EGGNOG BISCUITS
"I was making biscuits during the holidays one year and substituted eggnog for milk," relates Angie Jones from West Point, Utah. "These yummy biscuits were the outcome." Whether you bake some for Christmas dinner or a weekday meal, the clever creations are sure to become a seasonal favorite.

Steps:
- In a small bowl, combine biscuit mix and eggnog just until moistened. Turn on a lightly floured surface; knead 8-10 times. Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. , Place 2 in. apart on a greased baking sheet. Sprinkle with nutmeg. Bake at 450° for 8-10 minutes or until lightly browned. Serve warm.

EGGNOG-BISQUICK BISCUITS BY CIN
This drop biscuit is buttery, delicate and so yummy. The eggnog flavor really shines and reminds me of the holidays. We love Cin's baking method with the butter. The butter on top and bottom of the biscuit keeps it from drying out. These are delicious plain or top with your favorite jelly or jam. Quite the holiday treat.

Steps:
- 1. Pre-heat your oven to 400°F. Melt 1/2 c butter. Pour half of the melted butter into a baking dish and set aside. Reserve rest for later.
- 2. In a small mixing bowl place 2 c Bisquick. Now make a well in the middle of the Bisquick and pour in your eggnog a bit at a time, stirring together, to get a wet sticky batter.
- 3. You don't want it dry, but not too wet either (use as much as needed).
- 4. Drop biscuit dough by spoonfuls into the baking dish, with the melted butter already in it. Press down a bit with the back of a buttery spoon (not too flat though).
- 5. Now pour the reserved melted butter over the biscuits (being sure each biscuit get some). Bake for 12-to-14 minutes, until golden brown.
- 6. I made 6 nice size biscuits.
EGGNOG PANCAKES
Adding a bit of leftover eggnog to Original Bisquick mix gives your morning pancakes a seasonal flair, and the warm stewed apple topping complements them perfectly.

- In 3-quart saucepan, heat water, brown sugar and cinnamon over medium-high heat. Stir until sugar is dissolved and mixture begins to boil. Reduce heat, and add apples. Cook uncovered about 20 minutes or until apples are softened.
- Stir together pancake ingredients until blended. Pour slightly less than 1/4 cupfuls batter onto hot greased griddle. Cook until edges are dry. Turn; cook until golden.

LIGHT CINNAMON VANILLA BREAKFAST BISCUITS (EGGLESS)
I made this adapting the recipe for biscuits on the Bisquick box, and really enjoyed the results. This is not a particularly sweet biscuit recipe, which makes it a wonderful accompaniment for your morning cuppa! You can experiment by adding chocolate chips in the batter for added sweetness, or increase the amount of sugar. This tastes best served warm with a pat of butter or maple syrup.

- Preheat oven to 450°F (230°C).
- Combine Bisquick, sugar and cinnamon in a medium bowl.
- Stir in milk and vanilla and mix well.
- Spray a baking sheet lightly with cooking spray (a non-stick baking sheet works best; you don't need cooking spray then) and drop the batter onto it by heaping teaspoons, 1 inch apart.
- Bake for 12 to 15 minutes, or until golden brown.
- Serve warm with a pat of butter or maple syrup.

- Preheat oven to 375°. Beat butter and sugar until blended. Beat in eggs, 1 at a time. Beat in eggnog and vanilla. In another bowl, whisk together flour, baking powder, nutmeg and salt; gradually beat into butter mixture (dough will be sticky)., Divide dough in half. On a greased baking sheet, shape each portion into a 12x3-in. rectangle. Bake until a toothpick inserted in center comes out clean, 16-19 minutes. Reduce oven setting to 300°. Remove rectangles from pans to wire racks; cool 10 minutes. , Place rectangles on a cutting board. Using a serrated knife, trim ends of rectangles and cut diagonally into 1/2-in. slices. Return to baking sheets, cut side down. Bake until firm, about 10 minutes per side. Remove from pans to wire racks; cool completely. , Mix glaze ingredients. Drizzle over biscotti with a spoon.

- Preheat the oven to 450 degrees F (230 degrees C). Grease a circular baking pan or line with parchment paper.
- Combine baking mix, milk, softened butter, and sugar in a bowl. Mix until a dough forms.
- Transfer dough to a surface floured with baking mix. Knead dough 10 times. Roll dough out using a lightly floured rolling pin until it is 1/4-inch thick.
- Combine sugar, melted butter, and cinnamon in a bowl and mix until dark brown. Spoon filling onto rolled dough, spreading evenly to all edges. Roll dough inward; cut ends off and cut spiral into 12 pieces.
- Place rolls into the prepared circular baking pan so that rolls touch.
- Bake in the preheated oven until golden, 11 to 15 minutes. Let cool for 1 minute before transferring to a plate to cool completely.
- While rolls are cooling, mix confectioners' sugar and milk together in a bowl until smooth. Spoon glaze over cooled cinnamon rolls.

- In a large bowl, whisk together both kinds of flour, the baking powder, sugar, salt, cinnamon and nutmeg. Using a pastry blender, cut the butter into the flour. Continue until it resembles even sized crumbs. Add in the eggnog and mix until the dough just comes together.
- Dump the dough onto a well floured surface. Knead with well floured hands and then pat into a rectangle that is about 6 by 10 inches in size (about 1 inch thick). Sprinkle the cinnamon chips over the dough and then lightly press them into the dough using your hands.
- Fold the dough as if you were folding a letter (so fold one third over the center third and then the remaining third folds over the top). Use a spatula to lift the dough and then flour the work surface again. Pat the dough into another 6 by 10 inch rectangle and then repeat the folding process. Then repeat this entire process one more time (lift dough, flour surface, pat into rectangle and fold). Dust the work surface one more time with flour and then pat the dough into a final 6 by 10 inch rectangle.
