FREEZER BREAKFAST SANDWICHES
Weekday breakfasts will be no problem with these make-ahead freezer-friendly breakfast sandwiches.

Steps:
- Heat oven to 350°F. Spray 6 ramekins with cooking spray. Crack an egg into each ramekin, and sprinkle with salt and pepper. Use a fork to pierce yolks, and very light beat each. Bake 12 to 15 minutes or until egg is set. Let cool completely, then gently remove from ramekins.
- To assemble sandwiches, spread insides of English muffins with butter. Fill each English muffin with 1 egg, 1 slice Cheddar cheese and 2 slices Canadian bacon. Wrap each tightly with plastic wrap. Store in freezer up to 2 months, or in the fridge up to 1 week.
- To reheat, remove from plastic wrap, and cover with paper towel. Microwave at Medium (50%) 2 minutes, turning halfway through.

- Preheat oven to 375 degrees F (190 degrees C). Prepare 12 muffin cups with cooking spray.
- Arrange bacon on a microwave-safe plate. Cook bacon in microwave for 75 seconds.
- Place a slice of bacon into each muffin cup so that the bacon lines the edges of the cup.
- Beat eggs and milk together in a bowl; ladle into muffin cups. Top 4 of the egg portions with 1 tablespoon each of the green onion, 4 with 1 tablespoon each jalapeno pepper, and 4 each with 1 tablespoon roasted red pepper.

- Preheat oven to 325°. In a large bowl, whisk eggs, milk, salt and pepper until blended. Pour into a 13x9-in. baking pan coated with cooking spray. Bake until set, 15-18 minutes. - DIRECTIONS Heat oven to 350°F. Spray 10 muffin tins with nonstick cooking spray. Place one round of Canadian Bacon in each cup, pressing to line sides and bottom. (You may need to slightly fold the edges.) One at a time, crack eggs and place in Canadian Bacon "cups," one egg per cup. Sprinkle each with 1/2 tablespoon cheese. Bake in the preheated oven until eggs are done to your liking, 12-18 minutes. Sprinkle with fresh parsley, if desired.
