1 red bell pepper deseeded and chopped
90 g (1.5 cups) spinach sliced
75 g (2.7 oz) brie cheese chopped ((or goats cheese))
Salt to taste

Steps:

  • Preheat oven to fan assisted 160C / 180C / 350F /gas 4. And oil a 12-hole muffin tray.
  • Beat together the milk and eggs.
  • Then mix in the rest of the ingredients.
  • Divide the egg mix equally in the muffin cups and bake for 18-20 mins or until set.
  • Let egg cups cool for 5 mins then remove from tray and eat warm or allow to cool completely and eat cold.

1 tablespoon heavy whipping cream
1 ¼ cups shredded Colby-Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Cook and stir bacon in a skillet over medium-high heat until crisp, about 10 minutes. Transfer bacon to a bowl, reserving bacon grease in the skillet.
  • Combine spinach, mushrooms, green bell pepper, onion, salt, and ground black pepper to taste in the skillet with bacon grease; cook and stir until softened, about 5 minutes. Transfer vegetable mixture to a bowl and place in the freezer to cool, about 5 minutes.
