What a great way to have a picnic! You can eat the basket and not have to carry it back to the car! With this ever-so-easy recipe, you bake your basket - and then you eat it! Fill with chicken and carry to your next picnic! You could also use this recipe to create edible soup bowls, if you divide dough into four parts.

Number Of Ingredients 5

1 1/2 cups water
4 cups white bread flour
2 tablespoons sugar
2 teaspoons salt
2 teaspoons fast rise yeast or 3 teaspoons active dry yeast

Steps:

  • Remove dough from the machine after the dough or manual cycle is completed.
  • Turn dough out onto lightly floured surface, and carefully form into a ball without punching down.
  • Place onto greased cookie sheet and let rise about one hour or until doubled in size.
  • Brush with beaten egg and bake at 350 degrees for 30-35 minutes or until golden brown.
  • Let cool.
  • Hollow out cooled bread like a pumpkin, reserving"lid" to put back on.
  • Butter inside and fill with: i.e. fried chicken.
  • Replace lid and wrap in heavy duty foil, then news paper, then foil again.
  • Bread and chicken will stay warm all day!
  • Success Hints: Use to make edible soup bowls.

My aunt has been making this wonderful bread for years. You can make it ahead and serve it cold. It makes a great appetizer, and is wonderful left over. It also travels well, and is a hit at pot-lucks!

Number Of Ingredients 11

1 (1/4 ounce) package active dry yeast
2 1/2-3 cups flour
1 tablespoon sugar
2 cups chopped cooked chicken
1 1/2 cups shredded swiss cheese
1 (10 ounce) box frozen chopped spinach, thawed and drained
1/4 cup grated parmesan cheese
1/4 cup finely chopped onion
1 beaten egg white
2 tablespoons sesame seeds (optional)
1 1/4 teaspoons salt

Steps:

  • Preheat oven to 375°.
  • Mix cheese, spinach, chicken, onion, and 1/4 teaspoon salt for filling.
  • Set aside.
  • Dissolve yeast in 1 cup warm water.
  • Mix yeast mixture, sugar, 1 teaspoon salt, and 1 cup flour in a mixing bowl.
  • Gradually add 1 1/2 cups flour to dough.
  • Knead dough until smooth, using other 1/2 cup flour if dough is sticky.
  • Roll dough into a 16 x 10-inch rectangle.
  • Spread filling down the middle of dough.
  • Bring dough edges together and seal.
  • Place seam-side down on lightly greased cookie sheet.
  • Brush bread with egg white and sprinkle with sesame seeds.
  • Bake at 375° for 40 minutes.
  • Serve warm, or cool and refrigerate.

ONION DILL PICNIC BREAD

I wish you could see the picture for this bread. It looks like a golden, flakey deck of cards standing on end!...and the oniony aroma of the baking bread is out of this world! If you don't like the flavor of dill, it can be omitted and the bread will still be delicious. Prep time does not include rising time.

Number Of Ingredients 12

1/2 cup sugar
1/2 cup milk
3/4 cup butter, softened
1 teaspoon salt
2 (1/4 ounce) packages active dry yeast
1/2 cup water
2 tablespoons instant minced onion
3 teaspoons dill weed
2 eggs, slightly beaten
3 3/4-4 1/4 cups all-purpose flour
1 egg yolk
1 tablespoon water

Steps:

  • In small saucepan, combine sugar, milk, 1/2 cup butter and salt.
  • Cook on medium heat until butter is melted.
  • Cool to warm (105-115F).
  • Meanwhile, in large bowl, dissolve yeast in 1/2 cup warm water.
  • Stir in minced onion and only 2 1/2 tsp dillweed.
  • Add milk mixture, 2 beaten eggs and enough flour to make dough easy to handle.
  • Turn dough onto lightly floured surface and knead until smooth, about 8 minutes.
  • Place dough into a greased bowl; turn greased side up.
  • Cover and let rise in a warm place until double in size, approx.
  • 1 1/2 hours.
  • Punch down dough and divide in half.
  • Roll half of the dough into a 24 by 8 inch rectangle.
  • Spread with 2 tbsp butter.
  • Cut crosswise (not lengthwise) into 6 equal pieces.
  • Stack on top of each other, buttered side up.
  • Cut stack again, crosswise, into 5 equal pieces.
  • Place cut edge down, in a greased 9 by 5 inch loaf pan.
  • Repeat with remaining dough and butter.
  • Cover, and let rise until double in bulk (about 1 hour).
  • Preheat oven to 350F degrees.
  • Bake loaves for 25-30 minutes or until lightly browned.
  • Meanwhile, in small bowl, stir together egg yolk and 1 tbsp water.
  • Brush each loaf with egg mixture and sprinkle with remaining 1/2 tsp dillweed (1/4 tsp each loaf).
  • Continue baking for 4-5 minutes or until golden brown.
  • Remove from pan immediately.

VinaKJ pointed me in the direction of this recipe a couple years ago. The sandwiches are delicious. The recipe calls for roasted sweet peppers. You may use the jarred ones or roast your own. *To roast sweet peppers: Halve peppers; remove stems, seeds and membranes. Place peppers, cut side down, on a foil lined baking sheet. Bake in a 425 degree F oven for 20 - 25 minutes or until skin is bubbly and browned. Place in a clean brown paper bag; seal and let stand for 10 to 30 minutes or until cool. Peel and use as directed.

8 ounces soft-style chive & onion cream cheese
1 tablespoon lemon juice
1 tablespoon dijon-style mustard
1/4 teaspoon garlic pepper seasoning
8 ounces loaf sourdough bread (baguette) or 8 ounces French bread (baguette)
8 ounces boneless fully cooked smoked turkey breast, sliced
4 slices provolone cheese (2-3 ounces)
7 ounces roasted sweet peppers, drained and sliced (or 2 red and or green sweet peppers roasted and sliced)
1 cup spinach leaves
fresh spinach leaves

Steps:

  • For the cream cheese spread, stir together the cream cheese, lemon juice, mustard and garlic pepper.
  • Split sourdough loaf or baguette horizontally and spread cut sides with the cream cheese spread.
  • On bottom half of the loaf, layer turkey, Provolone or Swiss cheese, sweet peppers and spinach. Cover with top of loaf. Slice crosswise into 4 pieces. Wrap sandwiches in plastic wrap or waxed paper and chill until serving time, up to 6 hours.

I was reading the message boards and someone was looking for different ideas for Easter Baskets! Then I remembered this and though it's too late for this year, maybe you'll try this for next year or for any special day! The kids love it! I've made small bowls and filled it with candy at a buffet table and also on the coffee table with munchies...another great recipe card idea...can't take the credit.

Number Of Ingredients 8

1 1/4 cups flour
1/2 cup unsweetened cocoa powder
1/4 cup blanched slivered almond, finely ground
1/2 teaspoon salt
4 tablespoons butter (soft)
2/3 cup sugar
1 egg
1/2 teaspoon vanilla

Steps:

  • In a medium bowl, combine flour, cocoa powder, almonds and salt; set aside.
  • In a large bowl, beat butter, sugar, egg and vanilla with an electric mixer til light and fluffy.
  • Add flour mixture, beating until dough forms about 2 minutes.
  • Roll dough out to 1/8-inch thickness.
  • Use a 1-1/2" cookie cutter with scalloped edges and cut out shapes.
  • Making the basket: Cover the outside of a loaf pan with foil and spray with cooking spray.
  • Cover the pan with the dough cutouts (overlapping slightly) and pressing gently.
  • Bake in a 350 degree preheated oven for 15 minutes or until the edges are firm.
  • Cool completely before removing the cookie basket.
  • You can mold the cookie dough around different shaped oven-proof bowls too.
