Steps:
- In medium bowl, mix flour and salt. Make a well in center of flour mixture. Add egg yolks, whole egg and water to well; mix thoroughly. (If dough is too dry, mix in enough water to make dough easy to handle. If dough is too sticky, mix in enough flour to make dough easy to handle.)
- Divide dough into 4 equal parts. On lightly floured surface, roll one-fourth of dough at a time into rectangle, 1/16 to 1/8 inch thick (keep remaining dough covered). Loosely fold rectangle lengthwise into thirds. Cut crosswise into 1/8-inch strips for narrow noodles, 1/4-inch strips for medium noodles or 1/2-inch strips for wide noodles. Unfold and gently shake out strips. Hang pasta on pasta drying rack or arrange in single layer on lightly floured towels; let stand 30 minutes or until dry. (If using pasta machine, pass dough through machine until 1/16 inch thick.)
- Break strips into smaller pieces. In 6- to 8-quart saucepan, heat 4 quarts water (salted if desired) to boiling; add pasta. Boil uncovered 5 to 7 minutes, stirring occasionally, until firm but tender. Begin testing for doneness when pasta rises to surface of water. Drain pasta.

SKILLET-BAKED EGGS AND ASPARAGUS
Asparagus and eggs have an affinity for each other. The voluptuous yolk softens and smoothes the grassy sharpness of the vegetable, while the asparagus brightens up the dull richness of the egg. The pair's most classic expression is asparagus hollandaise, but that is too fussy and time-consuming a preparation for a regular home-cooked breakfast. This dish combines the flavors in a time- and cook-friendly way.

PAPPARDELLE (EGG PASTA DOUGH)

Steps:
- In a large bowl, combine the 00 and semolina flours and salt and form a well. Add the egg and yolks to the center of the well. Using a fork, slowly start to incorporate the flour into the eggs to form a rough dough. You may add a splash of water if the dough is too dry or a dusting of flour if it is too wet.
- Lightly flour a smooth work surface and pour the dough onto the flour. Knead the dough until it springs back when you press a finger into it, 10 to 12 minutes. Flatten the dough into an even square. Wrap the dough well in plastic wrap and allow to rest for 1 hour at room temperature.
- Cut the dough into 3 pieces. Set up a pasta roller according to the manufacturer's directions and set it at the widest setting. Dust one section of the dough with semolina flour and press firmly to flatten the dough to 1/4 inch. Roll the dough through the machine on the widest setting. Fold the pasta dough in thirds and dust the outside with flour. Send it through the widest setting again. Reduce the setting to the next setting. Send the dough through the machine. Fold it in thirds once again and send through the setting one more time. Continue sending the dough through the machine, reducing the setting each time, until the desired thickness is reached, about 1/8 inch. Lay the sheet out on the counter and dust with flour. Use a knife or pizza cutter to cut strips 1 inch by 10 inches. Dust the strips with more flour. Continue with the remaining dough.

- Creamy Chicken and Mushrooms With Egg Noodles. A total winner, that's this one-pan weeknight dinner starring egg noodles. It uses a large, straight-sided skillet to sear the chicken breasts and cook the mushrooms and shallots.
- Tagliatelle With Herbs and Buttery Egg Sauce. If you want a sophisticated egg noodle dish, you can't go wrong with this four-ingredient dinner. The silky sauce is made from butter, eggs, and fresh herbs (plus salt and pepper).
- Chicken Noodle Soup. As for soup, our test kitchen's favorite chicken noodle soup deliciously proves that putting egg noodles in chicken soup is a smart move.
- Coq au Vin. Another place where egg noodles shine: any dish that has a meaty sauce, which these noodles so wonderfully soak up. Coq au vin is one; its tomato- and wine-infused broth pretty much requires a starch to accompany it, and egg noodles are more than up to the job.
- Chicken-and-Broccolini Mac and Cheese. Egg noodles are the ideal combination of noodle and cut pasta, and we love baking them into casseroles. In a mac and cheese like this, wide egg noodles stand up nicely to a mustard and cream cheese sauce, as well as shredded cheddar.
