EASY BLACKBERRY JAM PUDDING
This is another neat recipe I found online.I really enjoy recipes like this. They are very warm,cozy but easy to make.Have not made this yet,but I am sure I will soon!8)

Steps:
- Heat oven to 350.
- Grease a casserole dish.
- Beat the eggs until light.
- add in the sugar,then jam.
- Combine with the dry ingredients stir in the milk.
- Pour into dish and bake 30-40 minutes.
- Serve warm with the sweet cream.

BEEBEE'S BLACKBERRY JAM PIE
From a cousin who's grandkids call her Beebee. She makes this for church functions a lot and it goes quickly!! It is easy and quick. ***I have modified the recipe as two people had trouble with their pie setting in the middle. I have added cornstarch and had no problems with the pie firming up***

Steps:
- Combine sugar, butter, buttermilk, jam, cornstarch and egg yolks; beat well.
- Pour into pie crust.
- Bake at 325 degrees until the crust is brown and the middle of the pie is firm. Remove from oven.
- Make meringue with the 4 egg whites and 4 tablespoons sugar, beaten stiff.
- Put on top of pie and return to oven until meringue is slightly brown.
- Remove from oven and cool completely before cutting.

Steps:
- 1. Clean berries. Remove large hard center of berries by squeezing out. Put berries in large stainless steel pot.
- 2. Cook over medium heat, stirring constantly, bring to a boil. Add the lemon zest and lemon juice. Boil for 3 minutes.
- 3. Add sugar. Stirring constantly, bring back to a boil that can not be stirred down. Add the Jell-O. Boil for 10 minutes.
- 4. Add the Sure Jell. Stirring constantly. Boil for 2 minutes. Remove from heat.
- 5. Let sit for 3 minutes. Ladle into sterilized jars. Place lids and rings to fingertip tightness. Put jars in boiling water bath for 15 minutes. Remove jars to a towel lined counter to sit and cool for 24 hours before moving and storing.
