3 eggs
2 egg whites
½ cup milk
1 cup all-purpose flour
2 tablespoons cold water

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Drop 1 teaspoon olive oil each into 6 muffin cups.
  • Beat eggs, egg whites, and milk together in a glass bowl until smooth.
  • Heat egg mixture in microwave oven until warmed, about 1 minute.
  • Stir flour into the egg mixture until completely incorporated into a batter.
  • Heat muffin cups in preheated oven until the oil is smoking, 2 to 3 minutes.
  • Stir cold water into batter. Pour 1/4 cup batter into each muffin cup.
  • Bake in the preheated oven until risen and cooked in their centers, about 25 minutes.

GORDON RAMSAY'S YORKSHIRE PUDDING

The Yorkshire pudding mix can be made two or three days before and kept in the fridge. Be sure to make the baking tray piping hot, says Mr. Ramsay, so that when the cold batter hits, the puddings will puff up. Once ladled into the tray, sprinkle with coarse salt, and then once in the oven, leave the door closed. "Treat it like a soufflé." Try this with a roast and gravy but they are so good that you can have them with anything! I included the minimum amount of resting time in the prep time and the time for the stove to heat up before cooking in the cooking time. Enjoy!

1 1/2 cups whole milk
1/2 teaspoon coarse salt
1 1/4 cups all-purpose flour
4 tablespoons vegetable oil (or beef drippings)

Steps:

  • In a blender, combine the eggs, milk, flour, and salt. Blend until well combined and place in the refrigerator until ready to use (allow to rest for at least 30 minutes).
  • Preheat oven to 425°F.
  • Put 1 teaspoon of the oil (or beef drippings) into each section of a 12-hole Yorkshire pudding tray or muffin tray and put into the oven on the top shelf until very hot, almost smoking.
  • As soon as you take the tray from the oven, pour in the batter to three-quarters fill the tins (it should sizzle) and immediately put back into the oven.
  • Bake until the Yorkshire puddings are well risen, golden brown and crisp, 15 to 20 minutes. Don't open the oven door until the end or they might collapse.

1 ½ cups all-purpose flour
¾ teaspoon salt
¾ cup milk, room temperature
3 eggs, room temperature
¾ cup water
½ cup beef drippings

Steps:

  • Mix flour and salt together until blended. Make a well in the flour, add the milk, and whisk until consistent. Beat the eggs into the batter. Add water and beat again until the mixture is light and frothy. Set aside for an hour (or, if it's the day before, cover in the fridge overnight).
  • If the batter has been refrigerated, allow it to come up to room temperature before using. When the roast beef is ready to come out of the oven, ready the mixture.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Pour off drippings from roast beef and measure out desired amount (about 1/2 cup should do). Pour drippings into a 9x12 inch baking dish and place into the oven until the drippings sizzle. Pour the batter over the drippings and bake for 30 minutes (or until the sides have risen and are golden brown). Cut into eight portions and serve immediately.

This recipe is from the British-born chef April Bloomfield, who says it dates back to an era when an English pub might cook a hunk of meat by dangling it from a hook above a roaring fire. The "pudding" emerged from a pan full of runny batter that would have been placed beneath the meat to soak up the juices. "The heat of the fire would make the Yorkshire pudding rise up, and all the fat would seep in," she said. (Life back then was "nasty, brutish, and short," as Thomas Hobbes once griped, but apparently there were upsides.) Of course, making Yorkshire pudding these days is a more domesticated undertaking. "Now what happens is you kind of recreate that," said Ms. Bloomfield, who serves it as part of an order-ahead prime-rib feast at the Breslin Bar & Dining Room in the Ace Hotel in Manhattan. "It's very soulful," she said. "Give me 10 Yorkshire puddings and a thin sliver of beef, and I'll be very happy."

140g plain flour (this is about 200ml/7fl oz)
4 eggs (200ml/7fl oz)
200ml milk
sunflower oil , for cooking

Steps:

  • Heat oven to 230C/fan 210C/gas 8.
  • Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to heat through.
  • To make the batter, tip 140g plain flour into a bowl and beat in 4 eggs until smooth.
  • Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  • Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes.
  • Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned.
  • Serve immediately. You can now cool them and freeze for up to 1 month.

1 cup ( 250 mL ) whole milk
1 cup ( 250 mL ) all purpose flour
1 tsp ( 5 mL ) salt
¼ cup ( 60 mL ) vegetable oil or beef drippings

Steps:

  • Set a rack in upper third of oven and preheat oven to 425°F (220°C).
  • In a medium bowl, whisk together eggs, milk, flour and salt until smooth. Set aside.
  • Place 1 tsp (5 mL) oil or beef drippings into each cup of a 12-cup muffin pan. Transfer pan to oven and heat until oil is smoking, about 2 minutes.
  • Remove pan from oven and quickly pour batter into cups, filling ⅔ full. Bake until puddings have risen and are golden brown, about 15 minutes. Serve immediately.

145 g plain flour
4 eggs
200 ml milk
1 tsp salt
sunflower or vegetable oil, for the pan

Steps:

  • Preheat your oven to 180C
  • Mix together the eggs, flour milk and salt to a smooth batter (mix until blended and then stop - try not to over mix the batter). Transfer to a measuring jug or something with a nozzle for easy pouring later.
  • Let the batter mixture sit on the side for a minimum of 20 minutes
  • Whilst your batter is sitting, pour an even amount of oil into the base of 12 muffin tin holes. The oil should just cover the bottom of the hole evenly
  • put the oiled tin into the oven to heat though
  • After your batter has had time to sit, it should form a slightly bubbly top. Mix with a fork, then get ready to pour into the heated tin. It is really important you're quick with this step to minimize the time the hot tin is out of the oven. So make sure your work surface is clear and no pets or kids are running around the kitchen, as you'll be handling hot oil
  • Remove the hot tray from the oven, and pour an even amount of the mixture into each hole. The batter may immediately react to the hot oil; which is a great sign your oil is hot enough
  • put the tin filled with batter back in the oven until they have risen and browned; about 35 minutes in my oven. DO NOT open the oven door during the cooking time
  • After 30 minutes; look through the glass of your oven door to see if the yorkshire puddings are browned enough for you; if not leave them in for a further 10 minutes.

  • In a large bowl, combine all-purpose flour, salt, black pepper, and ground nutmeg. Mix well and make a well in the center with your hands. Break the eggs into the well and mix them up with a fork.
  • In another mixing bowl, mix water and milk together; pour about 1/4 of the mixture on top of the eggs, and beat them together with a fork. Gradually widen your mixing stroke to draw more flour into liquid; when it starts to get thick, add more liquid. Continue mixing, drawing more flour in, and adding more liquid until all the liquid has been added and the batter is quite smooth. If it still a bit lumpy, strain it through a sieve into another bowl. Set aside for 1 hour.
  • Preheat your oven to 450 F (225 C). Pour a 1/4 teaspoon of beef fat or oil into each muffin cup. Put the pans into the oven and let them get really hot (about 8 minutes).
  • Remove from the oven and pour in the batter-the cups should be about 1/2 full-the large dish will have about 1/3 inch on the bottom. Return to the oven and bake at high heat for 15 minutes. Reduce heat to 350 F and bake for a further 5-10 minutes for small and 20-30 minutes for the large.
