Steps:
- Preheat oven at 180 C / 350 F. Grease and dust a loaf tin.
- Peel, core and finely chop the apples. For 1.5 cups chopped apple I used 2 tablespoons sugar. Mix sugar and cinnamon powder well with apples. Set aside.
- Add olive oil, sugar, curd and vanilla in a bowl. Mix well until combined.
- Add flour, baking powder and salt into the wet ingredients. Mix and whisk well.
- Fold in the prepared apple sugar mixture and mix gently.
- Pour into the prepared loaf tin and bake in the preheated oven for 40-50 minutes.
- Cool in the loaf tin for 5 minutes. Invert and cool in a wire rack for 30 minutes. Slice and serve.

- In a large saucepan, bring the first eight ingredients to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat; cool to room temperature., In a large bowl, combine flour and baking soda; fold in the apple mixture. Transfer to a 10-in. fluted tube pan coated with cooking spray. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

- Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
- In another bowl, beat together the liquid, oil, and the eggs. Set this aside
- Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.
- Slowly pour half of the contents from the wet bowl into the dry ingredient mixing bowl.Mix gently and then add the remainder.
- Fold in the contents from the first bowl (apples etc) into the mixing bowl by hand. Bake this for an hour or until a toothpick comes out clean.
