Tangy Egg Salad Spread image

Serve this tangy blend of eggs and spices over crackers, on bread or with veggies. Dollop with sour cream and cottage cheese.

8 eggs
¼ cup yellow mustard
½ cup mayonnaise
½ teaspoon chopped fresh basil
½ teaspoon chopped fresh parsley
¼ teaspoon garlic salt
½ teaspoon salt
¼ teaspoon onion powder
½ teaspoon hot pepper sauce
½ cup finely chopped celery

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and finely chop.
  • In a medium bowl, mix yellow mustard, mayonnaise, basil, parsley, garlic salt, salt, onion powder and hot pepper sauce. Fold in eggs and celery. Chill in the refrigerator until serving.

Steps:

  • Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard and green onion. Season with salt, pepper and paprika. Stir and serve on your favorite bread or crackers.

3 ounces cream cheese, softened
1/2 teaspoon seasoned salt
Pinch white pepper
2 teaspoons chopped fresh dill, optional

  • In a blender, combine first five ingredients; process until smooth. Add egg quarters, one at a time, blending well after each addition. Add cream cheese, salt and pepper; process until creamy. Stir in dill if desired.

My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled
3/4 cup Miracle Whip (more or less to taste) or 3/4 cup mayonnaise (more or less to taste)
2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
salt and pepper

Steps:

  • Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.
