While trying to find a yeast roll recipe that didn't intimidate me, I came across one in a cookbook that I bought from my daughter's Cheer Squad from 2003. The first time I made them, I followed the recipe exactly as written & they had way to much salt. I have made them three times since then, tweaking here & there to get the...

Steps:
- 1. Disolve yeast and sugar in water until it foams on top (about 5-10 minutes)
- 2. Mix together flour & salt. Add water-yeast mixture. Mix in oil & stir until well blended. Cover with towel & let rise in a warm dry place, (about 45 minutes- 1 hour)
- 3. Place on a floured surface & knead for a few minutes. Roll out & either cut out with a small biscuit cutter or cut into pieces & place them 3 to a cup in a muffin pan. Cover & let rise for another 45 minutes.
- 4. Bake @ 350 degrees for 30 minutes or until tops are golden. Brush tops with melted butter.
QUICK YEAST ROLLS
This easy yeast roll recipe was given to me by my Great, Great Grandmother. I used it a couple of years ago in our state fair and received first place.

Steps:
- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
- Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

EASY YEAST ROLLS

Steps:
- In a large bowl, dissolve yeast in warm water. Add the sugar, egg, oil, salt and 4 cups of flour. Beat until smooth. Stir in enough remaining flour to form a firm dough.
- Turn onto a floured surface; knead until smooth and elastic, approximately 6 to 8 minutes. Place in a greased bowl and turn once to get the top of the dough greased also. Cover and let rise in a warm place until doubled, approximately 1 hour.
- Punch the dough down; turn onto a lightly floured surface. Divide into four portions. Shape is portion into 12 balls. To form knots, roll each ball into an 8 inch rope, tie in a knot and tuck the ends under. Place on a greased baking sheet about 2 inches apart. Cover and let rise until doubled, about 35 minutes.
- Bake at 350 degrees for 15 to 20 minutes or until golden brown. Remove from baking sheet and cool on wire racks.

CLASSIC DINNER ROLLS

- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
- Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
- Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.
