3 ounces uncooked whole wheat linguine
1/2 cup salsa
2 tablespoons reduced-fat creamy peanut butter
1 tablespoon orange juice
1-1/2 teaspoons honey
1 teaspoon reduced-sodium soy sauce
1 cup cubed cooked chicken breast
1 tablespoon chopped unsalted peanuts
1 tablespoon minced fresh cilantro

Steps:

  • Cook linguine according to package directions., Meanwhile, in a microwave-safe dish, combine the salsa, peanut butter, orange juice, honey and soy sauce. Cover and microwave on high for 1 minute; stir. Add the chicken; heat through., Drain linguine. Serve with chicken mixture. Garnish with peanuts and cilantro.

1 pound thin spaghetti
3 tablespoons oriental sesame oil (, divided use)
1 cup julienned carrots
2 cups napa cabbage (, sliced)
2 cups chopped (, cooked chicken breast meat)
8 green onions (, chopped)
5 garlic cloves (, minced)
1 tablespoon fresh ginger (, peeled and minced)
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons unseasoned rice vinegar
1 1/2 tablespoons Sriracha sauce

Steps:

  • Bring a pot of water to boil.
  • Add 1-2 tbsp of salt to season the water.
  • Cook pasta, al dente (I shoot for a minute shy of what the box says)
  • Drain pasta and toss with 2 tbsp sesame oil.
  • Pat dry the inside of the pot and add 1 tbsp of sesame oil.
  • If you would like to add some green onions as a garnish at the end, reserve 1/4 cup of them before putting the rest in the pan.
  • Add the green onions, carrots, napa cabbage, chicken, garlic and ginger.
  • Saute for a minute or two until they have softened and barely start to turn color.
  • Add in the honey, peanut butter, soy sauce, vinegar and Sriracha.
  • Stir all the ingredients together and add the pasta back into the pot.
  • Toss the pasta with the rest of the ingredients and serve!
  • Garnish with remaining green onions if you chose to reserve some.

1 (8 ounce) package dry pasta of your choice
2 tablespoons olive oil
1 whole dried red chile pepper, seeded and chopped
1 tablespoon minced garlic
½ teaspoon grated fresh ginger root
4 skinless, boneless chicken breast halves - cut into thin strips
salt and pepper to taste
1 tablespoon soy sauce
½ tablespoon lemon juice
2 tablespoons white wine
watercress leaves for garnish

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Fry the red chile, garlic and ginger until they are fragrant. Season the strips of chicken breast with salt and pepper to taste. Add the chicken to the skillet, and fry until cooked through.
  • When the chicken is no longer pink, add the pasta, and season with soy sauce, lemon juice and white wine. Cook stirring constantly until everything is nice and hot. Serve with watercress leaves on top for garnish.

So sticky, so tender, so moist and just packed with so much flavor. And it's an easy peasy weeknight meal, made in 30 min or less!

2 tablespoons unsalted butter
8 bone-in, skin-on chicken thighs
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves
1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, or more, to taste

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in chili sauce mixture. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. Then broil for 2-3 minutes, or until caramelized and slightly charred. Serve immediately, garnished with peanuts and cilantro, if desired.

1 cup of cooked chicken, chopped
1 red pepper, julienned
1/2 cup of green onions, sliced
4 Tablespoons of peanut butter, reduced fat natural
6 Tablespoons of fresh lime juice
3 Tablespoons of low sodium soy sauce
2 Tablespoons of brown sugar
1/4 cup of basil, chopped
1/4 cup of cilantro, chopped
1/2 teaspoon of ground ginger
1/4 teaspoon of red pepper flakes
sesame seeds for garnish

Steps:

  • In a small bowl, mix together reduced fat peanut butter, fresh lime juice, low sodium soy sauce, brown sugar, chopped fresh cilantro, chopped fresh basil, ground ginger, and red pepper flakes. Whisk until smooth.
  • Bring a large stockpot of water to a boil, throw whole wheat spaghetti in water and cook until al dente. {about 8-10 minutes}
  • Drain water and toss in cooked chicken, red pepper, green onions, and peanut sauce with pasta. Toss to coat. Garnish with sesame seeds.

1/3 cup sesame oil, plus
2 tablespoons sesame oil, divided
1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch cubes
1 cup crunchy peanut butter
2/3 cup heavy cream
1/4 cup soy sauce
3 cloves garlic, minced
2 tablespoons white vinegar
1 tablespoon sugar
1 tablespoon ground ginger
1 tablespoon crushed red pepper flakes
1 (16 ounce) package frozen broccoli, cauliflower and carrot combination thawed

Steps:

  • In a large pot, cook the linguine by following the package directions; rinse and drain; set aside.
  • In the same large pot, heat 2 tablespoons sesame oil.
  • Over medium-high heat, saute the chicken for 5-7 minutes or until no longer pink.
  • In a mixing bowl, stir together the peanut butter, cream, soy sauce, garlic, vinegar, 1/3 cup sesame oil, sugar, ginger, and red pepper; set aside.
  • Add the vegetables to the pot with the chicken; saute 4-5 minutes or until veggies are tender.
  • Add the cooked linguine and peanut butter mixture to the pot; toss until coated.
  • Lower heat and cook 3-5 minutes, or until thoroughly heated but do not boil.
