EASY TIRAMISU PIE
It's tiramisu. And it's an easy-to-make pie. This delectable dessert sports layers of creamy pudding and delicate vanilla wafers all drizzled with coffee.

Steps:
- Arrange 36 wafers on bottom and up side of 9-inch pie plate. Drizzle with 2 Tbsp. coffee.
- Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 1 min. Gently stir in COOL WHIP.
- Layer half each of the pudding mixture and grated chocolate in crust; cover with remaining wafers. Drizzle with remaining coffee. Repeat layers of pudding mixture and chocolate. Refrigerate 3 hours.

I'd like to try making this. I might substitute Lady Fingers for the vanilla wafers, as is traditional in Tiramisu. It looks simple and quick, two things I like with recipes. This one was on the back of a Cool Whip lid, the new French Vanilla flavored Season's Delight Cool Whip. Photo credit: Kraft

- Beat cream cheese in large bowl with electric mixer until creamy. Gradually beat in milk. Add dry pudding mix. Beat on low speed 1 minute. Gently stir in Cool Whip. Spread half of the pudding mixture over wafers on bottom of crust; top with layers of half of the chocolate and the remaining wafers. Drizzle with remaining coffee. Cover with remaining pudding mixture and remaining chocolate.
- Refrigerate at least 3 hours. Store leftovers in refrigerator.

- Preheat oven to 350 degrees.
- Mix ricotta, sugar, and vanilla until well blended.
- Blend in eggs, then brandy.
- Layer bottom of pie crust with ladyfingers, drizzle chocolate on top.
- Pour blended mix into pie shell Bake at for 40 minutes or until the center is almost set.

- In a large bowl (or mixer with paddle attachment or food processor), gently whisk together the flour, sugar and baking powder, create a well in the middle and add slightly beaten egg and yolk and butter cut into pieces. Mix together until almost combined then move to a slightly floured flat surface and gently knead the mixture to form a soft dough ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Beat together sugar and egg until frothy, then add the Mascarpone and cream, (if not using the egg then beat together the powdered sugar, mascarpone and cream), beat until thick. Refrigerate until ready to use.
- Spread the baked pie dough with an even layer of Nutella, top with half the Mascarpone cream, dip the lady finger cookies, one cookie at a time in the coffee, be sure to turn them once and do it quickly you don't want the cookie soaking in the coffee, then place them on top of the Mascarpone Cream, top with remaining cream. Refrigerate at least 4-5 hours, or overnight is even better. Before serving sprinkle with cocoa. Enjoy!
