Low Carb Egg Salad Lettuce Wraps image

These Low Carb Egg Salad Lettuce Wraps are gluten free and super easy to make! This recipe is perfect for meal prepping lunches for the week!

4-6 Romaine Leaves
6 hard boiled Eggs
1 Green Onion stalk chopped thin
1 Tbs Shallots finely chopped
1 Tbs Dill Pickles finely chopped
1/4 cup Mayo
1 Tbs Honey Dijon Mustard
1 tsp Tarragon
Salt and Pepper to taste

Steps:

  • Add eggs to medium saucepan and fill water just above eggs.
  • Bring to boil, the reduce heat to a high simmer for 10 minutes.
  • Run eggs under cold water and peel.
  • Add eggs to medium size bowl and mash with a whisk or fork.
  • Add the rest of the ingredients and stir well.
  • Scoop egg salad onto romaine leaves and serve.
  • Enjoy!

1 lb breakfast sausage
4 large eggs (plus one egg yolk)
Salt and pepper
3 green onions (thinly sliced)
1/2 cup diced sun-dried tomatoes (packed in oil, diced)
1 head Butter lettuce

Steps:

  • In a small skillet over medium heat, cook sausage until lightly browned, breaking up in small bits.
  • Remove sausage from skillet, leaving a little of the rendered fat in the skillet.
  • Whisk eggs and yolk together and pour into skillet.
  • Season with salt and pepper.
  • Stir constantly, cooking the eggs until cooked through and fluffy, about 2 minutes.
  • Remove eggs from skillet.
  • Spoon the sausage, eggs, green onions and diced sun-dried tomatoes into washed and dried butter lettuce leaves.
  • Enjoy

1 Tbsp oil
1 small yellow onion, finely chopped
1 Tbsp ginger, finely chopped
4 cloves garlic, finely chopped
4 oz mushrooms, chopped
1/2 red bell pepper, julienne cut
1 Tbsp sesame oil
2-3 Tbsp tamari sauce
1 tsp white vinegar
1 tsp monk fruit sweetener (optional)
1 Tbsp chili garlic sauce
2 Tbsp cilantro, chopped
4 green onions, chopped green and white part separately
1 head Boston or butter lettuce

Steps:

  • Heat oil in wok over medium high heat. Add in onions along with white part of green onions. Sauté till translucent. Add chicken, break up and sauté for 5 minutes. Stir in mushrooms, bell pepper, garlic, ginger along with tamari sauce, vinegar, monk fruit sweetener and chili garlic sauce. Cook till chicken is fully cooked. Stir in green part of the green onions and cilantro.
  • Separate the lettuce leaves from the head. Scoop generous amounts of chicken mixture into the lettuce leaf boats and enjoy.

1 egg (hardboiled and peeled)
1/4 avocado (small)
1/4 red capsicum (finely chopped)
1 tablespoon fat-free mayonnaise (97% fat-free)
2 teaspoons lemon juice (fresh)
1 tablespoon dill (fresh chopped or parsley)
fresh ground black pepper
1 sheet lavash bread (wholemeal)
1 iceberg lettuce leaf (large)
1/4 cup alfalfa sprout

Steps:

  • Put the egg and avocado in a small bowl and mash until well combined and then add the capsicum, mayonnaise, lemon juice and dill (or parsley) and season with pepper and mix until well combined.
  • Top the lavash bread with the lettuce leaf, then with the egg mixture and then sprinkle with the alfalfa sprouts over the egg mix and roll the bread to enclose the filling and then cut in half and wrap in plastic wrap.
  • NOTE - you could take the components separately and make up the wrap at work - put the egg mix in an airtight container and pack the lettuce and alfalfa sprouts in a plastic bag and wrap the bread in foil.

Spicy Egg & Lettuce Wrap image

3 eggs
1/4 Cup lettuce
1 medium tomato
1 onions
2-3 chilies (Red)
To taste salt
1 tablespoon cream cheese ((optional))
2 Tortillas ((or chapatis))

Steps:

  • Get your ingredients ready. Finely chop the onions. Chop the chilies into small pieces. Dice the tomatoes and lettuce.
  • Boil some water in a pan and slowly place the eggs into it. Cook them for 7 minutes, switch off the flame and plunge the eggs in cold water. Leave them to cool.
  • Heat some oil, and fry the onions in medium flame.
  • Once the onions turn translucent, add the chili flakes and mix well.
  • Fry till the onions are caramelized.
  • Transfer the fried onions and chilies to a bowl, and add the chopped tomatoes and lettuce.
  • Peel the boiled eggs, and slice them lengthwise into four pieces. Add the eggs to the bowl.
  • Add salt and mix slowly. Your wrap filling is ready.
  • Take two tortillas and spread some cream cheese on them. Note: Adding cream cheese is optional. Your wrap will taste great even without it. I used chapatis instead of tortillas. Add half of the wrap filling on each tortilla.
  • Slowly roll the tortillas to make a wrap. Your spicy egg and lettuce wrap is ready to serve!

2 tablespoons fresh chives, finely chopped

4 pieces whole-wheat wrap bread (9 inches in diameter)
1 red bell pepper, cut into strips
12 thin slices red onion
8 leaves romaine lettuce, torn into pieces (about 1/2 cup)

Steps:

  • Dice 4 whole eggs and 4 egg whites and put into a small bowl. Add the mayonnaise and mustard and stir with a fork, mashing somewhat for desired consistency. Stir in chives and season with salt and pepper. Place wrap bread on a plate and spread the egg salad in the middle. Top with the peppers, onion slices and the lettuce. Fold into a wrap sandwich.
