- Cook pasta al dente according to package instructions in a large stockpot of generously-salted water.
- Meanwhile, as the pasta is cooking, whisk together the soy sauce, rice vinegar, sesame oil, ground ginger, chili garlic sauce, garlic powder and black pepper together in a bowl until combined.
- Once the pasta is ready, drain it. Then immediately toss the pasta with the sauce and green onions until combined.
- Serve warm or cold, sprinkled with your desired toppings. Or transfer to a sealed container and refrigerate for up to 4 days.
QUICK AND EASY SESAME NOODLES
Steps:
- Cook the noodles according to the packet instructions.
- While the noodles are cooking, whisk together the soy sauce, rice vinegar, sesame oil, ginger, and garlic powder, adding a tsp of the noodle cooking water.
- Drain the noodles and cool by running under the cold water tap for a minute or so.
- Place the noodles into a large mixing bowl and stir in the dressing, spring onions, capsicum/pepper, cabbage and sesame seeds.
- Divide between two bowls and sprinkle over extra sesame seeds.
- Enjoy!

QUICK SESAME AND GINGER NOODLES
Quick sesame and ginger noodles make a great mid-week dinner. They come together quickly and really deliver on taste. They are vegan and gluten-free.

- Mix grated garlic and vinegar and set aside for 5 minutes. Immersing raw garlic in acid first neutralises the raw garlic taste a little. Next add tahini, tamari (or soy sauce), maple syrup and ginger. Mix together well and add a bit of water (1-2 tbsp) to thin the sauce a little. Pour into a small pot and set aside.
- Prepare vegetables for stir-frying by cutting them into uniform pieces so that they require the same amount of time to cook. What I mean by that is make sure all your broccoli florets are roughly the same size, but they do not need to be the same size as carrot matchsticks, for example. Apologies, I know this is obvious but just in case.
- Set a medium pot of water on the heat. Bring the water to the boil.
- Meanwhile, warm up 1 tablespoon of oil in a wok or in a non-stick pan. Stir fry spring onions until soft and remove them from the pan and set aside, on a small plate. Pour another tablespoon of oil into a wok and let it get hot. Stir-fry all the veggies until cooked but still crunchy. Start off with denser vegetables that require more cooking (butternut squash, broccoli, beans) and finish with those that hardly require any cooking at all (carrots, peppers, cabbage). Sprinkle with a dash of tamari (or soy sauce) towards the end of stir-frying time.
- Cook pasta according to the cooking instructions.
- While pasta is cooking, warm up the sauce - do not let it come to boil, just warm it up gently.
- Drain the pasta, toss in warmed-up sauce, mix stir-fried veggies and spring onions in. Serve with a sprinkle of sesame seeds and (optionally) fresh herbs.

Homemade egg noodles might not be as handy as dumping that box or bag of egg noodles into a steaming hot pot of boiling water. But how they make up for it in terms of taste, and texture, and even, yes, cooking time!

- In a bowl, add flour. Make a "well" in the center of the flour.
- Combine eggs, salt, water and oil in another bowl.
- Add wet mixture to the well.
- Mix together until ingredients are incorporated.
- Flour a flat surface. Turn dough out and begin to knead the dough until it's smooth and elastic. About 8 minutes or so. (alternatively, you can use your dough hook attachment for your stand mixer.)
- Form dough into a ball. Cover with a clean towel and let sit for 10 minutes before rolling out on a floured surface.
- Cut noodles 1/8" thick and 1/4" wide.
- Hang or lay on a lightly floured tea towel to dry for a couple of hours.
- To cook, add noodles to a salted pot of water that has come to a rapid bowl. Noodles will rise to the surface in 4-7 minutes and be cooked. Stir to keep them separated.
- Serve immediately, or add to soups or casseroles.

This recipe was in the 6/1/09 issue of First magazine. The Asian style vegetables called for are like Green Giant Asian style vegetables with sauce. The dressing called for is like Neuman's Own Sesame-Ginger Dressing. The recipe program would not let me put that into the ingredient listing.
