Healthy baked beans made with simple ingredients right in your Instant Pot or Slow Cooker. It's a no-fuss recipe, just throw the ingredients in and let the cooker do the work!

1/4 cup water
1 medium onion, diced
2 teaspoons smoked paprika
1 teaspoon EACH garlic + onion powder
1 1b. dried small white beans (navy or great northern) (2 cups), rinsed and odd beans removed (not soaked)
4 cups low-sodium vegetable broth (or half water + broth)
1/3 cup pure maple syrup
1/4 cup tomato paste (use a 6oz. can for extra tomato flavor)
1/4 cup apple cider vinegar
2 tablespoons mustard (regular, dijon or whole grain)
1/2 teaspoon fresh ground pepper
2 bay leaves
1/2 - 1 teaspoon mineral salt, or to taste
Small jalapeno, seeds removed and diced (add a few seeds for extra heat)
Small green bell pepper, cored and diced
2 - 4 tablespoons unsulfured blackstrap molasses

Steps:

  • Press the SAUTE setting on your Instant Pot and add 1/4 cup water. When hot, add onion and saute for 4 minutes. Add the smoked paprika and garlic powder, cook for 1 minute, or until fragrant, stirring frequently.
  • Next add the beans, broth, tomato paste, maple syrup, apple cider vinegar, mustard, bay leaves, ground pepper and salt, gently stir until the tomato paste is dissolved completely and everything is well combined.
  • Attach the lid, and make sure the vent is in the SEALED position. Push the PRESSURE COOKER button, and manually set at HIGH for 75 minutes. When done, let the steam vent for 20 minutes. Move the vent to open, careful not to burn yourself as there may still be a little steam left. Remove lid and let cool a bit, add salt to taste. Remove bay leaves and taste for seasoning. Transfer beans to a serving dish.
  • Beans will thicken once cooled. If too thick, add 2 tablespoons of water at a time, mix well, and repeat until desired consistency.
  • In bottom of slow cooker, add the onion, beans, maple syrup, vinegar, 4 cups water/broth, tomato paste, smoked paprika, garlic powder, mustard, pepper, and bay leaves. Gently stir, until the tomato paste has broken up and dissolved.
  • Cook on HIGH for 8 - 10 hours. Check periodically, adding up to 1/2 cup more water as needed (I've used up to 1 + 1/2 cups for 8 hours). You will also want to check for doneness towards the end so the beans don't overcook. Add salt to taste.

2 cups cooked or canned beans (pinto, kidney, navy etc, any kind)
1 1/2 to 2 1/2 cups vegetable broth or water (depending on if you prefer a soupy or drier baked bean)
1 tsp molasses
2 tablespoons maple syrup
1 6 oz can of tomato paste
1 small onion, chopped as small as you can
1-2 cloves of garlic, minced
4 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tsp cumin
1 tablespoon smoked paprika
1 tsp chili powder (optional)
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Preheat oven to 350F
  • In a large baking dish, stir all of the ingredients together. If you want a more soupy baked bean as you see in the photos, add more vegetable broth. If you want a drier baked bean, use the lower amount of broth. I prefer soupier but you can customize to your taste!
  • Bake the beans uncovered for 40 minutes and enjoy hot and topped with fresh parsley!

Although the recipe says to cover while cooking, I left it uncovered since it seemed juicier than I wanted. This was no problem and it did work to thicken them up. From Eden Organic Foods.

water as needed
2 cups chopped sweet onion
¼ cup firmly packed brown sugar
¼ cup molasses
2 tablespoons cider vinegar
2 teaspoons dry mustard
1 clove garlic, minced
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
¼ teaspoon ground black pepper

Steps:

  • Place navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight.
  • Drain navy beans and put into a pot with 5 cups water.
  • Bring water to a boil; reduce heat and simmer until beans are tender, about 1 hour.
  • Preheat oven to 250 degrees F (120 degrees C).
  • Combine beans, onion, brown sugar, molasses, vinegar, mustard, garlic, nutmeg, and cinnamon in a 2-quart casserole dish with a lid; season with pepper. Place lid on dish.
  • Bake in the preheated oven, 5 to 7 hours, stirring halfway through and adding water if mixture is too dry. Remove lid and bake until mixture has reduced to desired thickness, about 1 hour more.

Steps:

  • Preheat the oven to 350ºF (180ºC).
  • In a large saucepan, heat the olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 4-5 minutes, until semi-translucent.
  • Add the garlic and cook for another 2-3 minutes, until fragrant.
  • Add the paprika, chili powder, mustard powder, salt, and pepper and cook for 2 more minutes, until the spices are fragrant.
  • Add the tomato paste, maple syrup, molasses, soy sauce, apple cider vinegar, and liquid smoke and stir for 1-2 minutes, until well-combined.
  • Then, add the vegetable broth and stir until smooth, about 1 minute.
  • Add the beans and stir for 1-2 minutes, until evenly coated.
  • Cover and bake for 40 minutes, until the beans are bubbling. Uncover and bake for another 10 minutes, or until desired consistency is reached.
  • Stir well and serve.

1/2 teaspoon crushed red pepper flakes
1/3 cup tomato paste
3/4 cup vegetable broth (, low sodium)
1/3 cup maple syrup ((sub with brown sugar))
2-3 tablespoons blackstrap molasses
2 tablespoons tamari (, low sodium (sub soy sauce))
2 tablespoons apple cider vinegar
2 tablespoons vegan Worcestershire sauce

Steps:

  • Preheat oven to 350 ° F (177 ° C).
  • Heat oil over medium heat in a 6-quart Dutch Oven or large oven-safe skillet (*see note). Once the oil is shimmering, add onion and sauté until softened and lightly golden. About 4-6 minutes.
  • Lower heat one notch and add the garlic. Sauté for 30-60 seconds until fragrant.
  • Now stir in the tomato paste and cook for 30-60 seconds.
  • Add the dry mustard, cumin, smoked paprika, and crushed red pepper. Sauté for 30 seconds until fragrant.
  • Add the broth and bring to a mild simmer. Cook for 1-2 minutes to slightly thicken.
  • Now add the maple syrup, molasses, tamari, vinegar, Worcestershire, liquid smoke, salt, and pepper. Stir to combine.
  • Add the beans and stir to combine well. Taste and add more seasoning if needed. Cover with lid or tin foil and place it in the oven for 45 minutes, stirring midway through. Now uncover the pot and let it bake for 10-15 minutes more or until the sauce is thickened and caramelized on top. Note: If you don't have oven-safe cookware, you can transfer the beans to a casserole dish and cover with a lid or tin foil and cook the same.
