PEANUT PATTIES
Peanut patties are like peanut brittle's Southern cousin. This recipe is from one of our favorite cookbooks, Texas Home Cooking, by Cheryl Alters Jamison and Bill Jamison.

Steps:
- Preparation: Lay a large piece of waxed paper on a dishtowel on a counter. In a heavy saucepan, combine the sugar, peanuts, corn syrup and water. Stirring constantly over medium heat, cook the mixture to the high end of the soft ball stage, 235°F. Remove the pan from the heat, and stir in the remaining ingredients, adding enough food coloring to get a vibrant red shade. Stir the mixture frequently for approximately 20 minutes, or until it cools to about 125°F. The mixture will become very thick and creamy opaque, and the peanuts will be suspended. Immediately spoon out the mixture in patties, the larger the better. Let the patties sit for at least 1 hour before eating them. Their texture should be chewy like nougat rather than creamy like praline. Wrap them individually for storage. They'll keep a week.

Steps:
- In a saucepan over medium-low heat, combine the sugar, corn syrup, evaporated milk, and peanuts. Bring to a slow boil, and stir to blend once heated. Let boil until the mixture reaches a temperature of between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. This may take up to 1 hour.
- Stir in the butter, vanilla and food coloring once the mixture has reached the proper temperature. Spoon out onto waxed paper or parchment paper to form patties. Cool until set.

PEANUT PATTIES
This came from my Nanny's collection. I think it is from a neighbor that made AMAZING candy. In TX the weather has to be just right for candy making. I have made this twice so far and out of 2 times got it perfect once.

Steps:
- Combine sugar, milk & corn syrup on indirect heat- add peanuts-cook until it forms a firm ball in cold water-or hard boil stage. Remove from heat- add butter, vanilla, coloring. Beat until mixture drops from a spoon on buttered sheet.
- I typed as it was written in her file from her friend. I used direct heat the whole time and had to beat for quite a while to get it thick enough to drop into patties. These taste amazing- but are a lot of effort. My Papa's favorite candy, mine too ! Good old fashioned candy !

PEANUT PATTIES BY MICROWAVE
There was a candy co., "Tom's," in the South that made these wonderful pink peanut patties. This recipe tastes just as yummy! It's the raw peanuts --they're not cooked to roasted stage. I adapted the recipe from stove-top directions back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. See the companion recipe for Pecan Pralines. Both are great for gifts!

DELICIOUS PEANUT PATTIES
Well, Not exactly patties, more like small burgers or schnitzels but with no meat and no milk! My sister in law brought it once to a family dinner and we all devoured it in minutes. Thank you Efrat! Yummies that won't last 5 minutes anywhere. (Especially if you dip them in Sweet Chilly Sauce).

Steps:
- Mash (with food processor or blender)the corn, scallions, peanuts, cumin, garlic and ginger.
- Add flour and eggs to the mixture. Blend everything.
- Add salt and pepper(to taste).
- Heat oil according to the size of your frying pan. (frying each side at its turn will do just fine- no need to rush to deep fry). Wait till oil is hot to prevent soaking.
- Gently spoon the mixture and lay a patty size mixture on the pan. Flip side when lightly brown. Lay done burgers/schnitzels/patties on blotting paper to cool and dry.
- Eat! (I like to lightly dip the burgers in Sweet Chilly Sauce - Yum!).
