- In a nonstick skillet, saute onions and garlic in oil until tender. Add the scallops, parsley and basil; cook and stir over medium heat until scallops are firm and opaque. Add the vermouth or broth, salt and pepper; cook, uncovered, over medium-low heat for 1 minute., Divide mixture evenly between 2 ovenproof 1-1/2-cup dishes. Sprinkle with bread crumbs; dot with butter. Broil 4-6 in. from heat until scallops are firm and opaque and bread crumbs are golden brown.

Steps:
- Put the scallops onto a container for the broiler.
- Add butter/margarine and olive oil.
- Sprinkle spices onto the scallops.
- Place a few inches away from broiler fire.
- Broil for 12 minutes.
- Turn the scallops over and broil for another 4 minutes.
- Serve as an appetizer or as part of a main course.
SIMPLY SEARED SCALLOPS
Steps:
- Pat sea scallops dry with paper towels. Season with some lemon juice, salt, and pepper on one side.
- Heat olive oil and butter in a skillet over high heat. Place scallops in the skillet seasoned-side down. Cook until browned on the bottom, about 2 minutes. Season with remaining lemon juice, salt, and pepper; flip. Continue cooking until opaque, about 2 minutes more. Garnish with lemon zest.

GRILLED SCALLOPS
Steps:
- Preheat an outdoor grill for medium heat and lightly oil grate.
- Melt butter in a saucepan over medium heat. Cook onion and garlic until soft and translucent, about 5 minutes. Remove from heat, and stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture. Let stand for about 2 minutes.
- Thread scallops onto skewers, or use a wire grill basket. Cook on preheated grill for about 4 minutes per side.
- Return butter mixture to saucepan, and bring to a boil. Reduce heat to low, and keep warm while scallops cook. Toss with grilled scallops and serve.

QUICK AND EASY GRILLED SCALLOPS
Steps:
- Dab scallops dry with a paper towel.
- Combine olive oil, garlic, and lemon juice (and any additions below if using). Toss with scallops and let rest a few minutes while grill preheats.
- Preheat grill to medium-high.
- Once the grill is heated, oil the grates by adding oil to a paper towel and using tongs to rub the oil on the grates.
- Remove scallops from the marinade (discard marinade) and season scallops with salt & pepper. Grill for 2-3 minutes per side or just until opaque.
- Garnish with parsley and serve with lemon wedges.

BAKED SCALLOPS
These quick and easy baked sea scallops are topped with panko and Parmesan in a simple lemon-butter sauce.

Steps:
- Preheat the oven to 400°F and lightly spray an 8 x 10-inch oval baking dish or 2-quart gratin dish with olive oil or nonstick cooking spray.
- Pat the scallops dry then spritz them with a little oil, season with 1/8 teaspoon salt.
- In a small bowl combine the panko, Parmesan, parsley, oregano, 1/8 teaspoon salt and black pepper, to taste.
- Arrange the scallops in a single layer in the prepared dish. Top with the crumb mixture.
- Whisk half of the lemon juice, melted butter, and white wine together and pour over the scallops.
- Bake for 15 minutes, or until the scallops are opaque.
- Set the oven to broil on high and broil second rack from the top until the topping is golden, about 2 to 3 minutes.
- Squeeze the remaining lemon over the scallops and eat right away.

Steps:
- Preheat oven for broiling.
- Melt butter, add olive oil, lemon juice and seasonings.
- Add scallops, stir to coat.
- Place in broiler, I use a small cake pan.
- Broil for 3 to 4 minutes, stir and cook for 3 to 4 minutes more or until done.
- Depending on size of scallops, may take a little longer, mine were dime sized.
- You may sprinkle a little Parmesan after you take out for a little different taste.
- Serve hot, maybe with some crusty bread for dipping.

- Preheat the oven to 425°.
- Mix melted butter, salt, and pressed garlic in a small bowl and set it aside.
- Mix Panko bread crumbs and grated Parmesan cheese in another shallow bowl and set it aside.
- Take scallops out of the package and pat each one dry with a paper towel.
- Toss scallops in the melted butter mixture and then coat each one in Panko/Parmesan mixture on all sides.
- Place coated scallops in a baking dish that's large enough to hold them with some space in between each one.
- Carefully pour in remaining melted butter in between and around the scallops. (Don't pour on top.)
- Sprinkle each scallop with some Parmesan cheese and bake for 10-14 minutes, depending on the size.
