2 large ripe tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
½ cup dry bread crumbs
⅔ cup shredded Cheddar cheese
¼ pound smoked sausage, cut into 1 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.
  • Bake in preheated oven for 15 minutes.

1 tomato
2 tablespoons sausage, cooked
1 egg
shredded cheese, to taste
olive oil, to taste
black pepper, to taste
fresh basil, to garnish

Steps:

  • Cut off the top of the tomato and remove the insides. Fill with cooked sausage, crack in an egg and added shredded cheese.
  • Drizzle some olive oil over the top. Bake in oven at 425°F (218°C) for 15 - 20 minutes, depending on how well done you like your egg.
  • Season with some pepper and garnish with basil.
  • Enjoy!

8 medium tomatoes
Salt
Ground black pepper
1 cup rough bread crumbs from a rustic loaf
2 garlic cloves, smashed to a paste with a little salt
2 tablespoons chopped parsley
2 tablespoons chopped basil
1 teaspoon chopped thyme
1 ounce of grated Parmesan or pecorino cheese
Pinch of crushed red pepper, optional

Steps:

  • Heat oven to 375 degrees. With a paring knife, core tomatoes. Use a teaspoon to scoop out the center of each tomato. Season tomatoes with salt and pepper and place in a baking dish.
  • Mix together bread crumbs, garlic, parsley, basil, thyme, cheese and red pepper, if using. Put 2 to 3 tablespoons of bread-crumb mixture in the hollow of each tomato.
  • Bake 30 minutes, until bread-crumb mixture is nicely browned and tomatoes are soft. Let cool slightly before serving.

4 large beefsteak tomatoes
coarse salt
ground pepper
1/2 cup corn kernel
2 teaspoons chives, snipped
4 eggs
1/4 cup parmesan cheese
red pepper flakes

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Line a 9 inch baking dish with parchment paper.
  • With a serrated knife, cut off the top 1/2 inch from each tomato.
  • With a spoon, gently remove the seed and inner membrane being careful not to break through flesh of tomato.
  • Place tomato in baking dish and season with salt and pepper.
  • Divide corn and chives among tomatoes.
  • Break an egg into each tomato and top with cheese and red pepper flakes.
  • Bake until egg is set, about 45 to 50 minutes.
  • Serve.

4 beefsteak tomatoes
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1 cup baby Yukon Gold potatoes, cut into 1/2-inch cubes
6 ounces pork chorizo, casing removed, sausage crumbled
4 large eggs
Queso fresco, for garnish
Chopped fresh cilantro, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice off the top part of the tomatoes horizontally and scoop out the pulp and seeds. Reserve for another use. Season the tomatoes heavily with salt and pepper.
  • Heat the oil in a medium saute pan over medium-high heat. Add the potatoes and cook until crisp, about 6 minutes. Transfer the potatoes to a plate lined with a paper towel to drain off excess oil. Add the chorizo to the pan and cook for about 3 minutes. Transfer the potatoes back to the pan with the chorizo. Keep cooking until the chorizo is crisp, about 3 more minutes. Season to taste with salt and pepper. Remove from heat and drain off excess fat on a paper towel.
  • Divide the chorizo mixture evenly between the scooped out tomatoes. Crack one egg onto each of the tomatoes. Place the tomatoes in a baking dish and bake for about 25 minutes or until the egg whites are fully cooked. Crumble queso fresco on top and sprinkle with cilantro. Serve immediately.

Romaine- and Egg-Stuffed Tomatoes with Pancetta image

6 oz sliced pancetta (Italian unsmoked cured bacon), chopped
1/2 cup plus 2 tablespoons extra-virgin olive oil
1 large head romaine (about 1 1/2 lb)
1 large garlic clove
1/4 cup loosely packed fresh flat-leaf parsley leaves
1/2 teaspoon salt
3/8 teaspoon black pepper
1 oz finely grated Parmigiano-Reggiano (1/2 cup), plus additional for serving
6 large tomatoes (about 3 inches in diameter)
6 large eggs at room temperature

Steps:

  • Cook pancetta in 2 tablespoons oil in a 10- to 12-inch heavy skillet over moderate heat, stirring occasionally, until golden and crisp, 4 to 7 minutes. Transfer with a slotted spoon to paper towels to drain, reserving fat in skillet.
  • Strip romaine leaves from stems, reserving both separately, then tear leaves into roughly 2-inch pieces. Measure 4 loosely packed cups of leaves and reserve remainder. With motor running, add garlic to food processor to finely chop. Turn off and add the 4 cups romaine leaves along with the parsley, 1/4 teaspoon salt, 1/4 teaspoon pepper, and cheese, then pulse until finely chopped. With motor running, add remaining cup oil in a slow stream, blending until incorporated.
  • Put oven rack in upper third of oven and preheat oven to 400°F.
  • Cut off about 1/8 inch from top of each tomato with a sharp knife. Gently scrape out pulp and seeds with a spoon and discard them. Put tomatoes, cut sides up, in a 9-inch glass or ceramic dish and spoon 1 tablespoon romaine-parsley pesto into each tomato (you will have extra pesto). Crack 1 egg into each tomato and season with salt and pepper. Bake eggs in tomatoes until whites are set and yolks are still runny, 18 to 22 minutes.
  • While eggs bake, heat fat in skillet over moderate heat until hot but not smoking, then cook remaining torn romaine leaves and stems, 1/4 teaspoon salt, and 1/8 teaspoon black pepper, turning and stirring with tongs, until leaves are wilted and stems are crisp-tender, about 3 minutes. Stir in pancetta and divide mixture among 6 plates. Top each serving with a tomato and sprinkle with additional cheese.

1 cup uncooked instant rice
4 large firm tomatoes
1 tablespoon finely chopped green bell pepper
1 tablespoon finely chopped onion
1 tablespoon finely minced fresh parsley
½ teaspoon salt
1 clove garlic, finely chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a small saucepan over high heat, bring water to a boil. Stir in rice; cover and remove from heat. Let stand covered 5 minutes or until water is absorbed. Fluff with fork.
  • Slice off the top of each tomato and scoop out the pulp, leaving a 1/4 inch thick shell. Reserve 3 tablespoons of pulp, chopped. Invert the tomatoes to drain.
  • In a medium bowl combine rice, tomato pulp, green pepper, onion, parsley, salt, garlic and olive oil; mix well. Spoon filling into tomato shells.
  • Bake in preheated oven for 20 to 25 minutes.

1 cup garlic/cheese croutons, crushed
2 tablespoons grated Parmesan cheese
