BISCUITS & GRAVY BREAKFAST CASSEROLE
If you are like me and love a hearty breakfast of fluffy buttermilk biscuits and a side of scrambled eggs all smothered with sausage gravy, then this recipe is for you. I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

Steps:
- Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
- Brown the sausage and drain. Scatter the browned sausage over the biscuit pieces, then top with shredded cheese.
- Whisk the eggs and milk with a pinch of salt and pepper, then pour over the pan.
- Make gravy according to instructions on package and pour over the pan. Bake for 30 - 45 minutes, depending on how hot your oven runs.
- Cut and serve. It's delicious warm right out of the oven!

- Cut each biscuit into 8 pieces. Set aside.
- In a bowl, mix the eggs, milk, pepper, and salt. Set aside.
- For the gravy: melt the butter in a saucepan, over medium heat. Stir in flour, salt, and pepper, and slowly add the 2 cups of milk.
- Increase to medium-high, bring to a simmer, stirring until gravy is thickened.
- In a greased 9x13 (22x33 cm) glass baking dish, layer the biscuits, sausage, cheese, egg mixture, and gravy.
- Bake at 350°F (180°C) for 35-45 min, until the eggs on the bottom are cooked.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 12-inch nonstick skillet, cook sausage 8 to 10 minutes over medium heat, stirring occasionally, until browned and thoroughly cooked. Using slotted spoon, transfer sausage to baking dish.
- Add butter to drippings in skillet; melt over medium heat. Add flour, salt and pepper; cook 1 to 2 minutes or until thickened and beginning to brown. Stir in milk; heat to simmering, stirring frequently. Cook and stir 1 to 3 minutes or until thickened. Pour gravy over sausage in dish.
- Separate dough into 8 biscuits. Cut each biscuit into fourths. Top sausage mixture with biscuit pieces.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Line the bottom of the prepared baking dish with biscuits.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Scatter sausage over biscuit layer and top with 1 cup Cheddar cheese.
- Whisk eggs, milk, salt, and pepper together in a bowl and pour over cheese layer.
- Mix water and gravy mix together in a saucepan; bring to a boil. Reduce heat and simmer until gravy is thickened, 1 to 2 minutes, adding more water for a thinner gravy. Pour gravy over egg layer. Sprinkle remaining 1/2 cup Cheddar cheese over casserole.

- Preheat oven to 350°F. Butter a 9x13-inch casserole dish; set aside. For the gravy, brown sausage in a large skillet, breaking up and crumbling the meat as it cooks. Once the meat is fully browned, stir in the 2 tablespoons of butter until melted. Sprinkle the flour on top of the meat a little at a time until incorporated. Cook, over medium heat, stirring often, for 5 minutes. Slowly begin stirring in the milk until fully incorporated and mixture begins to bubble and thicken. Add additional milk a little bit at a time, only if the gravy is too thick. Remove from the heat and grind plenty of pepper directly into the gravy. Taste, add salt and adjust for seasonings. Prepare biscuits while the sausage is cooking, cut cold butter into the flour until you have crumbles. Add the buttermilk and stir with a fork until a shaggy mixture forms. - Preheat oven to 350 degrees and spray a 9x13 casserole dish with cooking spray.
- Open up a package of biscuits and cut each into 6 pieces.
- Spread cut biscuits in the bottom of the greased casserole dish.
- Cook breakfast sausage according to package directions. Cut into bite sized pieces and spread over top of biscuits.
- Sprinkle 1/2 cup of shredded cheese over the sausage.
- Beat 6 eggs with milk and pour over the biscuits and sausage.
- Sprinkle remaining cheese over the top and add a shake of salt and pepper.
