Steps:
- Add eggs to medium saucepan and fill water just above eggs.
- Bring to boil, the reduce heat to a high simmer for 10 minutes.
- Run eggs under cold water and peel.
- Add eggs to medium size bowl and mash with a whisk or fork.
- Add the rest of the ingredients and stir well.
- Scoop egg salad onto romaine leaves and serve.
- Enjoy!

Steps:
- In a small skillet over medium heat, cook sausage until lightly browned, breaking up in small bits.
- Remove sausage from skillet, leaving a little of the rendered fat in the skillet.
- Whisk eggs and yolk together and pour into skillet.
- Season with salt and pepper.
- Stir constantly, cooking the eggs until cooked through and fluffy, about 2 minutes.
- Remove eggs from skillet.
- Spoon the sausage, eggs, green onions and diced sun-dried tomatoes into washed and dried butter lettuce leaves.

- Heat oil in wok over medium high heat. Add in onions along with white part of green onions. Sauté till translucent. Add chicken, break up and sauté for 5 minutes. Stir in mushrooms, bell pepper, garlic, ginger along with tamari sauce, vinegar, monk fruit sweetener and chili garlic sauce. Cook till chicken is fully cooked. Stir in green part of the green onions and cilantro.

- Put the egg and avocado in a small bowl and mash until well combined and then add the capsicum, mayonnaise, lemon juice and dill (or parsley) and season with pepper and mix until well combined.
- Top the lavash bread with the lettuce leaf, then with the egg mixture and then sprinkle with the alfalfa sprouts over the egg mix and roll the bread to enclose the filling and then cut in half and wrap in plastic wrap.
- NOTE - you could take the components separately and make up the wrap at work - put the egg mix in an airtight container and pack the lettuce and alfalfa sprouts in a plastic bag and wrap the bread in foil.

SPICY EGG & LETTUCE WRAP
Steps:
- Get your ingredients ready. Finely chop the onions. Chop the chilies into small pieces. Dice the tomatoes and lettuce.
- Boil some water in a pan and slowly place the eggs into it. Cook them for 7 minutes, switch off the flame and plunge the eggs in cold water. Leave them to cool.
- Heat some oil, and fry the onions in medium flame.
- Once the onions turn translucent, add the chili flakes and mix well.
- Fry till the onions are caramelized.
- Transfer the fried onions and chilies to a bowl, and add the chopped tomatoes and lettuce.
- Peel the boiled eggs, and slice them lengthwise into four pieces. Add the eggs to the bowl.
- Add salt and mix slowly. Your wrap filling is ready.
- Take two tortillas and spread some cream cheese on them. Note: Adding cream cheese is optional. Your wrap will taste great even without it. I used chapatis instead of tortillas. Add half of the wrap filling on each tortilla.
- Slowly roll the tortillas to make a wrap. Your spicy egg and lettuce wrap is ready to serve!
