3-Ingredient Coconut Tapioca Pudding (Egg free) image

This is a super easy egg-free tapioca pudding that involves just three ingredients-coconut cream, tapioca pearls and a little raw sugar (or honey). You can also add a pinch of sea salt to give the flavor some more depth.

13.6 oz lite coconut cream
2 tbsp instant tapioca pearls
2 tsp raw sugar (add more or less to taste, you could also use honey)
Pinch sea salt (optional)
Topping ideas: pineapple, mango, nuts, chocolate shavings, caramel syrup, lemon curd

Steps:

  • In a small pot, bring coconut cream to a boil.
  • Stir in tapioca pearls, sugar and salt if desired.
  • Bring to a boil again, then turn off heat. Let stand for 10 minutes, stirring occasionally.
  • Serve warm or chilled, with or without toppings.

A classic tapioca pudding recipe that requires a lot of attention, but it's worth it. Tapioca pudding is a great comfort food and can be served warm or cold.

3 cups whole milk
½ cup quick-cooking tapioca
½ cup white sugar
¼ teaspoon salt
2 eggs, beaten
½ teaspoon vanilla extract

Steps:

  • Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
  • Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

3 tablespoons minute tapioca, dry
2 3/4 cups milk, 1%
1/3 cup white sugar
2 tablespoons cornstarch
2 tablespoons water
1 teaspoon pure vanilla extract

Steps:

  • Combine tapioca, milk & sugar in a medium/large saucepan and let sit for 5 minutes.
  • Combine cornstarch & water in a small bowl.
  • Bring to a slow boil over medium high heat, stirring constantly.
  • Once bubbling, add cornstarch mixture and continue boiling for 1 minute.
  • Remove from heat and add vanilla.
  • Stir & allow to cool.
  • Makes 6 1/2 cup servings.

  • To cook pudding in Instant Pot: Add 2 cups of water and 2 cups of milk in Instant Pot. Add tapioca pearls, sugar, salt and close lid of pot. Seal the vent. Cook on Manual - High Pressure for 5 minutes. Once timer is up. Let pressure natural release in 12-15 minutes. Open lid, add condensed milk and vanilla. Mix well. Set aside covered 5 minutes (Instant Pot switched off). (See Note 3)
  • To cook pudding on Stove Top: Add 2 cups of water and 2 cups of milk in a heavy bottom deep sauce pan. Bring to boil. Add tapioca pearls, salt, and sugar. Simmer for 15-18 minutes or until pearls are translucent (See Note 2) and milk has reduced and has thick consistency. Stir 2-3 times in between so that pearls don't catch at the bottom. Now add condensed milk, vanilla and mix well. Simmer for 5 more minutes. Take off heat. (See Note 3)
  • Garnish with chopped pistachios, or fresh strawberries, or strawberry sauce (See Note 5 for recipe). Serve chilled or at room temperature.

  • Transfer soaked tapioca pearls mixture (pearls and any unabsorbed liquid) into a saucepan and add coconut milk, sweetener, vanilla, and salt. Bring contents to a boil on medium heat, stirring occasionally. Reduce heat and simmer for 20 minutes continuing to stir occasionally.
