Pat: A breakfast sandwich should be a thing of beauty, a stackable, delectable, calorie-laden gut-buster of a meal. This one is all those things. I usually have this sandwich on a warm buttermilk biscuit, but you can also split a glazed doughnut in half and use it as the "bread" (you're already down the rabbit hole with the bacon, sausage, and cheese, so you might as well go whole hog with the biscuit or doughnut). Butter and hot sauce are the only condiments that I need, but feel free to add a slather of mayo, mustard, or ketchup, if you like. Have a fresh pot of coffee ready when you prepare this one.

Number Of Ingredients 9

2 strips thick-sliced bacon
1 sausage patty
1 large egg
Kosher salt
Freshly ground black pepper
1 slice American cheese
Butter
1 Buttermilk Biscuit (page 236) or glazed doughnut
Dash hot sauce, if desired

Steps:

  • Fry the bacon in a large skillet over medium heat until crisp. Transfer the bacon to a plate lined with paper towels, to drain. Fry the sausage patty in the bacon grease until it is just cooked through, 3 to 4 minutes on each side; transfer the patty to the plate with the bacon.
  • Pour all but 1 tablespoon of the bacon grease from the skillet, and return the skillet to the heat. Fry the egg as desired (I like mine over medium, so the yolk is still fairly runny), and season it with salt and pepper. Just before the egg is cooked to the desired doneness, place the slice of cheese on top of the egg, and remove the skillet from the heat. Split a warm biscuit, and butter both sides. Break the two pieces of bacon in half, then top the bottom of the biscuit with the bacon halves and the sausage patty. Gently place the egg on the sausage patty, and top with a dash or two of hot sauce, if desired. Top with the remaining biscuit half, press gently to adhere, and eat immediately.

3 russet potato (peeled; cubed; rinsed and drained well)
3 Tbsps butter
1 clove garlic cloves (peeled and minced)
salt (to taste)
freshly ground Black pepper (to taste)
1 Tbsp vegetable oil
4 pork breakfast sausage patties 175 g | 6 oz (thawed if frozen)
8 slices thick-cut Bacon
6 fresh eggs
3 Tbsps milk
salt (to taste)
freshly ground Black pepper (to taste)
4 slices Cheddar cheese
4 buttermilk Biscuit (or english muffins)

Steps:

  • For Home Fries:
  • Melt butter in a large skillet, set over medium heat. Add the potatoes and spread evenly in a single layer. Cover and cook for about 4 to 6 minutes. Season with garlic, salt and pepper; stir to coat. Cover and cook for another 12 to 15 minutes, turning occasionally.
  • Remove cover, increase heat to medium-high and cook for 5 to 10 minutes, or until potatoes are golden brown and tender, stirring frequently.
  • Adjust seasoning if necessary. Divide among plates and serve with breakfast sandwich.
  • For Breakfast Sandwich:
  • Heat oil in a large nonstick skillet, set over medium-high heat. Cook sausage patties, for 2 minutes per side, or until golden brown and cooked through. Drain on paper towels and keep warm.
  • Cook bacon in skillet until crispy. Transfer to paper towels to drain.
  • Pour grease from skillet. Gently whisk eggs, milk and salt and pepper together. Pour scrambled eggs into egg rings and cook until eggs set, turning once.
  • Assemble sandwich, place a sausage patty on the bottom cut side of the biscuit, followed by egg, bacon and cheese. Cover with remaining biscuit tops.

The only in-person experience you'll miss is waving goodbye to the bodega's owner and cat.

Unsalted butter, as needed
1 kaiser roll, split (or 1 bagel, split, or 2 slices of bread, toasted and buttered)
3 slices beef, pork or turkey bacon (not thick-cut), halved crosswise
2 large eggs, beaten with a fork
Kosher salt and black pepper
2 slices American cheese
Ketchup and/or hot sauce (optional)

Steps:

  • Bring a large piece of parchment paper or foil to the stove. Heat a medium (10-inch) nonstick skillet over medium. Grease the skillet generously with butter. Place one side of the roll in the skillet, cut-side down, and toast until golden, 2 to 4 minutes. Transfer the toasted half to the parchment, cut-side up. Repeat with more butter and the other half of the roll. (The second side will take less time, as the pan gets hotter.)
  • If you're using beef or turkey bacon, add 1 tablespoon butter to the skillet. Add the bacon and cook over medium until browned and crisp, 2 to 4 minutes per side. As the bacon cooks, press it down with a spatula. (This helps the fat render, producing crunchier bacon.) Turn off the heat and transfer the bacon to the bottom roll. Pour off all but 1 tablespoon of the fat.
  • Pour the eggs into the skillet, season with salt and pepper and set over medium-low. Using a spatula, pull the egg toward the center and tilt the skillet so the egg runs to the empty part of the skillet. Repeat this all around until the surface of the egg is no longer runny but still shiny. Add the cheese on the top, tearing into smaller pieces for even coverage. Cook, undisturbed, until the top of the egg is matte, just a minute. Remove from heat, fold the egg in half, and then in half again. Transfer to the bottom roll.
  • Add ketchup and hot sauce as desired, then add the top roll and press down. Wrap in the parchment, smush again, and let sit for a couple minutes for all the elements to steam together. Cut in half and eat.
