Steps:
- Put eggs, cottage cheese, salt and pepper into blender.
- Blend until smooth.
- In a small fry pan, melt enough butter to coat bottom.
- Pour eggs into fry pan.
- Without stirring, gently push cooked portion to center and continue until all eggs are fully cooked but not dry.
- Note: You can also just whisk all ingredients together, but cheese won't be fully integrated.
FAST-AND-FABULOUS EGG AND COTTAGE CHEESE CASSEROLE
This is the easiest and best egg casserole I have tried so far. My sweet mother-in-law shared this recipe with me. I make 3 or 4 at the time and keep them in the freezer to take to gatherings, feed guests, or surprise kids. Green chilies make it pop!

- Preheat oven to 400 degrees F (200 degrees C). Prepare a 10x13-inch baking dish with cooking spray.
- Mix eggs, cottage cheese, Monterey Jack cheese, green chiles, butter, flour, bacon, and baking powder together in a large bowl; pour into prepared baking dish.
- Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center of the casserole comes out clean, about 30 minutes more.

- Preheat the oven to 350 degrees F. Add the melted butter to a 9x13 baking dish, turning the dish to coat the bottom. Set aside. In a bowl, whisk together the salt, pepper, mustard, and eggs until frothy. Whisk in the milk then stir in the cheese. Mix well. Pour the egg mixture into the baking dish. Place the dish in the oven and bake at 350 degrees F for 25-30 minutes or until the eggs are set. Remove from the oven and let sit for 2 minutes before cutting into squares and serving. Can serve topped with additional cheese or a dollop of sour cream.
