175 grams Softened butter (Room Temperature)
65 grams icing sugar
4 drops Vanilla Essences
180 grams Champion standard plain flour
65 grams Edmonds Custard Powder
50 grams softened butter
125 grams icing sugar
2 tablespoons Edmonds Custard Powder

Steps:

  • Making BiscuitsCream butter and icing sugar in "Closed lid" untill light and fluffy. Speed 5 for 2 minunts.Add Vanilla.Weigh and Sifted together FLour and Custard powder. Add to the "Closed lid" . Speed 3 for 2minunts.Remove your soft doug and place on a Thermomat that is on an oven tray.Bring doug togther and roll teaspoonsful of mixture into balls.Flatten with a fork.Bake for 15 to 20 minunts.Butter FillingPlace all ingredients together in the "Closed lid" .Speed 5 for 2 minuts.When biscuits are cold sandwich together in twos with butter filling.

1/4 cup icing sugar
1/2 teaspoon vanilla essence
1 1/2 cups high grade flour
1/2 cup custard powder
50 g butter, softened
1/2 cup icing sugar
2 tablespoons custard powder

Steps:

  • Cookies:.
  • preheat oven to 180C or 350°F.
  • cream butter and sugar until light and fluffy and add vanilla essence.
  • sift the flour and custard powder and mix sifted ingredients into butter mix.
  • roll small teaspoons of dough into balls and place on greased tray. flatten balls slightly with a fork.
  • bake in the oven for 15-20 minutes. remove from the oven and allow to cool.
  • Filling:.
  • Beat all filling ingredients together until combined.
  • Assembly:.
  • Sandwich two cookies together with a little butter filling and serve.

I took one each for my neighbour and her daughter and they loved them, took them to school and my friends demolished them and it was a fight over the last one. These are a true kiwi recipe, out of the Edmonds cookbook

1/4 cup icing sugar
3 drops vanilla essence (few drops)
1 1/2 cups flour
1/4 cup custard powder
50 g butter, softened
1/2 cup icing sugar
2 tablespoons custard powder

Steps:

  • pre heat oven to 180 degrees C.
  • cream butter and icing sugar until light and fluffy.
  • add essence.
  • sift flour and custard powder together, fold into creamed mixture.
  • roll teaspoonfuls of mixture into balls.
  • place on oven tray, gently flatten with a floured fork (not to hard, you still want a thick cookie and it does not rise when baking).
  • bake for 15-20 minutes, when cold sandwich together in pairs with butter filling.
  • to make butter filling:.
  • beat all ingredients until well combined.
