EGGNOG BREAD WITH FRUIT
I was looking for a way to use up the last of my Christmas Egg Nog. The original called for 1/2 c candied cherries, 1/2 c raisins, and 1/2 c nuts, but I used figs and apricots instead. I also used a little rum (just make sure rum, brandy, or extract, and nog together equals 1 cup). It is sort of like a pound cake--without the pound! Mix a little eggnog with some powdered sugar and drizzle over it for a more elegant presentation and flavor.

CHRISTMAS EGGNOG BREAD
This came from a friend. I made this as written and it turns out beautifully every time. I always include a loaf of this bread in my Christmas crates that we make up for my family. I have included 3 variations I came up with. We love this bread toasted. Yes...toasted. What can possibly be wrong about toasted cake? Try it...you just might like it. Try it for breakfast instead of regular toast. This makes a large loaf and freezes beautifully.

- First, make your challah dough. Prepare the yeast in a large mixing bowl for a stand mixer by whisking it with warm milk and 1 teaspoon sugar. Let yeast stand until it foams and puffs up, about 10 minutes. If it doesn’t get foamy, your yeast is bad or the liquid was too warm or cool. Try again!
- Using the whisk attachment for the stand mixer, mix in the remaining sugar, eggnog, eggs, oil, honey and vanilla into the yeast mixture. (You can just use a whisk of you’re doing this by hand too.) Then add cinnamon and all spice and combine. Gradually add 3 cups flour and salt either with a hook attachment using an electric mixer or a spoon and your hands until combined. Knead for about 5 minutes, adding more flour as needed, and form into a ball. If it's too sticky, add a bit more flour. You may not need it all. Remove from bowl, and knead for 5 more minutes by and, kneading in dried fruit and nuts. Dough should be soft, smooth and slightly tacky.
- Place the dough in a bowl greased with oil and cover. Let dough ferment in a warm place until it has doubled in size, about 2 hours. I put mine on top of an oven heated to 200 degrees.

- Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first.
- Over the years, I’ve made this bread with two different machines. For the Zojirushi Virtuoso breadmaker, I used the medium crust setting. For the Zojirushi BBCCX20 Bread Machine, I used the light crust setting.
- Make sure you check on the dough after five or ten minutes of kneading. Pop open the top of the bread machine and look at the dough. It should be a round ball.
- If it’s too dry add liquid a teaspoon at a time until the dough balls up. If it looks too wet, add flour a tablespoon at a time until it looks as expected.
