1 x 400 g tin of chickpeas
1 x 340 g tin of sweetcorn
½ a bunch of fresh coriander, (15g)
½ teaspoon paprika
½ teaspoon ground coriander
½ teaspoon ground cumin
1 lemon
3 heaped tablespoons plain flour, plus extra for dusting
rapeseed oil
1 small round lettuce
2 large ripe tomatoes
tomato ketchup
4 wholemeal burger buns

Steps:

  • Drain the chickpeas and sweetcorn, then tip into a food processor. Pick the coriander leaves, adding half the leaves and all the stalks to the processor.
  • Add the spices, flour and a pinch of sea salt, finely grate in the lemon zest, then pulse until combined, but not smooth - you want to retain a bit of texture.
  • On a flour-dusted surface, divide and shape the mixture into 4 equal-sized patties, roughly 2cm thick. Place in the fridge for 30 minutes to firm up.
  • Heat a splash of oil in a large frying pan over a medium heat, add the patties and cook for 10 minutes, or until golden and cooked through, turning halfway.
  • Meanwhile, click off, wash and spin-dry four nice lettuce leaves, then finely slice the tomatoes horizontally.
  • Squeeze a large dollop of ketchup onto the base of each bun (toast them if you like), then top with the burgers. Layer over a couple of slices of tomato, a lettuce leaf, a few coriander leaves and finally the burger tops. Delicious served with a fresh green salad.

2 medium sweet potatoes, peeled and cubed
1 (15 ounce) can red kidney beans, rinsed and drained
¼ red onion, grated
1 clove garlic, grated
1 teaspoon salt
1 teaspoon ground black pepper

½ teaspoon cayenne pepper
¾ cup cooked quinoa
1 tablespoon olive oil, or as needed

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and place into a bowl.
  • Mash sweet potatoes, kidney beans, onion, and garlic together until it comes together. Mix in salt, black pepper, cumin, paprika, and cayenne. Add cooked quinoa and combine. Shape mixture into patties.
  • Heat olive oil in a pan over medium-high heat. Cook patties in the hot oil until browned, 5 to 7 minutes per side.

These burgers are packed with flavor, fiber and protein while still being low in fat. We love them grilled, but you can also pan-fry them: Heat 1 tablespoon grapeseed oil in a large nonstick skillet over medium-high heat and fry patties until well browned, about 2 minutes per side. (Remember: The extra oil will alter the calorie and fat totals.)

3/4 cup brown lentils, rinsed, strained and picked through
1 3/4 cups plus 1 tablespoon low-sodium vegetable broth or water
2 teaspoons extra-virgin olive oil
1 large red onion, half finely chopped and half thinly sliced
Juice of 1/2 lemon
Kosher salt
8 ounces fresh baby spinach
2 large cloves garlic, minced
Freshly ground black pepper
1/2 teaspoon ground cumin
1 cup whole-wheat breadcrumbs
1/2 cup walnuts, toasted and finely chopped
Cooking spray
6 whole-grain vegan hamburger buns
Baby arugula, basil, roasted red bell peppers and spicy mustard, for serving, optional

Steps:

  • Bring the lentils and 1 3/4 cup of the broth to a boil in a medium saucepan over high heat. Reduce heat to medium-low, partially cover and simmer until the lentils are fully softened and the liquid is absorbed, about 30 minutes. Transfer to a medium bowl with the remaining 1 tablespoon broth and mash well with a potato masher. Set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Add the chopped onion, lemon juice and 1/4 teaspoon salt and cook, stirring, until softened, about 6 minutes. Add the spinach, garlic, 1 1/2 teaspoons black pepper and cumin and stir until the spinach is wilted, about 3 minutes.
  • Add the spinach mixture, breadcrumbs, walnuts and 3/4 teaspoon salt to the lentils and mix thoroughly. Cover and refrigerate for at least 1 hour or overnight.
  • Preheat the grill to medium-high. Form the mixture into six 4-inch patties and spray with cooking spray on each side. Grill until nice grill marks form, about 3 minutes per side. Place the patties in the buns with the sliced onion and other toppings, as desired, and serve.

This homemade veggie burger recipe is easy, healthy, vegan and super delish.

1 small cauliflower head ((about 5 cups florets))
4 Tbsp oil (divided)
1 tsp smoked paprika
1 tsp ground cumin seed
1 tsp dried oregano
sea salt and fresh ground black pepper (to taste)
1 cup (165g) chickpeas (drained and rinsed)
2 garlic cloves (minced or pressed)
¼ cup (15g) parsley (finely chopped)
1 cup (110g) ground almonds
2 Tbsp ground flaxseed
4 Tbsp water

Steps:

  • Preheat the oven to 350˚F/180˚C and line a sheet pan with parchment paper or a silicone baking mat.
  • Cut the cauliflower into florets, and place them into the prepared baking sheet. Sprinkle with spices, salt & pepper and drizzle with 1 tablespoon oil. Mix with your hands to get everything nicely coated. Roast for 20-25 minutes, then let it cool.
  • Meanwhile, in a small bowl, mix ground flax and water and stir until thoroughly combined.
  • Place the roasted cauliflower into a food processor together with chickpeas, garlic, parsley, ground almonds and flax mixture. Pulse until well combined and sticky. You might need to stop and scrape the sides of the food processor a couple of times. Be careful not to overdo the mixture; we don't want it too mushy, a little texture is great.
  • Take about 1/3 cup of mixture and, using your hands, form a burger patty. Repeat with the remaining mixture.
  • Heat the remaining oil in an ovenproof pan or skillet over medium heat. Cook the burgers for about 5-6 minutes, or until golden brown on both sides, then place them in the preheated oven and bake for an additional 15-17 minutes.
  • Spread mashed avocado on the lower bun, add the patty, then your favorite toppings and set the top bun.

19 ounces black beans
1/3 cup onion, coarsely chopped
1 garlic clove, minced
1 egg
3 tablespoons barbecue sauce or 3 tablespoons ketchup
1 tablespoon soya sauce or 1 1/2 teaspoons HP steak sauce
1 teaspoon canola oil
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/3 cup all-purpose flour
1/2 cup dry breadcrumbs (must be store bought to work) or 1/2 cup cracker crumb, ground in processor until very fine (must be store bought to work)
1/2 cup old cheddar cheese, shredded
6 crusty bread rolls

Steps:

  • Drain and rinse beans with cold water.
  • Drain again and pat dry with paper towels.
  • Add beans, onions, garlic, egg, 2 tbsp barbecue sauce, Worcestershire sauce, oil, salt and pepper to food processor.
  • Pulse until beans are the size of peas.
  • Place pulsed mixture into a large bowl.
  • Add flour and stir until evenly mixed.
  • Add bread crumbs and mix well.
  • Add cheese and mix with your hands (mixture is thick).
  • Divide mixture into six portions.
  • Flour your hands and shape into 1/2-inch thick burgers (if you don't flour your hands the mixture will stick to them).
  • The burgers may be refrigerated in a sealed container for 1 day or frozen until ready to grill.
  • Oil your grill and preheat grill to medium-high.
  • Place burgers on grill.
  • Brush with remaining barbecue sauce.
  • Barbecue with lid down until hot, turning once, for 8 to 10 minutes.
  • Serve on buns with desired toppings i.e. pickles, onions, tomatoes, salsa.
  • For vegetarian make sure you use either a vegetarian Worcestershire sauce or the soy sauce.

Steps:

  • Add walnuts to the bowl of a food processor and pulse until crumbly.
  • Add mushrooms and blend until finely chopped.
  • In a large skillet over medium heat, add 1 tablespoon olive oil and add the mushroom walnut mixture, cooking for 5-8 minutes or until all moisture has evaporated.

3 tbsp tomato paste or ketchup
1/2 tsp salt
1/2 tsp garlic powder, (optional)

Steps:

  • These burgers can be baked, grilled, or fried, and feel free to use whatever veggies you have on hand. For the burgers in the pictures, I used roasted mushrooms, asparagus, and onion. You can also change up the flavor by adding different spices, such as paprika, cumin, or curry powder.To make the veggie burgers, first drain, rinse, and mash the beans either by hand or in a food processor, depending on desired burger texture. Stir in all other ingredients, and form patties. (Add more flour if too soft to form patties.) Either pan fry--flipping halfway through cooking--or place on a parchment-lined pan and bake at 350 F for 10 minutes. Flip, then bake an additional 10 minutes or until desired texture is reached. 1 package (14-16 ounces) extra-firm tofu cut into bite sized pieces
4 slices of bread cut into bite-sized pieces
1 cup walnuts or pecans (sunflower seeds for nut-free version)
1/4 cup Bragg's liquid aminos
2 tablespoons nutritional yeast flakes
2 tablespons cornstarch or tapioca starch
1 teaspoon onion power
2 cloves garlic chopped
1 teaspoon salt
1/4 teaspoon rubbed sage
1/4 teaspoon dried oregano
1/4 teaspoon dried basil

Steps:

  • Preheat the oven to 350 degrees F. Grease a baking sheet or parchment-lined baking sheet and set aside.
  • Make breadcrumbs by blending 1-inch pieces of bread in a blender or food processor, scoop breadcrumbs into a large mixing bowl. Stir in walnut, sage, oregano, and basil.
  • In a food processor or blender, place tofu, liquid aminos, nutritional yeast flakes, tapioca starch, onion powder, garlic, and sea salt and process.
  • Pour blended mixture into the bowl with seasoned breadcrumbs and mix well.
  • Using a large canning jar lid, including both the cap and rim, form the mixture into patties and place them on a lightly oiled cookie sheet.

  • In the bowl of a food processor, add in all of the ingredients and process for 15 to 20 seconds, or until the mixture begins to come together, scraping the sides as needed. Scrape all of the mixture into a small bowl and place the bowl into the refrigerator for 30 minutes to set.
  • Preheat oven to 400°. Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  • Remove the bowl from the fridge. Scoop out 1/2 cup sized scoops from the mixture and using wet hands, form the mixture into patties. We made 3 patties total. Place the patties onto the prepared baking sheet and place them into the oven for 15 minutes. Flip the patties over and then bake for an additional 10 minutes or until the patties are browned and feel solid.

  • In a mixing bowl combine the Soy Curls or TVP with the hot water and allow to soak for 20 minutes or until most of the liquid is absorbed. Drain any wring out and excess water. Fluff with a work if using TVP.If using soy curls instead make sure to give them a buzz in the food processor after soaking, so that the texture is similar to that of TVP or the rice grains. You want a nice texture not powder.
  • Add the cooked brown rice and the soy to the bowl of a food processor together with the soy sauce, smoked paprika, beets and all the spices including the tapioca. Use the pulse button to gradually mix everything until combined. DO NOT over process, make sure to keep the nice texture in there, a few quick of pulses is enough.
  • Transfer the mixture to a bowl and fold in the panko bread crumbs. (If you want an extra firm burger pattie that holds tighter together you also might wanna add the vital wheat gluten or or just up the bread crumbs until firm to your liking. You'll have to try both variations and see which one you like best.)
  • Wet or lightly oil your hands and form the mixture into patties. You can make 6 to 8 depending on how big you like them to be.
