SPINACH EGG BAKE RECIPE



Spinach Egg Bake Recipe image

Easy breakfast casserole with spinach and eggs with lots of cheese. This filling entree can be made in advance.

Number Of Ingredients 8

1 16 ounce container egg whites
2 large eggs
2 1/2 cups cheese like Colby or Sharp Cheddar, shredded
10 ounce fresh spinach
1 tablespoon butter
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Lightly grease a 9 x 13 inch baking dish and set aside. Preheat oven to 350 degrees. Heat a large skillet over medium heat and add butter. Once butter is melted add fresh spinach. Season with salt and pepper. Cook until wilted and tender (approximately 2 minutes). Remove from heat and cool. In a large mixing bowl whisk together egg whites, whole eggs, Italian seasoning and garlic powder. Fold in 2 cups of cheese with spinach and place in the prepared baking dish. Top with remaining 1/2 cup of cheese. OR place spinach evenly on the bottom of the prepared baking dish and add egg mixture on top followed with the remaining 1/2 cup of cheese. Bake uncovered for 25-30 minutes. To test for doneness, insert a knife in the center of the casserole. If it comes out clean, then it's done. For an exact temperature reading, the thermometer probe should reach 160 degrees.

Spinach and Egg Breakfast Casserole made with egg whites, fresh baby spinach, mozzarella cheese, caramelized onions, and pancetta, makes a delicious healthy breakfast that's perfect for any morning! It's very light and fluffy in texture, easy-to-make, and tastes amazing!

1/2 Tbsp. extra virgin olive oil
1/4 cup diced Italian pancetta
1/2 cup chopped onion (1 small onion)
3 whole eggs
5 egg whites
2 to 3 cups packed fresh baby spinach - rinsed, then thinly sliced
3/4 cup shredded mozzarella
1/2 cup heavy cream, or half and half
dash of ground turmeric
dash of cayenne pepper
1/4 tsp. salt
1/8 tsp. garlic powder
fresh cracked pepper, to taste

Steps:

  • Preheat oven to Bake at 350 degrees F. (175 degrees C)
  • Using a small baking dish, an 8 X 8-inch glass baking dish, or 7 X 10-inch baking pan.
  • In a small non-stick skillet, heat olive oil on medium heat and toss in pancetta and onion. Saute pancetta and onion for about 5 to 8 minutes, stirring occasionally. The pancetta should be fully cooked and onions caramelized. Then remove from heat and allow the onions and pancetta to cool down before incorporating them into the egg mixture.
  • Meanwhile, rinse and spin 2 handfuls of baby spinach. Pile a bunch of leaves together and roll them and slice them thinly on a diagonal. Set them aside.
  • In a medium-size mixing bowl, divide the egg whites from the yolks. Save the 5 yolks in the fridge to use the next day for another recipe.
  • Whisk whole eggs with egg whites. Toss in spinach, mozzarella, heavy cream, along with all the seasonings, and then add in the onions and pancetta. Whisk until well combined.
  • Pour the entire mixture into the 5 x 8 casserole dish. Or into a 12 muffin pan.
  • Place the baking dish on the middle rack in the oven.
  • BAKE for 22 to 25 minutes, or until the sides and bottom are golden browns.
  • Remove and let it sit for a few minutes. Cut into squares and serve.
  • Serves 4 to 6

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

1/2 pound bulk Italian sausage
1/2 cup chopped sweet onion
12 eggs
3 tablespoons half-and-half cream
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1-1/2 cups (6 ounces) crumbled feta cheese
TOPPING:
3/4 cup soft bread crumbs
1 tablespoon butter, melted
2 tablespoons grated Parmesan cheese
1/4 teaspoon paprika

  • In a small saucepan, melt butter. Stir in the flour, nutmeg and 1/8 teaspoon each salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. It is easy to make and can be stored in the refrigerator ahead of time, giving you the ability to visit with guests instead of spending prep time in the kitchen during the family gathering. It could also easily be altered, adding other favorite vegetables that are to your liking, or could be "spiced" up for those individuals who have more exotic tastes. I actually use 2 percent milk and a salt substitute (Salt Sense) when making this recipe. Please use what appeals best to you.

1 cup milk
3/4 cup cottage cheese (small curd)
6 eggs
1 (10 ounce) package frozen chopped spinach
2 cups fresh mushrooms (sliced)
1/2 cup onion (finely chopped)

1/2 cup flour
2 cups colby-monterey jack cheese (finely shredded)
4 tablespoons margarine
1 teaspoon pepper (coarsley ground)

  • Use cooking spray to prepare a 13 x 9 inch (or similar) baking pan.
  • Cook frozen spinach according to package directions, adding salt to the water.
