Steps:
- 1. DO NOT OPEN THE CAN of sweetened condensed milk! Just remove the label and shake it up as well as you can. DO NOT OPEN THE CAN! Set it aside. Get 2 large pots and fill both with water. Make sure one pot will hold enough water to cover the top of the can of sweetened condensed milk completely by at least 1 inch. Place the UNOPENED can of sweetened condensed milk in the pot of water that completely covers the can by at least 1 inch. Bring both pots of water to a complete boil. Keep the unopened can of sweetened condensed milk covered at all times with boiling water from the other pot of boiling water. Refill boiling water pot as often as needed. Boil the can of sweetened condensed milk for exactly 3 hours (yes! 3 whole hours!). Make sure to keep the top of the can covered at all times with boiling water! If you don't, the can will explode! When you have boiled the can of sweetened consdensed milk for 3 hours, turn off both pots of water and carefully remove can from the water. Set on a folded towel or pot holder to cool completely (at least 4 to 6 hours). DO NOT OPEN THE CAN UNTIL IT IS COMPLETELY COOL!!! Once the can has cooled, open can and using a spatula spread the caramel into the graham cracker crust. Spread the Cool-Whip on top of the caramel. Sprinkle with the topping of your choice (listed above). Put in freezer for at least 4 hours. Set out 10 to 15 minutes before serving. Store leftovers (if you have any!) in the freezer. The caramel is also great to spread between cake layers or on top of cupcakes too. Also great to heat up and drizzle over ice cream. You can boil several cans of unopened sweetened condensed milk at a time. Just make sure all cans of sweetened condensed milk stay covered at all times during the 3 hours the cans are boiling. Be sure to always have the other pot of boiling water to add to the pot as needed. Enjoy!

HOW TO MAKE THE BEST CARAMEL CAKE | KITCHN
From thekitchn.com
Estimated Reading Time 8 mins
- Heat the oven and prepare the cake pans: Arrange a rack in the middle of the oven and heat to 350°F. Coat 2 (9-inch) round cake pans with butter or cooking spray. Sprinkle a little flour into each pan, tilt and shake to distribute evenly, then tap out the excess over the sink. You can also line the bottom of each pan with parchment paper for extra insurance, if you'd like.
- Cream the butter and sugars: Place the butter, granulated sugar, and brown sugar in the bowl of a stand mixer fitted with a paddle attachment. (Alternatively, use an electric hand mixer and large bowl.) Beat on medium-high speed until light and fluffy, about 3 minutes.
- Add the eggs: Add the eggs and beat until fully incorporated and the mixture looks creamy and very pale yellow.
- Add the dry ingredients, followed by the milk and vanilla: Beat in the flour, baking powder, and salt on low speed. Add the milk and vanilla and beat on low speed for 30 seconds. Increase the speed to high and beat for 3 minutes. Scrape down the sides of the bowl with a rubber spatula as needed.

- Preheat the oven to 375 degrees. Blind bake your pie crust 10 to 12 minutes. To blind bake, Line the crust with a parchment round or paper coffee filter. Fill the crust with pie weights or dried rice or beans. Bake in a preheated 375°F oven for 10 to 12 minutes. Remove the pie from the oven, lift out the paper and weights, and cool.
- Whisk together milk and eggs in a medium saucepan. Add the flour, salt, and 1 cup of sugar. Whisk until the mixture is smooth. Continue whisking over medium heat until the mixture thickens. This should also take around 10 minutes.
- It is best to caramelize the sugar and make the custard at the same time so neither cooks for too long. Use a low heat setting and be patient.
- Place 1 cup of sugar in a cast iron skillet. Cook the sugar over medium-low heat, stirring with a wooden spoon, until golden brown and caramelized. It should take around 10 minutes. Keep warm over very low heat until the custard is thick.

- Prepare the sugar-free caramel sauce according to the instructions here. Add sea salt to taste at the end. (You need to triple the recipe - just enter 36 in the number of servings on the recipe card. It will take longer to thicken when tripling the recipe - you'll need to simmer the second step for at least 30 minutes. A large saucepan works best.)
- Meanwhile, prepare the almond flour pie crust according to the instructions here. Let the crust cool on the counter while you finish making the caramel.
- Pour the caramel filling into the pie crust and smooth the top with a spatula. (Reserve 1/4 cup (32 g) caramel filling for topping later.)
- Cool on the counter for 15 minutes. Cover with plastic wrap, flush against the caramel surface. Refrigerate for at least 2 hours, or overnight, until firm. (You can refrigerate the reserved 1/4 cup (32 g) for topping in a separate container.)
