1 cup white sugar
2 tablespoons shortening
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon salt
1 cup raisins
1 ½ cups water
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 8 or 9 inch square cake pan.
  • In a saucepan over medium high heat combine; the sugar, shortening, ground cinnamon, ground nutmeg, ground allspice, salt, raisins, and water bring to a boil and continue boiling for 5 minutes. Remove from heat and let cool.
  • Sift the flour, baking powder and baking soda together. Add the flour mixture to the cooled raisin mixture. Stir until just combined. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes.

2 teaspoons baking powder
1 teaspoon baking soda
1 (14 ounce) can sweetened condensed milk
1 cup orange juice
2 teaspoons vanilla extract
1 cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • Sift the flour, baking powder and baking soda together in a large bowl. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
  • Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

2 3/4 cups white flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups white sugar
1/2 cup corn syrup
1/2 cup corn oil
3/4 cup water
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • Combine dry ingredients.
  • Mix well& ensure there are no lumps.
  • Add the wet ingredients in order listed.
  • Stir until well mixed.
  • The mixture should be thick& heavy.
  • Spoon mixture into 2 well oiled& floured 9" baking pans.
  • Smooth the tops with a spatula as much as possible.
  • Bake for up to 30 minutes.
  • Check for doneness after 20 minutes& if not done, cook for another 5 minutes& check again.
  • Remove from oven& cool on wire racks for 10 minutes.
  • Carefully turn out onto a wire rack to cool completely.
  • Layer with jam& a lemon icing.
  • NOTE: It is essential to oil& flour the pans well as the corn syrup does make the batter very sticky.
  • Unlike most sponge cakes, this one does not sag in the middle& while quite light, is still good& hearty.

2 cups flour
1 cup sugar
1/4 cup vegetable oil
1 cup buttermilk (see note)
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon almond extract
1/3 cup sliced almonds
1 tablespoon icing sugar

Steps:

  • Place all ingredients except slice almonds and icing sugar in a bowl.
  • Note: If you don't have buttermilk, put 2 teaspoons of vinegar in the measuring cup and fill to one cup with regular milk.
  • Mix at low speed until all ingredients are moistened.
  • Scrape down bowl.
  • Turn mixer to high and beat for 3 minutes.
  • Pour into a greased and floured 9" by 13" pan and sprinkle with the almonds.
  • Bake at 350F for 30-35 minutes.
  • Sprinkle with the icing sugar. (I use my tea strainer to shake the sugar over the cake. Just put the sugar in the strainer and tap it.).

For Cake:
All Purpose Flour / Maida - 2 1/4 cup / 270 grams
Sugar - 1 cup / 200 grams
Baking Soda / Cooking Soda - 3/4 tsp
Baking Powder - 2 tsp
Yogurt / Curd - 11/2 cup / 360 ml
Oil - 3/4 cup / 180 ml
Vanilla Essence - 2 tsp
Milk around 1/2 cup
For Filling & Topping:
White Chocolate Chips - 1/2 cup
Whipping Cream - 2 cups
Icing Sugar - 2 tblspn
Vanilla Essence - 1 tsp
White Chocolate Shards for decoration
Cherries as needed
For Sugar Water:
Sugar - 1/4 cup
Water - 1 cup
Vanilla Essence - 1 tsp

Steps:

  • Oil a square cake pan, dust it with flour and set aside. Preheat oven to 180 degree C.
  • In a large bowl, take curd, oil, sugar, vanilla and mix well. Keep mixing till the sugar is melted. Add in baking soda and baking powder and mix well.
  • Now add in the flour mix and fold gently.
  • If you find the batter to be too thick, add a splash of milk to thin it out.
  • Now transfer this mix to the pan and bake for 1 hour and 15 mins till a toothpick inserted comes out clean.
  • Now remove the tray from oven, let it cool a bit.
  • Invert to a cooling rack and let it cool completely, Now slice this in to three equal parts and set aside.
  • Whip cream with sugar and vanilla and whip till stiff peaks form.
  • Now take the white chocolate cream, take white chocolate in a bowl and melt it down in microwave or double boiler, now add in 2 to 3 scoops of whipped cream and fold gently. Set aside.
  • Now make sugar water by mixing sugar water and vanilla and mix well. Brush the cake all over the cake so it gets moisten.
  • Now place a cake slice on a plate, spread some white chocolate cream and top with cherries. Now place another cake and spread some more white chocolate cream and cherries. Now top the final cake and cover the entire cake with whipped cream.
  • Decorate the cake and top with white chocolate and cherries.
  • Chill the cake for 2 to 3 hours and serve.

2 cups white sugar
2/3 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
2/3 cup oil (any neutral flavored oil )
2 teaspoon white vinegar (can use apple cider vinegar)
2 teaspoon vanilla extract
2 cups warm water
1 cup chocolate frosting

Steps:

  • Preheat the oven to 180C/350F. Grease two 8-inch cake pans and set aside.
  • In a large mixing bowl, add the dry ingredients and mix well. Add the oil, vinegar, vanilla extract, and warm water, and mix until a smooth batter remains.
  • Transfer the batter into the greased cake pans and bake for 17-20 minutes, or until a skewer comes out mostly clean.
  • Remove the cakes from the oven and let them cool completely. Once cool, cut down the center of each cake to leave four thin cake layers. Place the first layer onto a flat surface and spread with frosting. Repeat the process until you are left with a four layer cake.
