Steps:

  • Heat oven to 375°F (350°F for glass pan). In 4-quart saucepan, heat soup, broth, turkey and vegetables to boiling, stirring constantly. Boil and stir 1 minute. Spread in ungreased 13x9-inch pan.
  • In medium bowl,stir remaining ingredients until blended. Pour evenly over soup mixture (crust will rise during baking).

4 tablespoons unsalted butter ((2-ounces or 57g))
1 large onion, (diced)
1 rib celery, (diced)
1 large carrot, (diced)
⅓ cup all-purpose flour ((44g))
2 cups low-sodium chicken broth ((16-ounces or 488g))
½ cup whole milk ((4 ½-ounces or 128g))
½ teaspoon salt ((more or less to taste))
1 teaspoon fresh ground pepper
1 teaspoon fresh thyme leaves
1 pinch of garlic powder
1 pinch of cayenne pepper ((optional))
1 cup frozen green peas ((5-ounces or 146g))
3 cups chopped or shredded cooked turkey, (or chicken (14.5-ounces or 418g))
2 unbaked pie crusts rounds, (homemade or store-bought)
1 large egg, (mixed with 1 tablespoon water for egg wash)
1 teaspoon sesame seeds, ( for garnish)

Steps:

  • Melt the butter in a large skillet over medium heat. Cook the chopped onion, celery and carrots until soft, about 5 minutes. Stir in flour and cook, stirring constantly, about 3-4 minutes.
  • Slowly whisk in the chicken broth and milk and bring to a simmer. Continue cooking and stirring occasionally until thickened, about 5 minutes. Remove from the heat.
  • Add the salt, pepper, garlic powder, cayenne (if using), frozen peas and turkey. Gently fold together with a spatula. Check the seasoning and add more salt and pepper as needed. Set aside to cool for 20-30 minutes.
  • Preheat oven to 375°F. Place a foil lined, rimmed baking sheet or baking stone in the oven to preheat. *
  • While the filling is cooling, roll out half the pastry and fit into the bottom of a 9-inch deep dish pie plate. Roll out the top crust and have it ready to use as soon as the filling is added.
  • Pour the cooled turkey mixture into the prepared crust. Quickly top with the second pastry. Trim the excess crust and fold under sealing the pastry with the bottom crust. Crimp the edges in a decorative pattern. Cut 4 or 5 slits in the top crust to vent. Brush the entire top crust with the egg wash. Sprinkle with sesame seeds.
  • Place the pot pie on the preheated baking sheet. Bake for 45 to 50 minutes or until the filling is bubbly and the crust is golden brown.

1 recipe pastry for a (10 inch) double crust pie
4 tablespoons butter
1 small onion, minced
2 stalks celery, chopped
2 carrots, diced
3 tablespoons dried parsley
1 teaspoon dried oregano
salt and pepper to taste
2 cubes chicken bouillon
2 cups water
3 potatoes, peeled and cubed
1 ½ cups cooked turkey, cubed
3 tablespoons all-purpose flour
½ cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Roll out bottom pie crust and place in the 10 inch pie pan and set aside.
  • Place 2 tablespoons of the butter in a large skillet. Add the onion, celery, carrots, parsley, oregano, salt and pepper. Cook and stir until the vegetables are soft. Stir in the bouillon and water. Bring mixture to a boil. Stir in the potatoes, and cook until tender but still firm.
  • In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour. Add the milk, and heat through. Stir the turkey mixture into the vegetable mixture, and cook until thickened. Pour mixture into the unbaked pie shell. Roll out the top crust, and place on top of filling. Flute edges, and make 4 slits in the top crust to let out steam.
  • Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking for 20 minutes, or until crust is golden brown.

  • Preheat oven to 400°F. Whisk egg with 1 tablespoon water. Set aside.

Steps:

  • In a medium skillet, melt butter and add carrots, potatoes, onion and celery. Cook, stirring often, over medium heat, until nearly tender, about 10-15 minutes.
  • Stir in garlic, salt, parsley, thyme and pepper and cook for 1 minute.
  • Stir in flour until no white can be seen.
  • Add turkey, broth, and peas. Simmer over medium heat until gravy has thickened to your liking and vegetables are tender. This is a great time to taste test and adjust seasonings.

Easy Turkey Pot Pie image

The bisquick in this recipe makes the breading so creamy and really makes the dish. I usually make it right after thanksgiving, because of all the extra leftover turkey and vegetables!

2 c cooked turkey or chicken
1 can(s) cream of celery soup (undiluted)
2 can(s) (15 oz) mixed vegetables, drained
1 1/2 c turkey/chicken stock
2 c bisquick baking mix
1 stick butter
1 1/2 c milk

Steps:

  • 1. Coat a 13x9-inch dish with melted butter
  • 2. Mix the first 4 ingredients and pour into the dish
  • 3. Blend together the remaining ingredients until smooth
  • 4. Pour over the turkey mixture, do not stir. This is the top crust.
  • 5. Bake at 350 degrees for 1 hour

This turkey pot pie is a hearty and classic dinner! It has a flakey crust and a creamy, vegetable and turkey filling that your entire family will go crazy over!

1 package homemade pie crust (refrigerated pie crust, or puff pastry at room temperature)
2 Tablespoon butter
1/2 onion, diced
2 stalks celery, chopped
2 medium carrots, chopped
2 teaspoon garlic, minced
1/2 teaspoon dried thyme
1 teaspoon dried parsley
3 cups cooked turkey, shredded
1/2 cup frozen peas ((added last))
4 Tablespoons butter
1/2 cup flour
2 cups chicken broth
1/8 teaspoon nutmeg
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste
1 cup heavy cream or half & half

Steps:

  • Preheat oven to 375°F. Line a 9 or 10-inch pie dish with one of the packaged pie crusts. Set aside. The other crust will be saved for the top.
  • Melt the butter in a large skillet over medium-high heat. Add the onion, celery, and carrots. Cook until vegetables are tender, about 5 minutes.
  • Add the garlic and cook for 1 minute. Add the cooked shredded turkey. Stir all the ingredients together and cook for an additional minute. You can add a splash of chicken broth if the mixture seems a little dry.
  • Stir in the frozen peas. Remove from heat and prepare the sauce.
  • In a large saucepan, melt the butter over medium-high heat. Gradually add the flour and stir into a paste.
  • Add the chicken broth and whisk together until the sauce starts to thicken. Add the parsley, thyme, nutmeg, salt, and pepper. Stir until all the ingredients are incorporated.
  • Stir in the heavy cream. Cook over medium heat, and stir constantly until the sauce thickens.
  • Pour the sauce over the vegetable/turkey mixture. Stir to combine.
  • Fill the pie crust in the prepared pan. Top with the second pie crust and form pie edges. Cut and X in the middle of the crust with a knife.
  • Bake for 1 hour or until fully baked. Remove from oven and let the pie sit for 10 minutes before serving.
