
1/2 teaspoon ground nutmeg, if desired

Steps:

  • Heat oven to 350°F (if using dark or nonstick cookie sheet, heat oven to 325°F). In large bowl, beat granulated sugar and 1 cup butter with electric mixer on medium speed until fluffy. Beat in vanilla, 2 teaspoons rum extract and the egg until smooth. Beat in flour and 1 teaspoon nutmeg.
  • Place 1/4 of the dough at a time in cookie press. On ungreased cookie sheet, form desired shapes with dough.
  • Bake 6 to 10 minutes until edges are lightly browned. Cool 1 minute; remove from cookie sheet to cooling rack.
  • In small bowl, stir all glaze ingredients except nutmeg with spoon until smooth and thin enough to drizzle. Pour mixture into small resealable food-storage plastic bag; cut off tiny corner of bag. Squeeze bag to drizzle glaze on cookies. Before glaze is set, sprinkle 1/2 teaspoon nutmeg over cookies.

1 (17 1/2 ounce) envelope betty crocker sugar cookie mix
1/2 cup butter, melted
1 egg
1/2 cup all-purpose flour
1 teaspoon rum extract
1/4 teaspoon ground nutmeg
1/2 cup powdered sugar
1 1/2 teaspoons milk
1/4 teaspoon rum extract

Steps:

  • Heat oven to 375°F
  • In large bowl, stir cookie mix, butter, egg, flour, 1 teaspoon extract and the nutmeg until soft dough forms.
  • Fit cookie press with desired template.
  • Fill cookie press with cookie dough; press cookies onto ungreased cookie sheets.
  • Bake 6 to 8 minutes or until set.
  • Cool 1 minute; remove from cookie sheet to wire rack.
  • Cool completely, about 20 minutes.
  • In small bowl, stir powdered sugar, milk and 1/4 teaspoon extract until desired consistency.
  • Drizzle over cookies.
  • Sprinkle cookies with colored sugar.

Food color, if desired
Currants, raisins, candies, colored sugar, finely chopped nuts, candied fruit or fruit peel, if desired

Steps:

  • Heat oven to 400°F. Beat butter and sugar in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, salt, egg, almond extract and a few drops of food color.
  • Place dough in cookie press. Form desired shapes on ungreased cookie sheet. Decorate with currants.
  • Bake 5 to 8 minutes or until set but not brown. Immediately remove from cookie sheet to wire rack. To decorate cookies after baking, use a drop of corn syrup to attach decorations to cookies.

1 cup butter, softened
2/3 cup sugar
1 egg
1 tablespoon vanilla
2 1/4 cups flour
1 teaspoon ground nutmeg
1 teaspoon rum extract
1 cup powdered sugar
1/4 cup butter, melted
2 -3 tablespoons white rum (or 1/4 teaspoon rum extract and 2 tbsp hot water)

Steps:

  • Combine butter, sugar, egg, vanilla and rum extract in large bowl. Beat at medium speed, scraping often until creamy. Reduce speed to low, add flour and nutmeg. Beat until well mixed.
  • Fill cookie press. Press dough 1 inch apart on to ungreased cookie sheets. Bake at 375 for 6-10 minutes or until edges are lightly browned.
  • Stir together the glaze ingredients. Add additional rum or rum extract/hot water to desired glazing consistency. You can microwave the glaze for a few seconds to make the glaze more fluidy. While still warm, brush the tops of cookies with glaze. Sprinkle with candies if desired.

I love making Spritz Cookies because they are super easy and once you get going you really can make a lot of them at once. Well, most recently I have started trying more flavored Spritz cookies. When I saw this one for Eggnog it was for sure to be on the list. I hope you enjoy.

EGGNOG SPRITZ COOKIES
1 c powdered sugar
1 c butter, softened
1 tsp rum extract
1 medium egg
2 1/3 c all-purpose flour
1/4 tsp freshly grated nutmeg
1/4 tsp salt
RUM GLAZE
2 Tbsp butter, melted
1 - 1/2 c powdered sugar
1 tsp spicy rum or rum extract
1 Tbsp eggnog
1/2 tsp freshly grated nutmeg

Steps:

  • 1. Heat oven to 400 F. In large bowl, beat powdered sugar, butter, rum extract and egg until light and fluffy. Beat in flour, nutmeg and salt until well blended.
  • 2. Fit cookie press with desired template. Fill cookie press; press dough onto ungreased cookie sheets.
  • 3. Bake 5 to 7 minutes or until edges are firm but not brown. Immediately remove from cookie sheets. Let cookies cool before you glaze them.
  • 4. For glaze: Stir all the glaze ingredients together until smooth and thin enough to drizzle. Drizzle on cookies. I usually use my cake decorator but you can put it in a plastic baggie and cut off a corner and squeeze it out or just drizzle with a knife all crazy like. Before glaze is set, sprinkle with nutmeg. Instead of grated nutmeg you can add colored sprinkles for the festive occasion.
