3 INGREDIENT HEALTHY OAT BREAD
This healthy oat bread is made with just 3 easy ingredients. It doesn't contain any yeast, wheat flour, oil, sugar, or eggs.

- Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
- In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
- Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
- Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.
- Bake bread for about 40-45 minutes. The bread should be lightly browned on top and when you press on the surface it should bounce back and not sink in. Let bread cool before cutting and serving. Bread can be toasted or eaten as is with your favorite spread.

EGG-FREE OATMEAL WHOLE WHEAT QUICK BREAD
This recipe fits the bill in my search for egg-free quick breads. It tastes great fresh from the oven. You can make this vegan by using maple syrup instead of honey, and soy milk. It is not a "sweet" bread, so if you want to make it sweeter, increase the amount of honey.

- Preheat oven to 450°F (230°C).
- Lightly grease and dust a 9x5x3-inch loaf tin.
- Grind oats in a food processor or blender to form a meal/flour.
- In a large bowl, combine oatmeal, whole-wheat flour, baking powder and salt.
- In a separate bowl, vigorously whisk together honey and vegetable oil to form an emulsion; then stir in the milk and mix well until dissolved.
- Add wet ingredients to the dry ingredients and mix well to form a moist, viscous batter.
- Pour/spoon batter into prepared loaf tin and bake in preheated oven for 30-40 minutes or until the top starts to brown slightly.
- Remove from loaf tin, cool completely on a wire rack and cut into slices (20 slices is the original yield).
- Serve with honey, butter, syrup, or applesauce; or use in sandwiches.

WHEATLESS ONION QUICK BREAD

- Preheat oven to 350F and grease and flour a 9x5 loaf pan.
- Heat 1 tablespoon oil in a meduim skillet over low heat.
- Add the onions and saute until translucent.
- Grind the oats in a blender or food processor until fine, like flour.
- Sift together the oat flour, rice flour, rye flour, baking powder, baking soda, and salt.
- In a large bowl, beat together the 1/4 cup of the oil, eggs, water, and vinegar.
- Stir the flour mixture into the liquid mixture until just mixed.
- Fold in the onions.
- Pour the batter into the pan for 50-55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let bread cool for about 5 minutes in the pan and remove to cool on a rack.
- Let bread cool on the rack for at least 15 minutes before slicing.

- Preheat oven to 450 degrees F (230 degrees C).
- Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball and place on a lightly oiled baking sheet.
- Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

OATMEAL WHOLE WHEAT QUICK BREAD
I found this on AllRecipes, posted by Zoe. She says "There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!" I have personally made this a number of times as a quick accompaniment to warm soup. The original recipe calls for an oven temp of 450, but I find this gets too brown if I go that high. Also, I have made this as both a rustic round loaf and in a loaf pan. When I want to make a round loaf I put it on a cookie sheet. It does flatten a bit while cooking, though, so if I want slices instead of wedges I will put it in a loaf pan and tent w/ foil to avoid burning the crust. Yes, the dough will be more like a batter than a traditional bread dough, but I promise it will come out as bread!

- Add the yeast and honey to 1 cup warm water, mix and allow to prove. In a bowl, mix the oats and oil and then add the yeast mixture. Stir and keep aside for about 5 minutes. Now add the flours, wheat germ and salt and knead into a soft mass. The dough will be a bit sticky so use some more flour while kneading. Cover and allow to double in size.
- Now, punch down the dough and knead till smooth and shape into a loaf. Allow to rise till almost double.
- Bake at 190C (375F) for about 40 minutes. Cool on a rack for about 15 minutes at least before slicing. This bread is slightly dense but soft and crumbly in texture
