Steps:
- Cook onion in butter in a large saucepan until it begins to soften, about 3-4 minutes. Add garlic, ginger and curry powder. Cook just until fragrant, about 1 minute.
- Stir in bell pepper and jalapeño. Continue to cook over medium heat until tender-crisp.
- Add remaining ingredients and simmer uncovered about 15 minutes or until thickened.
- Serve over rice with cilantro.

EASY CHICKPEA CURRY
This is my personal curry recipe that I've ended up developing over the years. It's very versatile - feel free to add any veggies or meats. All the ingredients can be adjusted to fit your preference. Serve over rice or just eat with naan.

- Melt the butter over medium heat in a large saucepan. Cook and stir the onion and garlic in the melted butter for about 5 minutes, until onion is translucent. Sprinkle in curry powder, garam masala, paprika, sugar, ginger, turmeric, salt, and pepper. Continue to cook and stir 3 to 4 more minutes, until spices are lightly toasted.
- Mix in the garbanzo beans, potatoes, coconut milk, tomato, milk, ketchup, sour cream, and bouillon cubes. Simmer the curry over medium-low heat for about 25 minutes, until the potatoes are tender. Stir in ground almonds to thicken.

EASY SPICY CURRIED PEAS
This is a fantastic recipe for curried peas, spicy, flavourful and quick! Adjust the amount of red chili powder if you want to reduce the spiciness. If using fresh peas, you might need to add a little water to cook the peas. With frozen peas, additional water is not necessary.

- In a small bowl, mix together coconut milk, red chile powder, coriander, turmeric, and salt.
- In a medium saucepan, heat oil over medium heat.
- Add onion, cinnamon stick, and cumin seeds; saute until onions are soft.
- Stir in tomatoes, peas, and coconut milk mixture.
- Reduce heat, and simmer until the peas are tender, about 5-10 minutes.
- Serve hot over basmati rice, chappatis, tortillas or bread.

- Rinse and drain the chick peas in a strainer. Line a large rimmed sheet pan with paper towels. Transfer the chick peas to the paper towels and scatter about, so that the towels soak up most of the moisture. Tear off another towel and gently pat and roll the chick peas until they are dry, removing any loose skins and discarding. Transfer the chick peas to a medium bowl and add the grapeseed oil, salt and pepper. Toss to coat and set aside.
- Place the sheet pan in the oven to heat for 3-4 minutes. When the pan is hot, add the chick peas to the pan and spread into a single layer. Cook for 10 minutes, then shake or stir the chick peas. Continue cooking for another 10 minutes.

- First: if you're cooking up a whole grain, bring the grain and water to boil, lower to a simmer, and allow the grain to cook while you're making the curried chickpeas.
