SWEDISH APPLE PIE
I won 1st place in an apple bake-off contest with this recipe. It is the easiest and best apple pie I have ever tasted. It has no crust, believe me, it doesn't need one. I always use Granny Smith apples because they are the best apples for pies. Enjoy!!!!

- Preheat the oven to 350 degrees Fahrenheit. Grease a 9 inch pie plate with softened butter. You can use a regular size or a deep dish pie plate. (If you use the deep dish pie plate, you will use more apples and bake the pie longer.)
- Peel and slice the apples, sprinkle with the cinnamon sugar, add the lemon zest, lemon juice and vanilla extract. Fill up the pie plate almost to the top with apples. Mix it all together and even the apples out in the pie plate.
- In a large bowl, whisk together the melted and cooled butter, sugar and egg until smooth. Add the flour and whisk again until smooth.

- Roll out your chilled flakey pie crust and place it in a tart pan, making sure to stretch the dough. It has to be as relaxed as possible in the tart pan so it doesn’t shrink during baking.
- In a large bowl add the eggs and sugar. Whisk them until the eggs are smooth and slightly light in color (not whipped, just well whisked with the sugar). Add in the vanilla and the cornstarch and whisk it well into the eggs too. Gradually add the cream and milk while whisking to make sure the custard is as smooth as possible. If you feel there are lumps of starch, simply strain the custard into a mother bowl and it will be smooth and perfect.
