Green onions (chopped)

Steps:

  • Combine the first 7 ingredients together in a small bowl and whisk until thoroughly combined.
  • Pour sauce over warm, cooked noodles.
  • Garnish with chopped green onions.

¼ cup soy sauce (low sodium)
2 tablespoon dark soy sauce
2 tablespoon rice vinegar
2 tablespoon sesame oil
2 cloves garlic (minced)
1 teaspoon ginger (minced)
1 teaspoon chili garlic sauce (or Sambal Oelak)
1 tablespoon peanut butter
2 green onions (chopped)
1 tablespoon sesame seeds
2 tablespoon peanuts (crushed)

Steps:

  • Cook the ramen according to package instructions.
  • Meanwhile, in a medium size bowl combine all the sauce ingredients together and whisk until combined.
  • Once the noodles are cooked, drain them and immediately toss with sauce.
  • Garish with green onions, sesame seeds and/or crushed peanuts and serve immediately.

This easy sesame noodles recipe can be made in just 15 minutes, and can be served either warm or cold. It's also great with some extra veggies or proteins mixed in!

1 pound (16 ounces) uncooked pasta (I used linguine)
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
1 teaspoon ground ginger
1/2 teaspoon chili garlic sauce or sriracha
1/2 teaspoon garlic powder
1/4 teaspoon freshly-cracked black pepper
1/2 cup thinly-sliced green onions
optional toppings: toasted sesame seeds, extra green onions, extra black pepper

Steps:

  • Cook pasta al dente according to package instructions in a large stockpot of generously-salted water.
  • Meanwhile, as the pasta is cooking, whisk together the soy sauce, rice vinegar, sesame oil, ground ginger, chili garlic sauce, garlic powder and black pepper together in a bowl until combined.
  • Once the pasta is ready, drain it. Then immediately toss the pasta with the sauce and green onions until combined.
  • Serve warm or cold, sprinkled with your desired toppings. Or transfer to a sealed container and refrigerate for up to 4 days.

This vegetarian noodle recipe is ready in under 15 minutes. Soft noodles, crunchy vegetables are all dressed in a salty punchy ginger sesame dressing.

180 g noodles (I use ramen or soba )
2 tbsp light soy sauce
1 tbsp rice vinegar
2 tbsp sesame oil
2 tsp ginger (finely grated*)
½ tsp garlic powder
2 spring onions (finely chopped)
½ yellow capsicum/pepper (roughly diced)
⅛ small red cabbage (finely shredded)
1 tsp black sesame seeds (plus more to serve)

Steps:

  • Cook the noodles according to the packet instructions.
  • While the noodles are cooking, whisk together the soy sauce, rice vinegar, sesame oil, ginger, and garlic powder, adding a tsp of the noodle cooking water.
  • Drain the noodles and cool by running under the cold water tap for a minute or so.
  • Place the noodles into a large mixing bowl and stir in the dressing, spring onions, capsicum/pepper, cabbage and sesame seeds.
  • Divide between two bowls and sprinkle over extra sesame seeds.
  • Enjoy!

QUICK SESAME AND GINGER NOODLES



Quick sesame and ginger noodles image

Quick sesame and ginger noodles make a great mid-week dinner. They come together quickly and really deliver on taste. They are vegan and gluten-free.

Number Of Ingredients 12

200 g wholemeal (gluten-free if necessary) spaghetti*
2 tbsp oil, for frying (I used peanut oil)
splash of soy sauce
2 spring onions, sliced finely
favourite veggies (I used cabbage, broccoli, butternut squash and runner beans)
4 tsp finely grated ginger
1 large garlic clove, finely grated
1 tbsp rice vinegar or lime juice
4 tbsp / 60 ml / ¼ cup light, hulled, tahini
2 tbsp / 30 ml tamari or soy sauce
2 tsp maple syrup
1-2 tbsp / 15-30 ml water, to thin

Steps:

  • Mix grated garlic and vinegar and set aside for 5 minutes. Immersing raw garlic in acid first neutralises the raw garlic taste a little. Next add tahini, tamari (or soy sauce), maple syrup and ginger. Mix together well and add a bit of water (1-2 tbsp) to thin the sauce a little. Pour into a small pot and set aside.
  • Prepare vegetables for stir-frying by cutting them into uniform pieces so that they require the same amount of time to cook. What I mean by that is make sure all your broccoli florets are roughly the same size, but they do not need to be the same size as carrot matchsticks, for example. Apologies, I know this is obvious but just in case.
  • Set a medium pot of water on the heat. Bring the water to the boil.
  • Meanwhile, warm up 1 tablespoon of oil in a wok or in a non-stick pan. Stir fry spring onions until soft and remove them from the pan and set aside, on a small plate. Pour another tablespoon of oil into a wok and let it get hot. Stir-fry all the veggies until cooked but still crunchy. Start off with denser vegetables that require more cooking (butternut squash, broccoli, beans) and finish with those that hardly require any cooking at all (carrots, peppers, cabbage). Sprinkle with a dash of tamari (or soy sauce) towards the end of stir-frying time.
  • Cook pasta according to the cooking instructions.
  • While pasta is cooking, warm up the sauce - do not let it come to boil, just warm it up gently.
  • Drain the pasta, toss in warmed-up sauce, mix stir-fried veggies and spring onions in. Serve with a sprinkle of sesame seeds and (optionally) fresh herbs.

Homemade egg noodles might not be as handy as dumping that box or bag of egg noodles into a steaming hot pot of boiling water. But how they make up for it in terms of taste, and texture, and even, yes, cooking time!

1 3/4 cups all-purpose flour
2 egg yolks, slightly beaten
1 egg, slightly beaten
1/2 teaspoon salt
1/3 cup water
1 teaspoon cooking oil

Steps:

  • In a bowl, add flour. Make a "well" in the center of the flour.
  • Combine eggs, salt, water and oil in another bowl.
  • Add wet mixture to the well.
  • Mix together until ingredients are incorporated.
  • Flour a flat surface. Turn dough out and begin to knead the dough until it's smooth and elastic. About 8 minutes or so. (alternatively, you can use your dough hook attachment for your stand mixer.)
  • Form dough into a ball. Cover with a clean towel and let sit for 10 minutes before rolling out on a floured surface.
  • Cut noodles 1/8" thick and 1/4" wide.
  • Hang or lay on a lightly floured tea towel to dry for a couple of hours.
  • To cook, add noodles to a salted pot of water that has come to a rapid bowl. Noodles will rise to the surface in 4-7 minutes and be cooked. Stir to keep them separated.
  • Serve immediately, or add to soups or casseroles.

This recipe was in the 6/1/09 issue of First magazine. The Asian style vegetables called for are like Green Giant Asian style vegetables with sauce. The dressing called for is like Neuman's Own Sesame-Ginger Dressing. The recipe program would not let me put that into the ingredient listing.

1/3 cup creamy peanut butter
1/3 cup sesame-ginger salad dressing
1/4 cup fresh cilantro, chopped

Steps:

  • Cook spaghetti, according to package directions.
  • Rinse in cold water; drain.
  • Prepare frozen vegetables according to package directions; keep warm.
  • In bowl, combine peanut butter, sesame-ginger dressing and chopped cilantro. Stir in vegetables. Let cool.
  • Arrange orange slices on a platter. Top with cooked spaghetti and vegetable mixture.
