EASY HOMEMADE TAPIOCA PUDDING

Easy Homemade Tapioca Pudding image

Homemade Tapioca Pudding is a simple, creamy, delicious, and timeless dessert. And easier to make than you might think!

Provided by Amy

Categories     Dessert

Time 55m

Number Of Ingredients 7

1 cup water
1/2 cup small pearl tapioca (not instant)
2 1/2 cups whole milk
1/4 teaspoon kosher salt
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Place the water and tapioca pearls in a 1 1/2 quart pot. Let stand for 30 minutes until the pearls are plump and have absorbed the water.
  • Turn on the heat to medium-high. Pour in the milk and salt; stir while bringing to a bare simmer.
  • Reduce the heat to very low, add in the sugar and cook, uncovered, stirring frequently (so the tapioca doesn't stick to the bottom of the pan), until the tapioca pearls have plumped and thickened, about 5 minutes.
  • In a separate bowl, beat the eggs. Slowly whisk in about 1/2 cup of the hot tapioca (this equalizes the temperature between the two mixtures to avoid curdling.)
  • Pour the egg mixture into the pot with the rest of the tapioca; increase heat to medium and stir for several minutes until you get a thick pudding consistency that coats the back of a wooden spoon. (Do not let mixture boil.)
  • Take off the heat and cool for 15 minutes.
  • Stir in the vanilla.
  • Serve either warm or cold and enjoy!

  • In a small bowl, soak 1 cup small tapioca pearls in 2 ½ cups of milk. Stir, and place in the refrigerator for 3 hours.
  • After letting the tapioca soak, pour the tapioca and milk into a medium sauce pan. Add to the tapioca mixture: 1 ½ cups eggnog, ¼ cup sugar, salt, cinnamon, and nutmeg. Heat on medium heat, stirring frequently to keep milk from scalding. Once the tapioca mixture has almost reached a boil (do not boil), turn down the heat slightly, just to maintain a low simmer. Simmer for 10 to 15 minutes, stirring constantly to keep the milk from scalding. The tapioca should thicken a lot during this step.
  • Carefully taste-test tapioca to be sure pearls are soft and no longer chewy. If you need to cook it longer, cook for an additional 5 minutes and check again, repeating until done. If your tapioca is taking longer than the 20 minutes, turn the heat up a little, and continue stirring.
  • When the tapioca is done, remove from heat. Stir in 1 teaspoon of vanilla, and let cool for 15 minutes.

  • To a medium pot, add tapioca pearls, oat milk (or milk of choice), coconut milk, maple syrup (or sugar) and vanilla extract. Let the mixture soak for about one hour in the fridge. I like soaking to give the pearls a head-start absorbing moisture for more evenly cooked tapioca. If you skip soaking, just cook it a little longer.
  • Give the mixture a stir as some of the tapioca might have sunk to the bottom. Set the pot over a medium heat, bring contents to a boil and quickly turn it down to a lower setting. Simmer gently for about seven to eight minutes, stirring constantly for even cooking. What to look for: Use the recipe time as a guideline, making sure to rely mostly on visual queue for doneness. That is, when pearls are mostly translucent with a pin-dot of opaque remaining in the center. They will continue to cook through in the residual heat as the mixture cools so you don’t want take them too far before removing from heat. They will not necessarily all look equally cooked through, even with constant stirring, but that’s okay just look for this doneness in most of the pearls. Remove from heat, cover and let sit for five minutes.
  • Pour pudding into another vessel and let it cool to room temperature. Put into the fridge to chill rest of the way until cold, about an hour.
  • Meanwhile, place 1one cup of the diced mangoes in a small blender and puree until smooth (or use an immersion blender). Mix the puree with cooled tapioca mixture. If you like a thinner pudding, stir in a bit more oat milk or coconut milk.

CREAMY HOMEMADE EGGNOG RECIPE - BELLY FULL
2021-11-27 A lot of eggnog recipes either eliminate the egg yolks or incorporate them without cooking. Our version includes egg, which gives the eggnog a richer taste and thicker consistency, but we also temper them with the hot liquid (much like how we make our Tapioca Pudding and Rice Pudding.) This recipe calls for egg yolks, not the whole egg.
