- In a large pot, bring apples, lemon juice, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
- Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
- Let cool, then transfer applesauce to airtight containers.

- Put water and apples in pot.
- Bring to a boil.
- Reduce heat to low. Simmer approx 25 minutes, or until soft -- stirring occasinally.

- If you want a smoother texture sauce, pour into a blender, and Puree until desired texture.

- Combine all the ingredients in a large saucepan set over medium heat.
- Bring the apples to a boil, then reduce the heat to medium-low and allow the apples to continue simmering for about 20 minutes, stirring occasionally.
- Remove the saucepan from the heat. Depending on what kind of texture you like, either enjoy the applesauce as is, use a potato masher to break the apples up a bit, or use a blender or immersion blender to make the applesauce completely smooth.
- Store it in a sealed container in the fridge for up to a week.

- Wash, peel, core, and quarter apples.
- In a large covered pot, add apples and just enough water to prevent sticking. Cook over med-low heat until apples are soft.
- Once apples are soft, puree using a food processor, food mill, or immersion blender. Return puree to saucepan.
- Add sugar to taste, if desired.
- Bring applesauce to a boil, stirring to prevent sticking.
- If canning: Fill hot, sterile jars. Leave 1/2" headspace.
- Fit 2 piece lids and process in a water bath canner for 20 minutes (pints and quarts).

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
