EASY CHEESE BAKED FISH



Easy Cheese Baked Fish image

I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.

Number Of Ingredients 6

1 lb fish fillet (I always use haddock)
1/4 cup milk
1/2 onion, thinly sliced (I slice into rings and break them apart and in half if they are too big)
2 tablespoons butter
3/4 cup grated cheddar cheese
salt & pepper

Steps:

  • Place fish in a greased pan with dabs of butter on top.
  • Season with salt& pepper to taste.
  • (this is where I sprinkle on lemon juice or lemon pepper if using) Cover with sliced onion.
  • Pour on milk.
  • Bake at 400 degrees for 12-15 minutes.
  • Remove from oven and sprinkle with grated cheddar cheese and a little parsley if desired.
  • Return to oven until cheese melts.

3 tablespoons butter
1 onion, thinly sliced
1 pound skin-on fresh cod
1 tablespoon seasoned salt, or more to taste
½ cup mayonnaise
2 ½ tablespoons grated Parmesan cheese
2 ½ tablespoons shredded provolone cheese
2 ½ tablespoons shredded mozzarella cheese
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9x13-inch casserole dish.
  • Place casserole dish in the preheating oven until butter is melted, about 5 minutes.
  • Spread onion slices in the bottom of the casserole dish. Place cod skin-side down over onion. Sprinkle seasoned salt evenly on top.
  • Mix mayonnaise, Parmesan cheese, provolone cheese, mozzarella cheese, and fresh parsley together in a bowl. Spread over cod.
  • Bake in the preheated oven until cod flakes easily with a fork, 20 to 25 minutes.

Steps:

  • Preheat oven to 325.
  • Line 8x10" dish with foil.

nonstick spray coating
1 tablespoon margarine or 1 tablespoon butter
2 tablespoons dry breadcrumbs
3/4 cup skim milk
1 tablespoon all-purpose flour
1/2 cup cheddar cheese, shredded
1 1/2 teaspoons Dijon mustard
fresh dill weed (optional)

Steps:

  • Preheat oven to 400. Meanwhile spray a shallow baking dish with nonstick coating. Place fillets in dish, tucking under any thin edges.
  • Melt margarine or butter; brush on top of fish. Top with bread crumbs. Bake for 10 to 15 minutes or until fish flakes with a fork.
  • While fish is baking, prepare sauce. In a small saucepan stir together milk and flour. Cook and stir over medium heat till thickened and bubbly. Add cheese and mustard. Cook and stir until cheese melts.
  • Serve fillets with cheese sauce and dillweed (optional).
