EAT MORE BARS
These are so easy to make and taste like a Eat More candy bar. I make them often and they are always on my Christmas dainty tray. Need to take a dainty to the office? This would be the one.I'm sure these could be made using a micowave, I have just always used the stove--- not sure why.

Steps:
- Preheat the broiler and set a rack close to the broiler.
- Combine the sugar and cinnamon in a small bowl.
- Put the bread on a sheet pan and toast the bread lightly on both sides under the broiler. When the bread is hot, spread each piece with 1 teaspoon butter. Sprinkle the cinnamon sugar equally among the slices of toast. Top with equal quantities of the chocolate chips. Finally, lay 1/4 cup of the mini marshmallows on each slice.
- Place under the broiler and broil just until the marshmallows are golden brown, watching them so they don't burn, about 1 minute. Serve immediately.

- Heat a grill to medium-low heat. (The heat coming from a dying charcoal grill or a gas grill cooling down will also work well.)
- Halve each graham cracker sheet crosswise into 2 squares. Working with 1 or 2 s'mores at a time, place a square of graham cracker on a piece of foil and top with a portion of chocolate and a pinch of kosher salt. Place on the edge of the grill just until the chocolate is warmed and softened, about 30 seconds.
- Take the graham cracker squares and chocolate to your grill (as the marshmallows toast they will become soft and start to droop off the skewer). Working with a few at a time, skewer a marshmallow on a long fork or metal skewer and hold over the heat about 2 inches above the grates. Toast, turning occasionally, until the marshmallow puffs and turns golden brown, 1 to 2 minutes.
- Using the square of graham with the chocolate and a plain graham square, place the marshallow on the chocolate and, using the plain graham, squish the marshmallow down and pull off the skewer. Eat while it is warm and gooey and perfect.

- Cut a piece of parchment paper to fit inside the bottom of a 9x13" baking pan (do this by tracing around the bottom of the pan onto the parchment, then cutting it out). Place the parchment in the bottom of the pan and spray the sides of the pan with oil.
- Place roasted peanuts in a food processor and pulse until they are coarsely chopped. Alternatively, coarsely chop by hand. Pour into a large bowl and stir in rolled oats. Set aside.
- Mix peanut butter and corn syrup together in a small saucepan. Heat over medium heat until the mixture begins to boil, about 8-10 minutes. Remove from heat and stir in chocolate chips until completely melted and incorporated.
- Pour the peanut butter mixture over the peanuts and oats. Stir until well mixed. Spread mixture into the prepared baking pan. Cover with plastic and refrigerate until set, 1-2 hours. Remove from fridge and keep at room temperature to soften for 10 minutes before cutting. Cut into squares. Bars will keep in an airtight container for several days at room temperature, or several months in the freezer.

- Paninis. We all know that you can get some kicka** sandwiches at Rebecca’s if you’re in Boston, but now you can change up your routine savory paninis and indulge in this crunchy sandwich.
- Dip. This dip removes the mess factor a (little) bit from your classic s’mores. Bonus — this one is super easy to make in your dorm if you don’t have a kitchen.
- Cookies. Don’t limit yourself to chocolate chip cookies with this one. You could use peanut butter cookies, mocha chocolate chip cookies, or classic sugar cookies.
- Parfait. Because sometimes one (or two or three) s’mores isn’t enough and you just need to eat the marshmallow goodness from the spoon, parfait style.
- Shots. One of the few shots you will actually enjoy doing. And how many other times can you eat the glass?
- Latte. No need for coffee with no more 8 ams, so why not indulge first thing in the morning with a s’mores latte?
