MEXICAN CASSEROLE
Ultimate Mexican casserole with refried beans, rice, ground beef and veggies, layered and baked to cheesy perfection! A healthy family favorite!

- Be sure to cook your rice if you haven't already (if you are just reading this and just now realized you don't have any cooked rice and don't want to wait, consider switching to quinoa, which cooks much more quickly than brown rice. Instant brown rice also works in a pinch).
- Preheat the oven to 350 degrees F. Coat a large casserole dish (9x13 inch or similar) with nonstick spray and set aside.
- In a Dutch oven or large, deep skillet, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper. Sauté until slightly softened, about 5 minutes.
- Add the beef, chili powder, cumin, salt, black pepper, and cayenne pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4 to 5 minutes. Add the garlic and cook just until fragrant, about 1 additional minute.
- Remove from the heat. Stir in the rice and Greek yogurt until evenly combined. Taste and adjust seasoning as desired.
- Assemble the casserole: Spread the beans into an even layer in the prepared baking dish.
- Sprinkle 1/4 cup cheddar cheese and 1/4 cup mozzarella cheese over the beans.
- Scatter the tomatoes with green chilis over the top.
- Spoon the rice and ground beef mixture on top of the tomatoes, spreading it into an even layer.
- Top with remaining 1/2 cup cheddar and 1/2 cupmozzarella.
- Bake the casserole, uncovered, until the cheese is melted and the casserole is hot, about 15 minutes.
- Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 to 4 additional minutes, watching carefully so that the cheese does not burn.
- Let rest 5 minutes, sprinkle with chopped cilantro and green onions, and serve.

- Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave 1-2 minutes or until spreadable., Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half the beef, bean mixture, corn and cheese; repeat layers. , Bake, uncovered, until cheese is melted, 40-45 minutes. Let stand 5 minutes. If desired, serve with lettuce, tomatoes, olives and sour cream.

MEXICAN CASSEROLE
This is a quick and easy recipe to toss together and the flavor is wonderful. Makes great leftovers for lunch the next day. I have been making this for years.

Steps:
- Heat oven to 375 degrees.
- Mix seasoning packet (in box) with water and butter in bowl.
- Add stuffing mix.
- Mix together.
- Set aside.
- Cook beef with garlic and chili powder till browned (drain).
- Add tomatoes and kidney beans to beef mixture.
- Mix together.
- Put 1/2 of stuffing mixture into a 2 quart baking dish.
- Put beef mixture on top of stuffing.
- Add 1 cup cheese.
- Top with remaining stuffing mixture.
- Add the rest of the cheese.
- Cover and bake for 45 minutes.

EASY MEXICAN CASSEROLE
This is based on a recipe from the Allrecipes website submitted by AndreaLF63, which I made a few minor changes to suit our taste preferences such as adding a can of white corn and using canned diced tomatoes instead of fresh chopped tomatoes. But I look forward to making this again and trying some of the other changes that some of the reviewers suggested, like maybe adding some minced garlic or perhaps a diced jalapeno pepper or chopped bell pepper.

- Preheat oven to 350°F (175°C). Spray a 9x13 baking dish with nonstick cooking spray; set aside.
- In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans and corn, and cook just until heated through.
- Spread crushed tortilla chips in bottom of prepared baking dish, and then spoon beef mixture over chips. Spread sour cream over the beef layer, and then sprinkle olives, green onion, and tomato over the sour cream layer.
- Bake in preheated 350° oven for 25 to 30 minutes. Top with cheddar cheese and return to oven to bake another 5 minutes or just until the cheese starts to melt.
EASY QUICK MEXICAN STOVE TOP CASSEROLE
This always goes over well. Makes enough for a family of 5. Or lots of leftovers for a family of 2 which we are. The left overs are great too. Can be made as spicy or mild as you like depending on the spice of the taco seasoning and salsa. Most of these items I keep on hand so it's a great recipe to use when I don't know what to make.

- Combine the first 4 ingredients. If using chicken bring to a boil and then lower the temp, cover and simmer for 15 minutes. Bring back to a boil.
- If using the hamburger, brown it first before adding the other 3 ingredients. Once added bring to a boil, no need to simmer.
- From there the rest is the same for both versions.
- Add the instant rice, black beans, and corn. Mix together well. If I have any on hand I also usually add green onions.
- Adjust heat to low, cover with desired amount of shredded cheese. I use about 2 cups but that is a lot. We love cheese. I think originally it called for 1 cup.
- Once cheese is added cover and let cook on low for 5-10 minutes or until the rice is done.
- Serve and enjoy. This usually only takes about 30 minutes total. Quick and easy.
