2 3/4 cup sugar
1 tbsp baking soda
1 tsp salt

1/2 cup crush pineapple
3 medium bananas (chopped)
2 tsp vanilla extract
8 oz cream cheese (softened)
4 tbsp butter (unsalted)
4 cups powdered sugar
2 tsp milk
1 tsp vanilla extract

Steps:

  • Preheat the oven to 325 F.
  • In a large bowl combine the flour, salt, baking soda, cinnamon, and nutmeg. Mix until everything is well combined then set to the side.
  • In another large mixing bowl add the eggs, vegetable oil, and sugar. Mix until well combined, then add in the apple sauce, bananas, pineapple, and vanilla. Mix.
  • Now slow start adding in the flour mixer, and mix the batter until everything is well combined.
  • Once the batter is nice and creamy, set it to the side.
  • Lightly butter or oil a 9x13, then pour in the cake batter.
  • Place the cake in the oven and let it bake for about 1 hour and 20 minutes
  • Let the cake cool until it's at room temperature.
  • Mix all the ingredients for the cream cheese frosting, then frost the cake.
  • Let the cake sit for 30 minutes before serving.

2 cups sugar
1/2 tsp salt
2 tsp baking soda
1 tsp cinnamon
3 eggs (beaten)
1 1/4 cups vegetable oil
1 1/2 tsp vanilla
1 8- oz can crushed pineapple (well drained)
1 cup chopped pecans
2 cups chopped firm ripe bananas
1 250 g block of cream cheese (softened)
2 cups sifted icing sugar (confectioners)
1/2 cup unsalted butter (softened)
1/2 tsp vanilla

Steps:

  • Preheat your oven to 350 degrees.
  • Lightly grease a 9×13 cake sheet pan, or line the bottom with parchment paper. Set aside.
  • Sift together the flour, sugar, salt, baking soda and cinnamon. Set aside.
  • In a separate bowl beat together the eggs and vegetable oil. Stir in vanilla.
  • Add the oil mixture to the flour mix, and gently combine.
  • Stir in the pineapple and pecans.
  • Then stir in the bananas.
  • Pour the batter into your prepared baking pan, and bake for 50 - 60 minutes (until a toothpick inserted into the centre of the cake comes out clean).
  • Let the cake cool for at least 30 minutes before spreading on the icing.
  • With a mixer on low speed, combine the cream cheese, sugar, butter and vanilla until smooth.
  • Then increase the speed to high, and mix until light and fluffy.
  • After the cake has cooled, spread on the icing.
  • Enjoy!

It is loaded with pineapple, banana and cherries and the cherry juice gives it a nice pink tint so you could serve it to your sweetheart. I usually make it on the first day of spring (or when I have some bananas that need used up). I hope you enjoy!

1 (18 1/4 ounce) boxed white cake mix (DO NOT get the kind with pudding in it) or boxed yellow cake mix (DO NOT get the kind with pudding in it)

10 maraschino cherries, chopped
2 teaspoons maraschino cherry juice
1/2 cup water

Steps:

  • Preheat oven to 350.
  • Mix all ingredients in a large mixing bowl until well combined.

1 (8 ounce) can crushed pineapple (do not drain)
2 very ripe mashed bananas
1/2 cup oil
4 large eggs
1 teaspoon cinnamon
1 teaspoon vanilla extract
3/4 cup coarsely chopped walnuts, toasted
4 cups powdered sugar
1 (8 ounce) package cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla extract

2 land o lake mini moos (half & half) or 1 tablespoon heavy cream
3/4 cup coarsely chopped walnuts, toasted

Steps:

  • 1. Preheat oven to 300 degrees. Spread 1 1/2 cups coarsely chopped walnuts on baking sheet. Bake for 8 minutes, stirring occasionally. Remove from oven and set aside.
  • 2. Heat oven on 325 degrees. Spray a 15"x10"x1" cake pan with baking spray with flour. In large mixing, bowl, combine all ingredients except the walnuts With an electric mixer, beat on low speed 30 seconds. Scrape the bowl and on medium speed, beat another 1 1/2 minutes. 4 large eggs
1 8-ounce jar crushed pineapple
1 cup mashed very ripe banana (2 to 3 bananas)
1/3 cup vegetable oil
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 cup chopped toasted pecans
1/2 cup unsalted butter (at room temperature)
8 ounces cream cheese (at room temperature)
1 teaspoon vanilla extract
1/4 teaspoon salt
4 to 4 1/2 cups powdered sugar
1 to 3 tablespoons milk or heavy cream
1/2 to 1 cup chopped pecans for garnish (if desired)

Steps:

  • Preheat the oven to 350. Spray 2 (8-inch) round cake pans with cooking spray.** Line the bottoms of the pans with parchment, spray the parchment, and set pans aside.
  • Drain the pineapple through a fine sieve into a glass measuring cup or a small bowl. Press with a spatula to extract as much of the juice as possible. Measure the liquid and add water (or pour out juice), if necessary, to make 1/2 cup of liquid.

  • Beat the butter and cream cheese in a medium mixing bowl until smooth. Add the vanilla, salt, 4 cups powdered sugar, and 1 tablespoon of milk.
  • Beat on low to combine, then turn mixer to medium and beat until frosting is very smooth. Add additional milk or powdered sugar if necessary to achieve a spreadable consistency.
  • Trim your cake layers if they have domed. Set one cake layer on a cake stand or cardboard cake circle and top with about 3/4 cup of frosting.
  • Top with the second cake layer and frost with remaining frosting. If desired, sprinkle chopped pecans over the top or press them into the sides of the cake. Serve.
  • Uneaten cake can be stored in the fridge, covered, for up to 3 days or in the freezer (tightly wrapped) for up to 3 months.

2 box Duncan Hines yellow cake mixes
6 eggs
water for mixing cake mixes, go by directions on boxes
use melted butter for cake mixes instead of oil, for amount go by directions on box
1 can(s) crushed pineapple, 20 oz., drained
3 bananas, cut and smashed
1 1/2 tsp cinnamon
2 Tbsp vanilla extract
1 c chopped pecans
1 dash(es) salt
CREAM CHEESE FROSTING
1 pkg cream cheese softened, 8 oz.
1 pkg confectioners' sugar, 16 oz.
1 stick salted butter, softened
1-2 Tbsp milk
1/2 Tbsp vanilla extract

Steps:

  • 1. Heat oven to 350 and grease a large square cake pan (like 12x18). If you do not have a 12x18 pan, a 9x13 will work. Just cut all the ingredients in half.

If cake is browning too much while baking, cover it loosely with aluminum foil. Allow to cool completely on a wire rack.
  • To make the frosting: In a bowl of an electric mixer fitted with a paddle attachment, beat butter and cream cheese on medium speed until smooth and creamy, about 2 minutes. Add sugar in 2 additions, beating well after each addition until smooth. Add vanilla extract and beat for about another 2 minutes on high speed until completely smooth. If the frosting is too runny, add more sugar as necessary until you reach the desired consistency. You can add a pinch of salt or lemon juice to cut the sweetness if you like. Spread frosting over the top (and sides if you want) of the cake, and sprinkle with chopped pecans for garnish, if you like.
  • Store cake in an airtight container in the fridge for up to 3 days. Bring to room temperature before serving.
